Sardines with Grilled Bread and Tomato image

These grilled sardines make for a great summer appetizer.

Number Of Ingredients 7

2 tablespoons olive oil, plus more
4 (3/4"-thick) slices sourdough or country-style bread
12 whole fresh sardines (1-1 1/2 pounds total), scaled, gutted, large pin bones removed
Kosher salt, freshly ground pepper
freshly ground pepper
1 large tomato, preferably heirloom, sliced
Torn basil leaves (for serving)

Steps:

  • Prepare grill for medium-high heat; oil grate. Brush both sides of bread with 2 tablespoons oil total and grill, turning occasionally, until toasted and lightly charred, about 4 minutes. Transfer grilled bread to a plate.
  • Season sardines inside and out with salt and pepper (no need to oil them, as there is so much naturally in their skin). Grill, turning occasionally, until lightly charred and cooked through, 5-7 minutes.
  • Serve sardines with tomato and grilled bread drizzled with oil and topped with basil.

2 pounds sardines, scaled and cleaned (heads and tails left on)
3 garlic cloves, peeled and crushed to a paste
Finely grated zest and the juice of 1 lemon
3 tablespoons olive oil
1 1/2 tablespoons chopped fresh cilantro
1 1/2 tablespoons chopped fresh parsley
2 teaspoons paprika
1 teaspoon ground coriander
Pinch each saffron threads and hot-red-pepper flakes
1 teaspoon kosher salt

Steps:

  • Place sardines in a single layer in a nonreactive dish. Mix the remaining ingredients in a bowl, pour mixture over the sardines and turn sardines to coat. Cover and let marinate 1 hour.
  • Grill or broil sardines until cooked through, about 2 minutes on each side.

2 slices sourdough bread, toasted
1 large garlic clove , halved
135g can sardines in olive oil
130g cherry tomatoes , halved
handful watercress
1 tbsp parsley , roughly chopped
1/2 lemon , to serve (optional)

Steps:

  • Rub each piece of toast with the garlic. In a small bowl, mix the sardines and their oil with the tomatoes and the watercress, then season. Sit half the mixture on each slice of toast, piled high. Scatter over the parsley and squeeze over the lemon, if you like.
