Sausage-Cheddar Bites image

Bite-size appetizers with shredded cheddar cheese and breakfast sausage - a little spicy and totally addicting!

1¼ cups all-purpose flour
1½ teaspoons baking powder
½ teaspoon kosher salt
½ teaspoon cayenne pepper
¼ teaspoon ground black pepper
8 ounces shredded cheddar cheese (about 2 cups shredded)
16 ounces bulk breakfast sausage
½ large yellow onion (grated)
3 tablespoons unsalted butter (melted)

Steps:

  • Preheat oven to 400 degrees F. Line a rimmed baking sheet with parchment paper; set aside.
  • In a large bowl, whisk together the flour, baking powder, salt, cayenne and black pepper. Add the shredded cheese and toss to evenly coat with the flour mixture. Add the sausage, onion and melted butter, and mix until a cohesive mass forms. Using your hands, break off pieces of the mixture and roll into 1-inch balls (I used a small cookie scoop). Place on the prepared baking sheet about ½-inch apart.
  • Bake until the sausage is cooked through, about 25 to 30 minutes. Using tongs, transfer the warm sausage bites to a serving platter, insert toothpicks, and serve warm. These are best served as soon as they are baked, but leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat before serving.

1/2 cup chopped onion
1 can (15 ounces) pizza sauce
1/2 pound sliced fresh mushrooms
1 loaf (16 ounces) French bread, cut into 22 slices
1 package (8 ounces) sliced mozzarella cheese, halved

Steps:

  • In a large skillet, cook sausage and onion over medium heat until meat is no longer pink; drain. Stir in pizza sauce and mushrooms., Place bread slices on a 15x10x1-in. baking pan; spoon 2 tablespoons of sausage mixture on each. Top each with a half slice of cheese. Bake at 350° for 20-25 minutes or until the cheese is melted.

1 1/2 cups Bisquick Baking Mix
1/2 pounds raw breakfast sausage (hot or regular.)
1 cups sharp cheddar (grated)
1/4 cups orange marmalade
1/4 cups chili sauce

Steps:

  • Preheat oven to 400 degrees.
  • Combine raw sausage and Bisquick and cheese, using hands or a stand mixer to combine. The mixture will be very stiff.
  • Scoop into 2" balls and roll. Place on a lined baking sheet and bake for 15 minutes or until golden brown.
  • Combine the orange marmalade and chili sauce in a small bowl and microwave until warm. Serve with the hot sausage and cheese bites.

So after looking through the odds and ends in my "fridge",I came up with this recipe.If desired brush tops of "bites" with melted margarine or butter. My son who is known on here by "Cylopsmaster" came up with the name for this recipe.Submitted to "ZAAR" on June 26th,2008.

1 (8 ounce) box buttermilk biscuit mix
1/2 cup water
1/2 cup sage sausage
1/2 cup finely shredded sharp cheddar cheese
3/4 teaspoon garlic powder
1/2 teaspoon crushed red pepper flakes (optional)

Steps:

  • Preheat oven to 450 degrees.
  • While oven is heating, cook sausage over medium high heat, until lightly browned.
  • Drain and set aside.
  • In a medium sized bowl, mix together biscuit mix and water, until well combined.
  • Then add rest of ingredients, including drained sausage.
  • At this point the mixture will be thick and sticky.
  • Drop by heaping tablespoonfuls on ungreased baking sheet.
  • Bake for 10 minutes or until tops are golden brown, if desired brush with melted butter.

1 box (17.3 oz.) frozen puff pastry (2 sheets)
1 pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken
1 lb. pork sausage
1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
2 eggs, divided
1 cup cranberry sauce

Steps:

  • Heat oven to 400°F.
  • Remove puff pastry from the freezer and allow it to thaw for about 15 min. until you can unfold it without breaking. (Make sure you don't let it get too warm.)
  • Prepare the STOVE TOP Stuffing according to instructions on box and set aside. In a skillet on stove top, cook sausage until browned and crumbled, set aside.
  • In a large bowl with a hand mixer or stand mixer fitted with paddle attachment, mix together cream cheese and 1 egg until creamed together and smooth. Stir in cooked sausage until fully incorporated. Gently fold in stuffing with a spatula.
  • Unfold the puff pastry sheets, roll out each sheet and cut into 12 squares. (The squares don't have to be perfect but each should be about 3-1/2-inch square.) Press 1 square on bottom and up side of each of 24 nonstick muffin pan cups. In a small bowl, whisk the remaining egg with a fork to create an egg wash. Brush the egg wash over the puff pastry, especially the edges. (This will give the pastry a darker golden finish. If you don't use an egg wash that is fine, you'll just get a paler finish.)
  • Using a cookie scoop, divide the sausage-cream cheese mixture among the puff pastry cups, using 2 heaping teaspoons of filling per cup. Bake for 12 to 15 min. or until the puff pastry is golden brown. Top with a dollop of cranberry sauce, or serve it on the side. Serve immediately.

1 (8 ounce) package cream cheese, softened
6 ounces spicy Italian turkey sausage or 6 ounces spicy Italian pork sausage
1 head garlic
1 1/2 teaspoons chopped garlic
1 pinch garlic powder
1 pinch garlic salt
1 pinch black pepper
1 pinch red chili pepper flakes
splash olive oil
24 wonton wrappers
nonstick cooking spray

Steps:

  • Preheat the oven to 375. Cut the top off the head of garlic and place it on a baking sheet covered with foil and pour olive oil over it. Bake for 30-40 minutes or until golden brown and cloves are soft & mushy. (this can also be done in the toaster oven :O)
  • Cut the raw sausage open and throw away the sausage casing, brown the sausage in a skillet until completely cooked.
  • Chop 1-2 cloves raw garlic, about 1 1/2 teaspoons.
  • In a large bowl combine cooked sausage, cream cheese, roasted garlic, raw garlic a pinch of red chili flakes, and seasoning- I just shook in a bit of the garlic powder, garlic salt, & pepper (probably around 1/4 tsp each, maybe a bit more) and mix with a hand held electric mixer until all ingredients are well combined.
  • Spray a mini-muffin tin with non-stick cooking spray. Add a won-ton wrapper one cup of the muffin tray and fill with about 1 to 1 1/2 Tbsp of the garlic cheese mix. Pinch the won ton wrapper together to seal, then spray with non-stick cooking spray, repeat until the whole tin is full of lil' garlic bites!
  • Bake at 375 for about 30 minutes or until they are golden brown and gorgeous!
  • The tops will open up a bit- but I thought they were reminiscent of little garlic cloves and was happy with how they came out.
