Blue Cheese Cookies filled with fruit preserves. Similar to the Cheddar Cheese Straw but with Blue Cheese.

10 oz blue cheese crumbles
1/2 cup butter (softened)
1 1/3 cup all purpose flour
3 tablespoons poppy seeds
1/4 teaspoon cayenne pepper
1/2 cup fruit preserves (strawberry, fig, or cherry)

Steps:

  • Beat blue cheese and butter at a medium speed until fluffy.
  • Add flour, poppy seeds and cayenne pepper and continue to beat until combined.
  • Roll dough into 1 inch disks and place on a ungreased tray/cookie sheet. Cover and refrigerate for 1 hour.
  • Space disks out on an ungreased cookie sheet. Press your thumb into the middle of the disks leaving an indentation.
  • Heat oven to 350 F. Bake for 15-18 minutes or until golden.
  • Transfer to a wire rack to cool.
  • Fill indentations with fruit preserves such as strawberry, cherry or fig.

2 cups (200g) almond flour
½ teaspoons baking soda
¼ teaspoon kosher salt
6 tablespoons (120ml) raw honey
4 teaspoons (20g) coconut oil (melted)
2 teaspoons pure vanilla extract
½ cup semi-sweet chocolate chips
½ cup coconut flakes
½ cup quick oats

Steps:

  • Preheat the oven to 350°F (175°C).
  • In a large bowl, mix together all the ingredients, except optional add-ins. The mixture should be thick and evenly moistened. (Note: If you think your batter is too crumbly, feel free to add a little bit more honey or coconut oil. The batter is quite forgiving.)
  • If using, stir in optional add-ins like chocolate chips.
  • Using a medium cookie scoop, shape the dough into 16 1-inch balls and place 8 cookies per baking sheet lined with parchment paper, or silicone mat.
  • Flatten the cookie dough balls.
  • Bake for 8-10 minutes, or until golden brown.
  • The cookies will be quite fragile as they come out of the oven, so cool for about 5 minutes on the baking sheets first, and then transfer onto wire rack to cool completely.

Steps:

  • Preheat the oven to 375 degrees F.
  • In a medium bowl, combine flour, baking powder, and salt. In another medium bowl, cream together the butter and sugar using a hand mixer. Add egg and beat to incorporate. 1/3 c. almond flour
2 T corn starch
1/4 t. coarse salt
1/8 t. black pepper

  • *Combine blure cheese and butter in a food processor; pulse until thoroughly blended. *Add rice flour, almond flour, corn starch, salt and pepper and pulse until ingredients come together in a ball. *Place dough on wax paper, flatten into a disc and chill for 30 minutes or up to one day. * Preheat oven to 325, line a cookie sheet with parchment * Roll dough to 1/4 inch thickness and cut into shapes with cookie cutters. Place on cookie sheet. * Bake 10 - 12 minutes or until edges turn golden. Cool on a wire rack before serving or freezing.

Steps:

  • 1. Heat the oven to 350°F. Line a baking sheet with parchment paper.
  • 2. Place the flour, butter, blue cheese, and a few grinds of black pepper in the bowl of a food processor and process until the dough just comes together and starts to form a ball.
  • 3. Dump the dough out onto a lightly floured surface and knead a few times to pull it together. Then roll out to a 1/8-inch-thick circle with a floured rolling pin. Cut rounds out of the dough with a floured 1-inch round cutter and transfer to the parchment-lined baking sheet. Reroll the scraps (no more than once) and cut more rounds.
  • 4. Using the back of a rounded 1/2-teaspoon measure or your knuckle, make an indentation in the center of each dough round. Spoon about 1/4 teaspoon of the fig preserves into each indentation, using your finger to push the preserves as best as possible into the indentation.
  • 5. Bake the savouries until the preserves are bubbling and the pastry is light golden on the bottom, 10 to 12 minutes. Let cool on the baking sheet for at least 10 minutes, then remove to a wire rack to finish cooling.

1 ml baking powder
2 ml salt
625 ml cheddar cheese, finely grated
250 g butter
60 ml smooth apricot jam

Steps:

  • Preheat oven to 200°C.
  • Grease gem trays- the really little muffin tray!
  • Sift flour, salt baking powder together.
  • Mix in cheese.
  • Mix in butter until it forms a dough.
  • Roll walnut sized balls of dough and place them in the gem tray.
  • Press small hollows into each ball with the handle of a wooden spoon.
  • Spoon in a small quantity of jam into each hollow.
  • Bake for approximately 15 minutes.
  • Cool on a wire rack and store in an airtight container.

1 cup butter or 1 cup margarine
1 (8 ounce) package cream cheese
1 egg
1 teaspoon vanilla
1 teaspoon almond extract
4 cups all-purpose flour
1 teaspoon baking powder

Steps:

  • Cream sugar, butter, cream cheese until fluffy.
  • Add egg and flavorings.
  • Beat until smooth.
  • Add flour and baking powder, mixing well.
  • Drop dough by spoonfuls onto ungreased cookie sheets and flatten with a flat bottomed drinking glass which has been dipped in sugar.
  • OR: Force dough through a cookie press.
