SAUSAGE JALAPENO POPPERS
This is a recipe for stuffed jalapenos I had at a baby shower in Texas. I loved them and have made them for every party since. They are always anxiously requested, a HIT AT EVERY PARTY!!!! Use toothpicks to secure the bacon around the stuffed jalapenos. Be sure to use a pan that won't let the bacon drip all over the oven while cooking!

Steps:
- Preheat oven to 375 degrees F (190 degrees C).
- Place ground sausage in a large, deep skillet. Cook over medium high heat until evenly brown.
- Drain sausage and place in a medium bowl. Mix with the cream cheese.
- Cut jalapenos in half lengthwise. Remove the seeds. Stuff each jalapeno half with equal portions of the sausage and cream cheese mixture. Wrap with half slices of bacon. Secure bacon with toothpicks.
- Arrange wrapped jalapenos in a large, shallow baking dish. Bake in the preheated oven 20 minutes, or until the bacon is evenly brown.

- Place sausage in a skillet over medium heat, and cook until evenly brown. Drain grease.
- In a bowl, mix the sausage, cream cheese, and Parmesan cheese. Spoon about 1 tablespoon sausage mixture into each jalapeno half. Arrange stuffed halves in baking dishes.

- Preheat oven to 425°. Place sausage in a skillet over medium heat, and cook until evenly brown. Drain grease. In a bowl, mix the sausage, cream cheese, cheddar cheese, and green onion. Spoon about 1 tablespoon sausage mixture into each jalapeno half. Arrange stuffed halves in a baking dish. Bake 20 minutes in the preheated oven, until bubbly and lightly browned. Tips on seeding the jalapenos. 1) Wear gloves throughout the entire process, then remove right after so you don't transfer to sink faucet, cabinet handles, etc. 2) I love my little lemon zester tool for seeding but a small melon baller works great too. 3) As you half and seed the jalapenos and put into a bowl of continuous running water. This helps soften to bake better and removes some heat.
JALAPENO PORK POPPERS
Steps:
- Preheat oven 400 degrees F.
- Brown sausage and onion over medium-high heat. Drain fat. Pat sausage with paper towel to remove residual fat. In a metal bowl, combine sausage/onion mixture, cream cheese, salt and pepper. Stir until completely combined. With a small spoon, fill jalapeno halves with sausage/cream cheese mixture. Place filled jalapeno halves on a foil lined baking sheet. Bake until golden brown and jalepenos appear to be slightly softened. This will take approximately 25-35 minutes. Eat immediately or store leftovers in refrigerator and warm up in microwave.

My cousin's wife makes this for almost all family gatherings and they are always a hit. I recently asked her for the recipe and started making them for my own social gatherings. This recipe makes a lot of poppers. You could easily half the recipe for smaller gatherings.

- Prepare the jalapeños. First, cut off the stem, then using a coring tool clean out all the seeds and the pith. Slice cleaned out jalapeños in half lengthwise. *Tip – after I core out the center, I run the jalapeños underwater – makes for easy work removing any stuck-on seeds.
- Brown sausage until fully cooked, I like to make sure it’s broken up into small tiny bits, drain any grease. Add cream cheese to sausage and mix until completely melted and everything is well combined. *Tip – I use a medium pot to brown the sausage, then you can add the cream cheese right to the pot instead of dirtying another bowl.
- Spoon sausage mixture into jalapeño halves and place onto a cookie sheet lined with parchment paper.
