Salt-roasting is a genius method for cooking not just beets but all root vegetables, generating tons of flavor with no fuss. Salt does the work here, encasing the beets, then baking right in. The result? Beets that are tender and seasoned from the outside in. Worth it to make a farmer's market run.

3 pounds beets (red, yellow, candy cane)
3 pounds kosher salt

Steps:

  • Preheat oven to 425 degrees F. Remove greens from beets (reserve if making Amanda Cohen's Beet-Green Pesto). Scrub the beets clean. Place them in a deep roasting pan, then bury them completely in salt and pack it down. Bake 1 hour.
  • Remove beets from oven. Insert a paring knife through the salt crust and into a beet to check for doneness. (On the off chance they're not done, return them to the oven and check every 10 minutes.) Crack the crust with a spoon, then remove the beets to a bowl, scraping the salt off them. Careful, they'll be very hot! (You can save the salt for future beet-roasting-just get rid of the clumps and store in an air-tight container in the fridge or freezer.) Rinse beets in water to remove any lingering clumps of salt. Allow to cool so they can be peeled.
  • Peel beets with a paring knife, starting with the light-colored ones first, so you don't stain them with juice from the darker beets. First cut the root end, then peel the skin. The skin should peel off easily-a sign they're cooked properly. Cut into quarters, or, if they're smaller, leave whole.
  • Arrange beets on a platter and serve.

4 medium beets, trimmed
1/2 cup goat cheese
1/4 cup creme fraiche
2 tablespoons extra-virgin olive oil, plus more for drizzling
1 tablespoon red wine vinegar
1 teaspoon minced shallot
Freshly ground pepper
Vegetable oil, for frying (about 1 cup)
4 to 8 fresh sage leaves
2 cups baby arugula
Juice of 1/2 lemon
1/4 cup pine nuts, toasted

Steps:

  • Preheat the oven to 350 degrees F. Put a 1/4-inch layer of salt in the bottom of a small baking dish. Place the beets on top of the salt, making sure they are not touching each other. Cover the beets with the remaining salt (save some for seasoning) and bake until fork-tender, about 1 hour, 15 minutes. Remove the beets from the salt and let cool to room temperature.
  • Meanwhile, make the dressing: Puree the goat cheese, creme fraiche, olive oil, vinegar and shallot in a blender until smooth. Season with salt and pepper. Refrigerate until ready to use.
  • Heat the vegetable oil in a small skillet over medium heat until shimmering. Add the sage leaves and fry until crisp, 5 to 10 seconds. Transfer with a slotted spoon to a paper towel-lined plate to drain; season lightly with salt.
  • Peel the beets (the skins will slip right off) and slice into thin rounds using a mandoline or sharp knife. Divide the beet slices among plates. Spoon some of the goat cheese dressing on top. Put the arugula in a bowl, drizzle with the lemon juice and olive oil, season with salt and toss. Add the arugula salad to the plates; drizzle with more goat cheese dressing, if desired. Top with the pine nuts and fried sage.

1 teaspoon dried thyme leaves
1 pinch sea salt, or to taste

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Line a baking sheet with parchment paper.
  • Toss the beets, olive oil, and thyme in a bowl until beets are coated, and arrange pieces of beet on baking sheet so that they don't touch. Sprinkle the beets with sea salt.
  • Roast in the preheated oven until the beets are tender, 10 to 20 minutes. A fork inserted into a beet cube should come out easily.

Here's a great new way to roast beets: in a salt crust. The horseradish, thyme, and orange in the crust infuse the beets with bright flavor as they're cooking. Leftover beets make a great addition to salads. Lightly coat torn butter lettuce with a Sherry wine vinaigrette, top with the sliced beets and some sliced red onion, and drizzle with a bit of the horseradish crème fraîche.

1 cup crème fraîche (8 ounces)
1 tablespoon prepared horseradish
1 tablespoon chopped fresh chives
2 teaspoons Sherry wine vinegar
2 cups coarse kosher salt
5 tablespoons prepared horseradish
2 tablespoons chopped fresh thyme
1 tablespoon finely grated orange peel
3 large unpeeled beets (each about 8 ounces), trimmed, scrubbed

Steps:

  • Whisk crème fraîche, horseradish, chopped chives, and Sherry wine vinegar in small bowl to blend. Season to taste with salt and pepper. DO AHEAD: Can be made 1 day ahead. Cover and chill.
  • Preheat oven to 375°F. Mix coarse salt, horseradish, thyme, and orange peel in medium bowl. Place three 3-tablespoon mounds of salt mixture on small rimmed baking sheet, spacing apart. Top each salt mound with 1 beet, then cover all beets with remaining salt mixture, pressing very firmly with hands and forming crust around each beet, covering completely.
  • Roast beets 1 3/4 hours. Remove from oven; crack salt crusts open and remove beets. Peel beets; cut into 1/4-inch-thick slices. Arrange beet slices on platter. Serve with horseradish crème fraîche.

GINGER SALT-ROASTED BEETS



Ginger Salt-Roasted Beets image

We like roasting in salt because it transfers heat and flavor beautifully. Here we've combined the salt with ginger and egg whites to form a crust around the whole beets. The roasting process sweetens and intensifies the flavor of the vegetables. The roasted beets peel easily and have a gentle, tender texture. Their surface layer will be well seasoned and the flavor of the ginger will have permeated their interior. Remember, almost any aromatics can be blended with the salt: lemongrass, cumin, star anise-the pantry is your palette.

Yield serves 4 as a side dish

Number Of Ingredients 4

1 large piece of ginger, approximately 11 ounces/310 grams
2 large egg whites
2 1/4 pounds/1,000 grams kosher salt
2 large red beets, washed and stems removed

Steps:

  • Preheat the oven to 350°F (175°C).
  • Wash the ginger and cut it into small pieces. Puree the ginger in a food processor until it becomes a rough paste. Add the egg whites and puree to combine. Add the salt and puree again to combine. The mixture will resemble wet sand.
  • Spread one-quarter of the mixture over the bottom of a 5 × 9-inch loaf pan. Nestle the beets, stem side down, into the salt. Cover the beets with the rest of the ginger salt, packing it around the beets and making sure they are covered. (The bottom tips of the beets may be the only part exposed.) Roast for 1 hour. Remove the pan from the oven and place on a wire rack. Using a metal cake tester, poke the beets. They are done when the beet feels firm but tender as the tester goes through it; it will feel like testing a baked potato. Let the beets rest in the hot salt for 30 minutes.
  • Use the back of a spoon to crack the salt crust, then scoop the salt away from the beets. Remove the beets and, using paper towels, wipe off the salt and peel the skin. Put the beets on a cutting board and cut each one into 8 wedges. Serve the beets warm or let them cool to use in a salad or other cold preparation.

Caramelized and delicious. Use organic whole carrots for better true-carrot flavor. I use turbinado sugar because the crystals are bigger and they dissolve more slowly, which seems to lead to a better caramelized crust. I sometimes do a mix of half golden beets and half red beets -- then when I serve them, I fan the veggies out on the platter in a rainbow: golden beets, carrots, then red beets. Pretty!

2 -3 medium beets
4 -5 carrots
1/2 cup olive oil, divided
1/2 cup balsamic vinegar, divided
2 teaspoons kosher salt, divided
2 tablespoons turbinado sugar, divided (sugar in the raw)

Steps:

  • Peel carrots and cut diagonally into 1-2 inch thick wedges (1 inch for the thick end of the carrot, 2 inch for the thin end).
  • Place in a large bowl and toss with 1/4 cup each of olive oil and balsamic vinegar, 1 tsp kosher salt, and 1 Tablespoon sugar. Set aside.
  • Peel beets, slice into cubes approximately 1-2 inches square.
  • Spray baking pan with nonstick spray.
  • Mix carrots one more time, then empty gently into half of baking pan.
  • Move beets to bowl, toss gently with remaining oil, vinegar, salt and sugar.
  • Let stand 2-3 minutes, then toss one more time before transferring to other half of baking pan.
  • Bake 375-400°F for one hour, uncovered, tossing each vegetable separately once during cooking.
  • Serve immediately.
