Salt-Massaged Cucumbers With Miso and Sesame image

7 or 8 very small seedless cucumbers, about 1 pound
2 teaspoons kosher salt
4 tablespoons unhulled sesame seeds
3 tablespoons brown rice miso
2 tablespoons rice vinegar
1 teaspoon finely grated ginger
6 shiso leaves (available at Asian markets)

Steps:

  • Wash cucumbers but do not peel. Cut off and discard ends, and slice cucumbers into 1/8-inch rounds. Put in a medium-size bowl, sprinkle with salt and mix well. Leave for 10 minutes.
  • In a dry skillet over medium-high heat, toast sesame seeds until fragrant and just beginning to pop, 1 minute or less. Transfer to a suribachi (Japanese grinding bowl) or mortar and grind to a coarse paste. Add miso, vinegar and ginger and stir well.
  • Squeeze cucumbers a handful at a time to express their liquid. Drain in a colander. Stack shiso leaves and roll into a cigar shape. Slice thinly with a sharp knife. Dress cucumbers with miso-sesame mixture. Sprinkle with shiso slivers, toss gently and serve.

From "Good Food From a Japanese Temple". This is guest food, not daily fare, part of the cuisine developed in Kyoto temples housing offspring of the imperial family. Make sure you use a hot mustard. You can mix some dry ground mustard in hot water to make a suitable paste.

2 japanese cucumbers, ends trimmed, thinly sliced
1 teaspoon salt
2 tablespoons white sesame seeds, toasted and ground
1 tablespoon rice vinegar
1 teaspoon soy sauce
1 1/2 teaspoons sugar (or more to taste)
1/4 teaspoon prepared hot mustard

Steps:

  • Place sliced cucumbers in a bowl, add the salt, and toss with fingers until slices are coated. Let rest 10 minutes, then rinse well and gently squeeze out moisture. Slices should be slightly limp but still crisp.
  • Blend the remaining ingredients, increasing the sugar if you prefer a sweeter dressing. Add cucumber slices and toss to coat with dressing.
  • Serve at room temperature or chilled. Does not keep, should be eaten immediately.

Smashed Cucumbers With Cumin Tahini image

Cool, watery cucumbers and warm, rich sesame oil are a classic combination in Asia, and the chef Danny Bowien builds on that tradition here by using sesame paste and smashed cucumbers, which have even more crunch and juice than sliced ones. The lime, oregano and cumin in the dressing can lean either Middle Eastern or Mexican, but in any case they are a perfect pairing for cucumbers. Mr. Bowien adds a pinch of sugar to the strainer; it does wonders for transforming the color and taste of the cucumber peels, which can be bitter. He serves this dish with a funky, fiery drizzle of chorizo oil with dried shrimp and XO sauce, but a little chile paste and vinegar is a fine accent, too.

About 2 pounds thin-skinned cucumbers like English or Persian (8 to 10 mini cucumbers, 4 medium-size or 2 large greenhouse)
Kosher salt
Raw or granulated sugar
Freshly squeezed juice of 1 lime or lemon
1 large clove garlic
1/3 cup well-stirred tahini
1 tablespoon olive oil, more for cucumbers
1/4 teaspoon ground cumin
1/4 teaspoon dried oregano
2 tablespoons white sesame seeds, for garnish
2 to 3 tablespoons sambal oelek or sriracha
White vinegar

Steps:

  • Rinse cucumbers and pat dry. Cut crosswise into pieces about 4 inches long. Cut each piece in half lengthwise.
  • On a work surface, place a piece of cucumber (or several) cut side down. Lay the blade of a large knife flat on top the cucumber and smash down lightly with your other hand. The skin will begin to crack, the flesh will break down and the seeds will separate. Repeat until the whole piece is smashed. Break or slice diagonally into bite-size pieces, leaving the seeds behind.
  • Place the cucumber pieces in a strainer and toss with a big pinch of salt and a big pinch of sugar. Place a plastic bag filled with ice on top of the cucumbers to serve as a weight and place the strainer over a bowl. Let drain 15 to 30 minutes on the counter, or in the refrigerator until ready to serve, up to 4 hours.
  • Make the dressing: In a blender or small food processor, combine lime juice and garlic and blend. Add tahini and 2 tablespoons warm water and blend. Check the texture; you want a smooth, creamy liquid. If necessary, add more warm water and blend again. Add olive oil, 1/2 teaspoon salt, the cumin and the oregano, rubbing the dried leaves between your fingers to release the flavors. Taste for salt and adjust the seasonings.
  • Make the chile vinegar, if desired: Place sambal in a bowl and slowly drizzle in white vinegar, stirring to loosen. Taste often and stop adding vinegar when mixture is tart and spicy, but not enough to make your eyes water.
  • When ready to serve, shake cucumbers well to drain off any remaining liquid and transfer to a bowl. Drizzle lightly with olive oil and toss. Add half the dressing, toss and taste. Keep adding dressing until cucumbers are well coated but not drowned.
  • Serve immediately. For each serving, scoop a large spoonful of cucumbers into a bowl, spoon a little chile vinegar around the edges and sprinkle with sesame seeds.

3 Persian cucumbers or 1/2 English hothouse cucumber
Kosher salt
1 pound green beans, trimmed
1 (1 1/2)-inch piece ginger, peeled, finely grated
1 serrano or Fresno chile, finely grated
1 garlic clove, finely grated
1/3 cup unseasoned rice vinegar
1/4 cup white miso
1/4 cup olive oil
1/2 teaspoon toasted sesame oil
Toasted sesame seeds and sliced scallions (for serving)

Steps:

  • Lightly smash cucumbers with a rolling pin, then tear into bite-size pieces. Toss with a pinch of salt in a medium bowl. Let sit to allow salt to penetrate.
  • Meanwhile, place green beans in a large resealable plastic bag, seal, and smash with rolling pin until most of the beans are split open and bruised. Whisk ginger, chile, garlic, vinegar, miso, olive oil, and sesame oil in a medium bowl until smooth. Add dressing to beans and toss around in bag to coat; season with salt.
  • Drain cucumbers and add to bag with beans. Shake gently to combine. Transfer salad to a platter and top with sesame seeds and scallions.
