1 (750 milliliter) bottle merlot wine
3 tablespoons white sugar
4 (3 inch) orange peel strips
4 (3 inch) lemon peel strips
2 cinnamon sticks
2 whole cloves
1 whole nutmeg

Steps:

  • Combine merlot, sugar, orange peels, lemon peels, cinnamon sticks, cloves, and nutmeg in a saucepan over medium heat; simmer until sugar is dissolved and flavors have blended, 10 to 15 minutes.

100g light muscovado sugar
2 oranges , zest pared, juice squeezed from one, the other cut into chunks
2 cinnamon sticks , broken in half
little freshly grated nutmeg
1 x 75cl bottle light red wine
1 apple , quartered, cored and thickly sliced

Steps:

  • Put the sugar, the orange zest, juice and chunks, cinnamon and nutmeg in a pan with 300ml/1⁄2pt water and bring to the boil. Simmer for 10 mins to infuse the spices, then add the wine and apple slices and bring to a simmer. Serve in heatproof glasses.

This made our steaks absolutely mouth-watering! A combo of recipes were my inspiration, plus a few ingredients from an old family recipe. Pour over up to 3 pounds of beef and marinate overnight in refrigerator before grilling.

½ large white onion, diced
4 cloves garlic, minced
1 cup grapeseed oil
⅓ cup Worcestershire sauce
¼ cup soy sauce
¼ cup steak sauce
¼ cup water
1 teaspoon salt
½ teaspoon ground black pepper
1 teaspoon crushed red pepper
½ teaspoon ground mustard
2 tablespoons liquid smoke
2 tablespoons brown sugar
2 bay leaves
1 teaspoon lime juice

Steps:

  • Stir together the onion, garlic, grapeseed oil, Worcestershire sauce, soy sauce, steak sauce, water, salt, black pepper, red pepper, mustard, liquid smoke, brown sugar, bay leaves, and lime juice in a bowl.

My wee brother makes wonderfull food especially Indian, this is his recipe for spicy onions to have with popadoms as an appetiser. I always keep a jar in the fridge. I can promise that you will not! be able to stop eating them they are addictive.

2 medium size onions
1 teaspoon salt
2 tablespoons white wine vinegar
1/2 teaspoon chili powder
1/2 teaspoon cayenne pepper
4 tablespoons tomato ketchup
2 tablespoons sweet chili sauce
1 tablespoon mint sauce
2 tablespoons mango chutney
1/2 teaspoon salt

Steps:

  • Chop onions into a small dice place in a bowl with salt and vinegar, mix well and set aside for two to three hours.
  • Rince in cold water and drain.
  • Dry onions on absorbent towel.
  • Add salt, chilli powder and cayenne and give it a good mix.
  • Now add the tomato ketchup, sweet chilli sauce, mint sauce and mango chutney, and give it another good mix.
  • Decant into a clean sterile jar and pop in the fridge for at least a day to let the flavours mingle, but I bet you can't leave it that long.
