These savory hand pies are stuffed with a delicious mix of green chiles, andouille sausage, and potatoes.

Steps:
- Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.
- Add canola oil to a 12-inch nonstick pan over medium heat. Add potatoes, salt, and pepper. Fry until potatoes are fork-tender, about 20 minutes. Transfer to a medium bowl.
- Add sausage and onion to the same pan. Cook and stir until onion is translucent, about 5 minutes. Transfer to the bowl of potatoes using a slotted spoon. Stir in green chiles. Allow mixture to cool to room temperature.
- Divide each pie crust into 3 pieces. Roll out each piece into an 8-inch circle. Add 3 tablespoons of the potato-sausage mixture to each circle. Mix Cheddar and Gouda cheeses together; sprinkle 3 tablespoons over the filling.
- Beat egg and milk together to make egg wash. Fold dough over the filling in a semi-circle shape. Brush the edge of the pastry with egg wash; press to seal. Flute the border with a fork. Brush the tops with egg wash and score tops with a fork.
- Space hand pies evenly on the prepared baking sheet.
- Bake in the preheated oven until golden brown, about 20 minutes.

- Preheat an outdoor grill for high heat.
- On a large sheet of foil, place the green beans, red potatoes, onion, and sausage. Season with salt and pepper, sprinkle with oil, and top with butter. Tightly seal foil around the ingredients, leaving only a small opening. Pour water into the opening, and seal.
- Place foil packet on the prepared grill. Cook 20 to 30 minutes, turning once, until sausage is browned and vegetables are tender.

- Preheat oven to 450°F. Toss potatoes, 2 Tbsp. oil, 1 tsp. salt, and 1/4 tsp. pepper on an 18x13" rimmed baking sheet. Prick sausages all over with a sharp knife, then nestle among potatoes. Roast, turning sausage and tossing potatoes halfway through, until potatoes are lightly browned and just barely fork-tender and sausage is just cooked through, 12-14 minutes.
- Meanwhile, whisk vinegar, mustard, honey, and remaining 6 Tbsp. olive oil, 3/4 tsp. salt, and 1/4 tsp. pepper in a large bowl. Pour about 1/4 cup dressing into a small bowl or pitcher and reserve for serving. Toss greens in remaining (about 2 Tbsp.) dressing, using your hands to massage dressing evenly into leaves.
- Scatter dressed leaves in an even layer over sausage and potatoes. Roast, tossing greens halfway through, until greens are tender and charred in places, 3-5 minutes.
- Separate sausage, potatoes, and greens into sections to serve, if desired, or toss all together. Serve with reserved dressing alongside.
CHEESY POTATO AND GREEN CHILI BREAKFAST CASSEROLE

- Preheat oven to 350º.
- Lightly spray a 9 x 13 baking dish with cooking spray.
- Add hash browns to bottom of dish and sprinkle with salt and pepper. (If the hashbrowns are preseasoned, you can skip this step.).
- (If you are going to add cooked sausage or bacon, place it on top of the potatoes.).
- Add 1/2 of the cheese and half of the Chiles on top.
- In a separate bowl mix the eggs, water and the remaining 1/2 of the Chiles with a wire whisk. Pour over the potatoes and top with the rest of the cheese.
- Bake at 350 degrees for 45 - 55 minutes. Check the center for doneness by inserting a knife.
- Serve with salsa and tortillas.
- Another option would be to heat flour tortillas on a skillet and add a spoonful or two to a tortilla and roll it up for a breakfast burrito.

We came up with these as a variation to use what we had to make a great breakfast! We make the first half without the green chilis for the kids then add them in for the balance of the batter.

- Sausage and potatoes should be cooked already.
- Mix all the rest of the ingredients except cooking oil.
- Fold in sausage and hashbrowns to mix.
- Heat oil in a pan.
- Drop mix into pan by large spoonfuls and flatten with the back of the spoon. Cook until browning around the edges and then use your spatula underneath and back of the spoon on the top to flip them over. Continue cooking until brown on second side.
- Serve with a little syrup to sweeten them up or sour cream and hot sauce to go savory!

- Place potatoes in a Dutch oven; cover with water. Bring to a boil. Cover and cook for 2-3 minutes. Drain and pat dry; set aside., In a large saucepan, saute onion in butter and oil until tender. Stir in the flour, salt and pepper until blended. Gradually stir in the broth, milk and cream. Bring to a boil; cook and stir for 2-3 minutes or until thickened. , Stir in the chilies, cheddar cheese, Swiss cheese, 1/2 cup Parmesan cheese, mustard, garlic powder, pepper sauce and nutmeg until cheese is melted. , In a greased 13x9-in. baking dish, arrange half of the potatoes and cheese sauce. This recipe is from the package of Liptons Onion Soup, though I have written it in my own words with some tune ups for clarity. The children really like it, though I prefer it using the hot italian sausage rather than the sweet.

Steps:
- Cook sausage in a little bit of water until just done.
- Cook off water, or pour out of pan and pan fry sausage until well browned.
- Wash potatoes (or peel if desired) and cut into bite sized chunks.
- Remove sausage from pan.
- Mix soup mix with water and use to deglaze the pan.
- Add potatoes.
- Bring to a boil, cover, then simmer for about 10-15 minutes , until potatoes are done.
- Cut Sausage into disks about 1/2 inch to and inch thick.
- Add to pan and stir well.
- Simmer, with the cover off until sausages are heated through and the liquid is slightly thick.
- Serve with crisp green salad and saute'd onions and peppers with crusty italian bread.

- Cook and crumble the sausage, onions and garlic over medium high heat in the bottom of a large pot. If there is a lot of grease in the bottom of the pot*, drain it off before adding all remaining ingredients and bring to a boil.
