So fast and easy to prepare, these shrimp are destined to be the hit of any barbeque. And, weather not permitting, they work great under the broiler, too.

1 large clove garlic
1 teaspoon coarse salt
½ teaspoon cayenne pepper
1 teaspoon paprika
2 tablespoons olive oil
2 teaspoons lemon juice
2 pounds large shrimp, peeled and deveined
8 wedges lemon, for garnish

Steps:

  • Preheat grill for medium heat.
  • In a small bowl, crush the garlic with the salt. Mix in cayenne pepper and paprika, and then stir in olive oil and lemon juice to form a paste. In a large bowl, toss shrimp with garlic paste until evenly coated.
  • Lightly oil grill grate. Cook shrimp for 2 to 3 minutes per side, or until opaque. Transfer to a serving dish, garnish with lemon wedges, and serve.

1 1/2 cups olive oil
3/4 cup fresh lemon juice
9 large cloves garlic, peeled and minced
1 1/2 teaspoons freshly ground pepper
1/4 cup Tabasco sauce
10 pounds jumbo shrimp, in the shell
Kosher salt to taste

Steps:

  • Whisk the oil, lemon juice, garlic, pepper and Tabasco sauce. Divide between 2 large bowls. Place half of the shrimp in each bowl and toss with the marinade. Refrigerate overnight. Preheat a grill or broiler. Grill or broil the shrimp until just cooked through, about 1 1/2 minutes on each side. Season with salt.

3 tablespoons olive oil
1 tablespoon light brown sugar
1 tablespoon smoked paprika
1 tablespoon kosher salt
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon cayenne
Zest and juice of 2 limes, plus lime wedges, for serving
2 pounds 16/20 shrimp, shell on and deveined

Steps:

  • Set up your grill for even medium-high heat. If using a charcoal grill, distribute the coals evenly. If using a gas grill, heat both sides evenly.
  • In a mixing bowl, whisk together the olive oil, brown sugar, paprika, salt, cumin, coriander, cayenne and lime zest and juice. Add the shrimp and allow to marinate for 15 minutes at room temperature and up to 3 hours refrigerated.
  • Remove the shrimp from the marinade and place on a cooling rack in a single layer. Put the cooling rack on the grill and cook the shrimp, pulling the cooling rack off the grill to flip them, until charred and cooked through, 2 to 3 minutes per side.
  • To serve: Add the shrimp to a platter and garnish with lime wedges.

18 large shrimp (shelled and deveined with the tail left on)
1 1/2 lbs skirt steaks
6 garlic cloves
2/3 cup olive oil
kosher salt & fresh ground pepper
2 tablespoons red wine vinegar
1 bunch flat leaf parsley, top leaves only
2 tablespoons fresh oregano leaves
1 lemon, juice of

Steps:

  • Put Chimichurri ingredients into a food processor and process until fairly smooth.
  • Place the Shrimp and the steak into a glass bowl or baking dish and cover with chimichurri sauce.
  • Refrigerate and let marinate for 1/2 to 1 hour.
  • Grill the steak on high about 5 minutes, then flip over and add the shrimp to the grill, basting both with some of the extra sauce.
  • Grill everything until done - which should only be a few minutes.
  • Slice the steak into thin slices and serve with the shrimp and extra sauce for dipping.

  • Start a charcoal or gas grill, or heat the broiler. Make the fire as hot as it will get, and put the rack close to the heat source.
  • Mince garlic with salt; mix with cayenne and paprika, then make into a paste with olive oil and lemon juice. Smear paste on shrimp. Grill or broil shrimp, 2 to 3 minutes a side, turning once. Serve immediately or at room temperature, with lemon wedges.

1/4 cup fresh lemon juice
2 tablespoons minced fresh ginger
2 teaspoons dry mustard
2 teaspoons Tabasco
3 pounds large, uncooked shrimp, peeled and deveined (tails intact)

Steps:

  • Whisk together all but shrimp in a large bowl. Add shrimp to the mix, stir to coat. Let stand for only 30 minutes, no more, no less. Start grill 10 minutes before putting the shrimp on. Use grill basket or skewers. Grill 2-3 minutes on each side.
