- Combine the shredded cabbage and carrots in a large bowl. Whisk together the mayonnaise, sour cream, onion, sugar, vinegar, mustard, celery salt, salt, and pepper in a medium bowl, and then add to the cabbage mixture. Mix well to combine and taste for seasoning; add more salt, pepper, or sugar if desired.

We made our cool, crunchy slaw with just the right amount of tang from sour cream and vinegar. A bit of honey balances the acidity. This classic summer side dish would be welcome at any picnic or backyard BBQ.

- Toss together the cabbage and carrots in a large bowl.
- Whisk together the mayonnaise, sour cream, vinegar, mustard, honey and celery salt in a medium bowl. Pour the dressing over the shredded vegetables and toss to coat. Season with salt and pepper. Cover and refrigerate for 30 minutes. Season with more salt and pepper before serving.
SALT-AND-SQUEEZE SLAW
If you make this slaw ahead, the vegetables will continue to soften as they sit and become more like pickles, which isn't a bad thing at all.

Steps:
- Combine vegetables and onion in a medium bowl; season generously with salt. Let sit until they start to release their water, 8-10 minutes, then begin to massage, gently at first so they don't break, then harder as they begin to expel their liquid, until softened to about the texture of coleslaw. Pour off all excess liquid and add vinegar and oil; toss to coat. Taste and season with more salt if needed.
- Do Ahead: Slaw can be made 3 days ahead. Cover and chill.

COLE SLAW; THE ULTIMATE
Been a caterer and personal chef for over 20 yrs. This particular recipe for cole slaw seems to be the favorite of both my friends and customers. If you like a sweet/sour cole slaw then give it a try. I do our church's Roast Chicken Dinner each year before our annual festival and I always make more because there are those who like to take it home by the pint. I don't use any salt nor onion. There's ample salt in the mayo. Seemingly sometimes the onion overpowers the slaw. Then there are customers who dislike onion. You may also substitute Splenda for the granulated sugar. You may also use a lower fat mayonnaise but I think it adds a different flavor. You may also substitute the extra 1/2 cup of mayo for milk.

- Cut the cabbage in quarters, Remove core with sharp knife.
- Cut into 1" slices.
- Using a food processor with the metal cutting blade place 1/4 of the cabbage in the bowl and using the pulse button, quickly pulse 35 times.
- Place chopped cabbage in a large bowl. Add the sugar, grated carrots, minced bell pepper, vinegar, half and half or milk and mayo.
- Mix thoroughly.

- Shred the cabbage & in a food processor& set aside.
- Chop the bell peppers & onion.
- Place into a bowl & set aside.
- In a pot, mix together both vinegars, brown sugar, salt, celery seed, mustard seed & tumeric. You may also add granulated sugar to taste.
- Boil 5 to 8 minutes.
- Immediately pour over the cabbage/bell pepper/onion mixture.
- Stir well & then refrigerate.
- It will keep crisp & yummy for a month or longer.
