Canola oil, for frying
24 chicken wing parts (12 wings separated into 2 pieces)
One 12-ounce bottle cayenne hot pepper sauce, such as Frank's
1 stick butter
Several dashes Worcestershire sauce
Several dashes hot sauce, such as Tabasco

SPICY AND TANGY HOT WINGS

Spicy and Tangy Hot Wings image

This is my wing recipe that I've tweaked over the last 10 years to suit my specific tastes. If you don't like vinegar and cayenne; these wings will not be for you. I've never seen a middle ground with this recipe; they are either raved about or politely passed up. If you like a hotter wing experience, double the amounts of chili powder and cayenne powder. Enjoy with chunky blue cheese or ranch dressing.

Provided by Heath Giles

Categories     Appetizers and Snacks     Spicy

Time 25m

Yield 6

Number Of Ingredients 15

12 chicken wings, cut into thirds, tips discarded
¼ cup red wine vinegar
¼ cup malt vinegar
2 tablespoons Catalina salad dressing
2 teaspoons hot pepper sauce
1 tablespoon chili powder
1 teaspoon cayenne pepper
1 teaspoon ground black pepper
1 teaspoon minced garlic
1 pinch dried oregano
1 teaspoon prepared horseradish
½ cup all-purpose flour
3 tablespoons chili powder
4 cups peanut oil for frying
hot pepper sauce (e.g. Tabasco™), or to taste

Steps:

  • In a large bowl, mix together the red wine vinegar, malt vinegar, salad dressing, hot pepper sauce, 1 tablespoon chili powder, cayenne pepper, black pepper, garlic, oregano and horseradish.
  • Heat the oil in a deep-fryer to 365 degrees F (185 degrees C). In a separate bowl, mix together the flour and 3 tablespoons of chili powder. Dredge the wings in the seasoned flour.
  • Deep fry the wings for about 15 minutes, or until dark brown but not burnt. Drain briefly, then throw them into the bowl with the sauce. Stir to coat liberally. If you enjoy a hotter rather than tangy wing, liberally dash more hot pepper sauce onto the already sauce-coated wings.

Chicken Wings with Salsa Verde image

Provided by Guy Fieri

Time 5h13m

Yield 6 to 8 servings

Number Of Ingredients 22

3/4 cup kosher salt
1 1/2 teaspoons black peppercorns
4 cloves garlic, smashed
5 pounds chicken wings, cut in half at the joint
2 teaspoons dried rosemary
2 teaspoons ground white pepper
2 teaspoons paprika
2 teaspoons kosher salt
2 teaspoons granulated garlic
1 teaspoon dried oregano
2 teaspoons dried basil
1/2 cup fresh basil
1/2 cup fresh parsley
1/2 teaspoon red pepper flakes
1 tablespoon chopped garlic
1/2 teaspoon capers
1 teaspoon anchovy paste
2 tablespoons chopped roasted red peppers
1 tablespoon chopped onion
2 tablespoons fresh lemon juice
Kosher salt
1/3 cup extra-virgin olive oil

Steps:

  • Prepare the brine: In a large soup pot, bring 8 cups water to a boil. Add the kosher salt, peppercorns and garlic; remove from heat. Let cool 30 minutes, then transfer to a large pot or ice chest lined with a large garbage bag. Add another 8 cups water, then add the wings and twist the bag closed. Refrigerate for 4 hours.
  • Mix all the rub ingredients in a large resealable plastic bag. Drain the wings. Rinse under cool water, pat very dry and put in the bag with the rub. Mix to coat evenly. Seal the bag and refrigerate until ready to cook. (You can do this a day ahead.)
  • Preheat the broiler. Remove the wings from the bag and place in a single layer on a lightly oiled foil-lined pan. Broil for 8 minutes, then turn and cook for an additional 5 to 8 minutes, or until crisp and golden.
  • Meanwhile, combine all the ingredients for the salsa, except the olive oil, in a food processor, using salt to taste. Slowly add the oil and puree until smooth. Serve the wings with the salsa.

NASHVILLE-STYLE HOT WINGS RECIPE BY TASTY

Nashville-Style Hot Wings Recipe by Tasty image

Here's what you need: chicken wings, buttermilk, lard, flour, cayenne powder, onion powder, garlic powder, paprika, brown sugar, salt, black pepper

Provided by Tasty

Categories     Sides

Yield 4 servings

Number Of Ingredients 11

3 lb chicken wings
4 cups buttermilk
½ cup lard
1 cup flour
½ cup cayenne powder
6 tablespoons onion powder, or dried minced onion
6 tablespoons garlic powder, or dried minced garlic
6 tablespoons paprika
4 tablespoons brown sugar
2 tablespoons salt
2 tablespoons black pepper

Steps:

  • Combine all master spice mix ingredients and separate into three equal portions.
  • In a large bowl combine chicken wings, ⅓ master spice mix, the buttermilk. Cover and chill for as long as possible (4 hours to overnight).
  • Rinse the brined wing pieces and pat dry.
  • Mix the flour with another ⅓ of the master spice mix.
  • Dredge the chicken wing pieces in the flour/spice mixture. Shake off any excess. Set aside.
  • Heat your oil to 325˚F (170˚C).
  • Fry the wings for 8-10 minutes, until the internal temperature reaches 165˚F (74˚C). The wings will splatter so its a good idea to have a lid nearby!
  • Take the wings out and drain on a paper bag or paper towels.
  • Place the lard in a saucepan and sprinkle over the last ⅓ of your master spice mix. Once the lard is melted and warm, stir the mixture, and take it off the heat. Immediately baste your fried wings with the lard/spice mix and serve right away!
  • Enjoy!

MY HOMEMADE (HOT) SALSA

My Homemade (Hot) Salsa image

This salsa is similar to one at the local restaurant we used to frequent when we lived in Georgia. I went home and experimented to try to come up with one that tasted like the restaurant's and this is what I came up with. If you like your salsa even hotter you can adjust the hot seasonings to your taste. I always get lots of compliments when I serve this. Don't let all the ingredients scare you off...it's really easy to make. No accurate time on prep and actually the longer you let it simmer the better it is. I don't know how many exact servings you get but it does make alot. (The flavor will be more intense if you use the fresh herbs but its just as tasty with the dried)

Provided by Anita Harris

Categories     Sauces

Yield 12 serving(s)

Number Of Ingredients 17

2 (28 ounce) cans peeled ready-cut tomatoes
1 large onion, diced in fairly large pieces
1 large green pepper, diced in faily large pieces
2 tablespoons canned jalapeno slices, minced
2 -4 tablespoons jalapeno juice, from jar
1 tablespoon sugar
1/2-1 teaspoon salt (or to taste)
1/2-1 teaspoon black pepper (or to taste)
2 -3 tablespoons vegetable oil
2 -3 tablespoons lime juice
1 -2 teaspoon chili powder
1 teaspoon chopped fresh parsley or 1 teaspoon dried parsley flakes
1/2 teaspoon ground cumin
1/2 teaspoon ground oregano
1 -2 teaspoon fresh minced cilantro or 1 -2 teaspoon dried cilantro
1/4 teaspoon ground cayenne pepper
1/2-1 teaspoon garlic powder or 2 cloves fresh garlic, minced

Steps:

  • In a large pot mix together all of the ingredients and bring to a boil.
  • Reduce heat to low and simmer, uncovered, 2-3 hrs, stirring occasionally.
  • Remove from heat and let cool in pan.
  • Pour into non-metal container with a lid and chill completely before serving.
  • Keeps about 2 weeks in the refridgerator.

CAUTION: EXTREMELY HOT! SALSA

Caution: Extremely Hot! Salsa image

This is not for the faint of heart! It is very spicy, so if you don't like it extremely hot, I wouldn't recommend you try this!

Provided by canarygirl

Categories     Sauces

Time 10m

Yield 1 cup

Number Of Ingredients 12

2 jalapenos
3 habaneros
1 small onion
2 garlic cloves
2 tablespoons cilantro, chopped
1 teaspoon cumin seed
1/4 teaspoon oregano, to taste
1 pinch thyme, to taste
salt and pepper
2 tablespoons red wine vinegar
2 tablespoons olive oil
1/4 cup water

Steps:

  • Put peppers, onion, garlic, cilantro and cumin in a food processor, and process until finely minced, but not a paste.
  • Or, if you're mincing the peppers by hand-be SURE to wear rubber gloves, as the oil from the peppers is very irritating to skin and eyes.
  • Add seasonings, vinegar, olive oil and water and mix well.
  • Store in a glass container with a tight fitting lid (I use the larger size of baby food jars).
  • Stores well in the refrigerator for a couple of days.
  • Serve on chips, eggs, grilled chicken, in burritos, on tacos, mixed into rice or beans, anything you can think of!
