Categories     World Cuisine Recipes     European     Italian

Time 25m

Yield 4

Number Of Ingredients 8

8 ounces dry fettuccine pasta
2 tablespoons olive oil
1 medium yellow onion, chopped
3 cloves garlic, crushed
1 lemon, juiced
1 (3.75 ounce) can sardines in tomato sauce
1 pinch red pepper flakes, or to taste
¼ cup freshly grated Parmesan cheese

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta, and cook for about 8 minutes, or until almost tender.
  • While the pasta is cooking, heat olive oil in a skillet over medium heat. Add the onion, and cook for a few minutes until soft, then add the garlic, and cook until fragrant. Stir in the sardines with their sauce. When the sardines heat through, reduce heat to low, and simmer until the pasta is ready.
  • When the pasta is almost done, drain, and add it to the sardine sauce. Stir, cover, and turn the heat off. Let stand for a few minutes to absorb the flavors of the sauce. Squeeze juice from the lemon over the pasta. Divide onto serving plates, and top with red pepper flakes and grated Parmesan cheese.

SARDINES IN TOMATO SAUCE

Sardines in Tomato Sauce image

Humble sardines are about grow in popularity: 1) they taste good-- similar to tuna 2) they're a healthy seafood choice-- rich in omega 3's and calcium, low in contaminants like methylmercury 3) they're eco-friendly-- not overfished 4) they're really affordable. This is a simple dish that goes well with pasta, rice, or polenta. The fennel is subtle and gives it a little elegance.

SARDINES IN TOMATO SAUCE

Sardines in Tomato Sauce image

It's been a long time since I've posted a recipe, so I figured I'd go with a simple favorite here. During my time away, I've been exploring African and Middle Eastern food a lot. This one, from Benin, requires almost no work, and the flavors are fantastic. (Note: I usually roughly chop the sardines, to spread the goodness around.)
