BLUE CHEESE COOKIES
Blue Cheese Cookies filled with fruit preserves. Similar to the Cheddar Cheese Straw but with Blue Cheese.

Steps:
- Beat blue cheese and butter at a medium speed until fluffy.
- Add flour, poppy seeds and cayenne pepper and continue to beat until combined.
- Roll dough into 1 inch disks and place on a ungreased tray/cookie sheet. Cover and refrigerate for 1 hour.
- Space disks out on an ungreased cookie sheet. Press your thumb into the middle of the disks leaving an indentation.
- Heat oven to 350 F. Bake for 15-18 minutes or until golden.
- Transfer to a wire rack to cool.
- Fill indentations with fruit preserves such as strawberry, cherry or fig.
CHEWY ALMOND COOKIES
Steps:
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix together all the ingredients, except optional add-ins. The mixture should be thick and evenly moistened. (Note: If you think your batter is too crumbly, feel free to add a little bit more honey or coconut oil. The batter is quite forgiving.)
- If using, stir in optional add-ins like chocolate chips.
- Using a medium cookie scoop, shape the dough into 16 1-inch balls and place 8 cookies per baking sheet lined with parchment paper, or silicone mat.
- Flatten the cookie dough balls.
- Bake for 8-10 minutes, or until golden brown.
- The cookies will be quite fragile as they come out of the oven, so cool for about 5 minutes on the baking sheets first, and then transfer onto wire rack to cool completely.

- Preheat the oven to 375 degrees F.
- In a medium bowl, combine flour, baking powder, and salt. In another medium bowl, cream together the butter and sugar using a hand mixer. Add egg and beat to incorporate. Add milk, almond extract, and lemon zest. Stir the dry ingredients into the wet ingredients. Fold in the almonds, then the blueberries. Chill the dough in the refrigerator for 30 minutes. Preheat the oven to 375 degrees F. Using two small spoons, dollop mix onto cookie sheets. Bake until golden brown around the edges, about 15 minutes. Cool the cookies on a wire rack. Save in a storage container to take to the picnic.

- 1. Heat the oven to 350°F. Line a baking sheet with parchment paper.
- 2. Place the flour, butter, blue cheese, and a few grinds of black pepper in the bowl of a food processor and process until the dough just comes together and starts to form a ball.
- 3. Dump the dough out onto a lightly floured surface and knead a few times to pull it together. Then roll out to a 1/8-inch-thick circle with a floured rolling pin. Cut rounds out of the dough with a floured 1-inch round cutter and transfer to the parchment-lined baking sheet. Reroll the scraps (no more than once) and cut more rounds.
- 4. Using the back of a rounded 1/2-teaspoon measure or your knuckle, make an indentation in the center of each dough round. Spoon about 1/4 teaspoon of the fig preserves into each indentation, using your finger to push the preserves as best as possible into the indentation.
- 5. Bake the savouries until the preserves are bubbling and the pastry is light golden on the bottom, 10 to 12 minutes. Let cool on the baking sheet for at least 10 minutes, then remove to a wire rack to finish cooling.

- Whip the cream in a medium bowl until stiff and season with salt and pepper. Set aside 1 ounce of the blue cheese, and mash the rest with a fork in a separate bowl. Stir in the basil, oregano and thyme, then fold in the whipped cream.

- Preheat oven to 200°C.
- Grease gem trays- the really little muffin tray!
- Sift flour, salt baking powder together.
- Mix in cheese.
- Mix in butter until it forms a dough.
- Roll walnut sized balls of dough and place them in the gem tray.
- Press small hollows into each ball with the handle of a wooden spoon.
- Spoon in a small quantity of jam into each hollow.
- Bake for approximately 15 minutes.
- Cool on a wire rack and store in an airtight container.
- Just before serving, top up hollows with additional jam.

I have had this recipe for so long that I can't remember where it came from, but I think I got it out of a magazine or newspaper. I like it because you can use the dough in so many different ways. For the Holidays, you can press half of a candied cherry in the center of unbaked cookie, and then after baking drizzle with either white or dark chocolate, melted.

- Cream sugar, butter, cream cheese until fluffy.
- Add egg and flavorings.
- Beat until smooth.
- Add flour and baking powder, mixing well.
- Drop dough by spoonfuls onto ungreased cookie sheets and flatten with a flat bottomed drinking glass which has been dipped in sugar.
- OR: Force dough through a cookie press.
- OR: Chill dough 1 to 1 1/2 hours and roll out on lightly floured surface.
