SAVORY BRINED PORK CHOPS

Savory Brined Pork Chops image

If you prefer savory pork chops instead of sweet ones, give this recipe a try. It has a good garlic flavor with just a hint of kick from the chile powder. The marinade is designed to brine and marinate the meat at the same time, producing a more tender result. Don't let the cooking time scare you: these are very easy to make, and require very little attention on your part.

Yield Makes 6 servings

Number Of Ingredients 10

2 qt water
1/4 cup kosher salt
1/4 cup mustard seeds
1/4 cup sugar
2 tablespoons pickling spices
6 garlic cloves, smashed with side of a large knife
6 (1 1/2-inch-thick) rib pork chops
4 to 6 tablespoons olive oil
1/2 cup dry Riesling
1/2 cup chicken broth

Steps:

  • Brine pork chops:
  • Bring water to a boil with kosher salt, mustard seeds, sugar, pickling spices, and garlic and simmer 15 minutes. Cool brine completely, then add chops and chill, covered, 1 to 2 days.
  • Roast chops:
  • Preheat oven to 425°F.
  • Remove chops from brine and pat dry. Heat 2 tablespoons oil in a 12-inch heavy skillet over moderately high heat until hot but not smoking, then brown chops in batches, without crowding, turning once, 3 to 4 minutes on each side. (Add oil 1 to 2 tablespoons at a time as needed between batches.)
  • Transfer chops to a roasting pan and roast in middle of oven until an instant-read thermometer inserted horizontally 2 inches into center of meat (do not touch bone) registers 155°F, 15 to 20 minutes. Transfer chops to a platter and let stand, loosely covered, 5 minutes before serving (do not clean pan).
  • Straddle pan across 2 burners and add any meat juices from platter along with wine and broth and deglaze by boiling over moderately high heat, stirring and scraping up brown bits, until reduced to about 1/2 cup, about 4 minutes. Season pan juices with salt and pepper and serve with chops.

BUTTERMILK-BRINED PORK CHOPS

Buttermilk-Brined Pork Chops image

Provided by Jeff Mauro, host of Sandwich King

Categories     main-dish

Time 2h40m

Yield 4 servings

Number Of Ingredients 17

1 1/2 cups red wine vinegar
1/4 cup sugar
2 bay leaves
Kosher salt
2 large red onions, halved and sliced into 1/4-inch-thick half-moons
1 head red cabbage, thinly shredded
2 tablespoons chopped fresh parsley
2 cups buttermilk
4 teaspoons hot sauce
1 teaspoon granulated garlic
Kosher salt and freshly ground black pepper
Four 1-inch-thick bone-in pork chops
2 cups all-purpose flour
4 large eggs, beaten
2 cups Italian breadcrumbs
Canola oil, for frying
Stone-ground Dijon mustard, for serving

Steps:

  • For the pickled red cabbage slaw: In a small saucepan, add the vinegar, sugar, bay leaves, 1 teaspoon salt and 1/2 cup water and bring to a boil. Put the onions and cabbage in a large heatproof bowl or container and pour the boiling liquid over them. Toss to coat. Let the mixture sit for at least 30 minutes in the refrigerator and up to overnight. Right before serving, add the parsley.
  • For the pork chops: In a large bowl, combine the buttermilk, hot sauce, granulated garlic, 2 teaspoons salt and 1 teaspoon pepper. Add the brine and pork chops to a large ziptop bag, making sure the pork chops are evenly coated. Close tightly. Allow the chops to sit for 2 hours on the counter and up to 4 hours in the refrigerator.
  • Set up a breading station with one plate of the flour, one bowl of the eggs and one plate of the breadcrumbs.
  • Remove the pork chops from the brine and allow any excess to drip off. Bread the pork chops by evenly coating them in the flour, followed by the egg and finishing with the breadcrumbs.
  • Fit a rimmed baking sheet with a wire rack. Pour enough oil into a 12-inch cast-iron skillet to come halfway up the sides of the pork chops and heat over medium heat. Once the oil is shimmering, add the pork chops to the skillet in batches and shallow-fry until golden brown or a thermometer reads 135 degrees F, 3 to 5 minutes per side. (If the pork chop breading is getting too dark while cooking in the oil, finish the pork chops in the oven at 350 degrees F until an internal temperature of 135 to 140 degrees F is reached.) Remove the chops to the baking sheet and season with salt.
  • Serve the chops with the slaw and mustard.

TEXAS-RUBBED AND BRINED PORK CHOPS

Texas-Rubbed and Brined Pork Chops image

Categories     Pork     Marinate     Backyard BBQ     Dinner     Lunch     Pork Chop     Summer     Tailgating     Grill     Grill/Barbecue     Dairy Free     Wheat/Gluten-Free     Peanut Free     Tree Nut Free     Soy Free

Yield Makes 6 to 8 servings

Number Of Ingredients 16

Brine:
4 cups apple cider
1 cup Morton kosher salt
1/2 cup dark brown sugar
2 bay leaves, crumbled
1 teaspoon black peppercorns
1 teaspoon whole cloves
4 cups ice cubes or cold water
Meat:
1 (4-5 pound) center-cut pork loin, bone-in
2 to 4 tablespoons olive oil
Rub:
1/4 cup Morton kosher salt
2 tablespoons coarsely ground black pepper
1 teaspoon cayenne pepper
Oak or apple wood chips, soaked

Steps:

  • Grilling Method: Indirect/Medium Heat
  • Combine the cider, salt, sugar, bay leaves, peppercorns and cloves in a large stockpot. Bring to a boil over medium-high heat and cook for about three minutes, stirring occasionally, or until the sugar and salt dissolve. Remove from heat and add the ice cubes or cold water (the ice cubes will cool the brine to room temperature faster).
  • Place the pork loin in a nonreactive pan or resealable plastic bag (brining bag) and cover with the brine. Cover pan or tightly close the bag and refrigerate for 2 to 3 hours. If you are using an extra large resealable bag or brining bag, rotate the pork a few times to make sure all of the meat gets brined. Before roasting, remove the pork and pat dry with paper towels.
  • Meanwhile, make the rub by combining all of the spices and mixing well. You will not need all of the rub for this recipe. Store any leftover rub in a clean, airtight container.
  • Preheat a gas grill on high with a smoker box or a foil pan filled with wood chips set under the cooking grates. Just before grilling, reset your gas grill for medium indirect heat. If you are cooking on a charcoal grill, build the fire and sprinkle the wet wood chips over the gray-ashed briquettes just before putting the food on the grill.
  • Lightly brush pork with olive oil and sprinkle lightly with rub. Place pork directly on the cooking grate and cook for about 90 minutes or until an instant-read meat thermometer reaches 155°F. Remove pork from roasting pan. Let meat rest for 10 minutes.
  • Cut pork loin into thick (double-cut) chops and serve.

BRINE-CURED PORK CHOPS

Brine-Cured Pork Chops image

Provided by Molly O'Neill

Categories     dinner, main course

Time 30m

Yield 6 servings

Number Of Ingredients 12

1/2 cup dark brown sugar, packed
1/4 cup kosher salt
10 black peppercorns
5 juniper berries
5 bay leaves
1/8 cup fennel seeds
1 cup mixed fresh herbs (rosemary, thyme, sage, oregano)
Peel of 1 orange
1 quart boiling water
3 quarts cold water
12 center-cut pork chops
2 tablespoons virgin olive oil

Steps:

  • Combine all the ingredients except the water, pork chops and olive oil in a large glass, ceramic or plastic container. Add the boiling water and stir to completely dissolve the sugar and salt. Stir in the cold water to cool the brine.
  • Lay the chops out in 1 layer in a large nonreactive pan and completely cover them with the brine. If a chop floats to the surface, weigh it down with a plate. Cover and refrigerate for 12 to 24 hours, depending on how much flavor you want the meat to acquire. (If the chops must be stacked, change their positions in the brine often.)
  • Heat a grill or broiler. Drain the pork chops, discarding the brine, and pat dry with paper towels. Brush the chops with the oil and grill or broil for 5 to 6 minutes per side. Put the chops on a rack in a pan to catch the drippings and loosely cover with foil. Set aside in a warm place for 6 to 8 minutes and serve.
