Eggs with corn tortillas, very quick and tasty for breakfast/brunch, even dinner. This recipe is from Celebrate San Antonio, a cookbook by the San Antonio Junior Forum.

8 corn tortillas, cut in 8 wedges each
12 eggs, slightly beaten
8 bacon, slices
4 green onions, sliced thin including tops
12 cherry tomatoes, cut in halves
2 fresh jalapenos, peppers. sliced thin with seeds removed
1 cup shredded cheddar cheese

Steps:

  • In a skillet, brown bacon, remove from pan and cut into small bits; set aside.
  • Fry tortilla strips in bacon fat (or corn oil) until slightly crisp (about 30 seconds). Add remaining ingredients and bacon all at once.
  • Scramble until eggs are firm.
  • Serve hot with flour tortillas and refried beans.

My husband and father-in-law are nuts for migas. I first had them when visiting San Antonio and must say they are very good. I think they are usually served for breakfast but we eat them for dinner. Posted 9-16-04

8 large eggs
2 tablespoons water
1/4 teaspoon salt, to taste
fresh ground pepper
2 tablespoons butter or 2 tablespoons margarine
6 green onions, sliced (include some of the green part)
1 medium tomatoes, seeded,chopped and drained
1 (4 ounce) can chopped green chilies, drained
1 cup grated monterey jack cheese
1 cup tortilla chips, broken into large,bite-size pieces
hot sauce, to taste

Steps:

  • In a mixing bowl, add eggs, water, salt, and pepper to taste; whisk to combine.
  • Melt the butter in a large non-stick skillet over medium heat; tilt pan to swirl the melted butter around.
  • When the butter foams, add green onions; stir/saute for 1 minute.
  • Add in egg mixture; let set for 20 seconds.
  • Cook and stir for 3-4 minutes or until almost set.
  • Add in tomato, green chiles, and cheese; continue stirring/cooking until mixed well and cheese melts.
  • Add in chips; stir to combine.
  • Sprinkle hot sauce over the top if desired; serve.

6 large eggs eggs
¼ cup milk
3 (6 inch) corn tortillas, coarsely chopped
1 tablespoon butter
1 tablespoon chopped green onion
½ cup diced cooked ham
salt and pepper to taste

Steps:

  • In a bowl, beat eggs and milk together. Soak tortilla pieces in egg mixture for 5 to 10 minutes. Meanwhile, heat butter in a skillet over medium heat. Saute green onion and ham until onion is soft, about 5 minutes.
  • Pour egg mixture into skillet and cook over medium/low heat until eggs are set.

1 tablespoon vegetable oil
2 cups dime-sized tortilla pieces or crushed tortilla chips
1/2 cup chopped tomato
2/3 cup chopped onion
1 jalapeño chile, stemmed, seeded, and chopped
2 eggs
1/2 cup cheddar cheese

Steps:

  • Heat the oil in a large skillet over medium heat and sauté the tortilla pieces or chips until slightly crisp, 1 to 2 minutes. Add the tomato, onion, and chile and cook for 5 minutes. Pour in the eggs and mix with a spatula, scraping up the eggs as they cook. When the eggs are partially set, add the cheddar. Cover. Toss a few more times until the cheese melts.

  • In a large cast-iron or nonstick skillet over medium heat, heat oil until hot. Add the onion, bell peppers, and jalapenos and cook until the onions and vegetables are soft. (For a non-spicy version, leave out the jalapenos.) Add the minced garlic and cook for about a minute.
  • Add the corn tortilla slices to the skillet with the onions and cook, stirring frequently for about 1 to 2 minutes.
  • Reduce the heat to low and add the eggs. Scramble until eggs are almost set, then fold in the cheese and remove from heat. Garnish with pico de gallo, chopped avocados or cilantro and serve.
