SATAY CHICKEN PIZZA
This recipe was developed in response to hunger, a creative impulse, and a lack of other food in the house. It's great. Really.

Steps:
- Heat oil in a skillet over high heat. Saute chicken pieces in hot oil for 6 to 7 minutes. Do not overcook!
- Preheat oven to 425 degrees F (220 degrees C).
- To Assemble Pizza: Spoon 1/4 of peanut sauce onto each pita. Sprinkle 1/4 of the browned chicken and 1/4 of the scallions on top of each. Top each 'pizza' with 1 slice cheese. Place on a lightly greased cookie sheet and bake in the preheated oven for 10 to 12 minutes, until the cheese is melted and bubbly. Let stand for 1 to 2 minutes outside of oven before you cut with a pizza cutter.

- Preheat oven to 425°. Place pizza crust on a pizza pan; brush with sesame oil. In small bowl, combine hoisin sauce and chili garlic sauce; brush 1/3 cup over crust. Toss remaining mixture with chicken; sprinkle over crust. Top with 2 green onions, red pepper, carrots, cashews and cilantro. Sprinkle mozzarella over top., Bake until cheese is lightly browned, 12-15 minutes. Let stand 5 minutes; sprinkle with remaining 2 green onions.

EASY CHICKEN SATAY
Savory chicken served on skewers with a slightly sweet peanut sauce.

Steps:
- Stir together 1/2 cup coconut milk, garlic, 1 teaspoon curry powder, brown sugar, salt, and pepper until the sugar has dissolved. Toss marinade with the chicken, cover, and marinate for at least 2 hours.
- Bring 1 cup coconut milk, 1 tablespoon curry powder, peanut butter, chicken stock, and 1/4 cup brown sugar to a simmer in a saucepan over medium-high heat. Simmer for 5 minutes, stirring constantly, until smooth and thickened. Remove from heat and stir in lime juice and soy sauce; season to taste with salt.
- Preheat a grill for medium-high heat.
- Thread marinated chicken onto skewers, then grill 4 to 5 minutes per side, or until cooked through. Serve with warm peanut sauce.

A great brown-bag sandwich that is easy to make and a delight to the taste buds. I package everything seperately. At work I heat the satay in the microwave, then assemble. Sure beats the heck out of boring pb&j.

Steps:
- In a large nonstick skillet, heat the oil over medium heat.
- Add curry powder, stirring constantly for 30-60 seconds or so, just until the curry is fragrant.
- Quickly whisk in the coconut milk (so the curry doesn't burn).
- Add in peanut butter, soy sauce, vinegar, cayenne pepper, and 2 to 4 tablespoons water or enough to creat a sauce; whisk to combine.
- Simmer for 1-2 minutes, whisking frequently.
- Add in shredded chicken; stir to combine.
- Remove skillet from heat.
- Open pita pockets; add cucumber slices and lettuce leaves.
- Add in chicken satay and eat immediately.
