1 tablespoon olive oil
14 ounces fully-cooked smoked sausage (sliced into ½-inch rounds)
1 teaspoon minced garlic
1½ cups low sodium chicken broth
2 (15 ounce) cans cannellini beans, rinsed and drained
15 ounces petite diced tomatoes (fire-roasted diced tomatoes work very well too!)
1 teaspoon Italian seasoning
¼ teaspoon crushed red pepper flakes
6 ounces fresh baby spinach
fresh ground black pepper, (to taste)
¼ cup grated Parmesan, (or to taste)

Steps:

  • Heat olive oil in a large skillet over medium-high heat. Add sausage and cook, stirring, until nicely browned. Add garlic and cook for just another minute or two until garlic is fragrant. Add chicken broth, cannellini beans, diced tomatoes, Italian seasoning, and crushed red pepper. Bring to a boil, then reduce heat to medium and let it simmer, uncovered for 15 minutes to allow broth to reduce a little.
  • Stir in fresh baby spinach and remove from heat. Continue to stir until spinach is wilted. Garnish with fresh ground black pepper and Parmesan. Ladle into bowls and serve with a hunk of crusty bread.

16 ounces dried orecchiette pasta
2 tablespoons olive oil
12 ounces italian sausage, sliced into bite-sized pieces or crumbled
1 tablespoon chopped garlic
1/2 cup sundried tomatoes, chopped
6 ounces baby spinach, chopped
1 cup chicken broth
3 tablespoons tomato paste
1 15 oz can cannellini beans, rinsed and drained
1 tablespoon dried basil
salt and pepper, to taste
parmesan cheese, for serving

Steps:

  • Cook the pasta in a large pot of salted water al dente according to package directions. Drain the pasta and keep warm. Reserve about one cup of pasta water. Add the oil to the pot and bring heat to medium. Brown the sausage and cook for about 10 minutes or until no longer pink. Add the garlic, sun dried tomatoes and spinach. Cook for a few minutes or until the spinach is wilted. Add the chicken broth and stir in the tomato paste. Add the beans and simmer on low for about 10 minutes or until the veggies are cooked and the sauce thickens. Add the pasta to the pot along with the dried basil. Add the pasta water, stir and cook on low until everything is well blended. Add salt and pepper to taste. Serve in a large bowl with grated Parmesan cheese.

1 pound orecchiette pasta
2 tablespoons extra-virgin olive oil
1 pound sweet Italian sausage, removed from casings
1 yellow onion, diced
3 cloves garlic, sliced
2 pints grape or pear tomatoes, quartered
1/2 teaspoon crushed red pepper flakes
One 15-ounce can cannellini beans, rinsed and drained
1/2 cup grated Parmesan, plus additional for garnish
1/2 cup fresh basil leaves, cut into chiffonade, plus additional for garnish

Steps:

  • Bring a pot of salted water to a boil and cook the orecchiette according to package instructions.
  • Meanwhile, heat the oil in a large, heavy-bottomed skillet over medium-high heat. Add the sausage and cook, breaking it up with the back of a spoon, until it starts to brown, 4 to 5 minutes. Remove the sausage to a bowl with a slotted spoon, leaving all the oil in the skillet.
  • Add the onions to the oil and cook until they start to soften and turn translucent, about 2 minutes. Add the garlic to the skillet and cook, stirring, for 30 seconds. Add the tomatoes and red pepper flakes and cook, stirring occasionally, until the tomatoes start to blister and split, about 4 minutes. Add salt and pepper.
  • Add the beans and return the sausage to the skillet. Cook until warmed through. Add the pasta and toss until it is completely coated. Add the Parmesan in batches, stirring to incorporate and letting it melt before more is added. Stir in the basil.
  • Plate the pasta and top with more Parmesan and basil. Serve immediately.

2 cups coarsely chopped onions
6 cloves garlic, roughly chopped
1 head escarole, sliced crosswise into 1 inch strips
1 1/2 cups chicken broth
1 1/2 cups beef broth
2 (15 ounce) cans cannellini beans or 2 (15 ounce) cans red kidney beans, drained
1 lb cellentani pasta or 1 lb fusilli, cooked and drained
1 cup freshly grated romano cheese

Steps:

  • Heat oil in a large skillet, cook sausage over medium heat 10 minutes, remove and slice into 1 inch chunks.
  • Add onions, garlic and escarole to the skillet and cook until the escarole is wilted.

1 (14-oz) can diced tomatoes in juice, drained, or 2 large fresh plum tomatoes, cut into 1/4-inch dice
1 (15- to 19-oz) can small white beans, drained and rinsed
2 cups chicken stock or broth
1 lb campanelle (bell-shaped pasta), rotini (corkscrew pasta), or medium shells
1/4 cup chopped fresh flat-leaf parsley

1/2 oz finely grated Pecorino Romano (1/4 cup)

Steps:

  • Preheat oven to 400°F.
  • Cut off and discard top of garlic head to expose cloves, then wrap head in foil and roast in middle of oven until cloves are tender, about 45 minutes. Open foil carefully and cool to warm. Squeeze garlic from skins into a small bowl, then mash to a paste with a fork.

8 cups (lightly packed) torn escarole, kale, or Swiss chard leaves

  • Heat oil in a large Dutch oven or other heavy pot over medium-high. Fry rosemary, turning, until crisp, about 2 minutes. Transfer to paper towels to drain.
