1 (16 ounce) package Jimmy Dean® Premium Pork Regular Sausage
1 (8 ounce) package cream cheese, softened
4 ounces garden vegetable cream cheese, softened
1 cup shredded Cheddar cheese
¼ cup finely chopped red bell pepper
¼ cup finely chopped green onion
2 (8 ounce) packages crescent roll sheets

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Add sausage to a frying pan over medium-high heat. Cook and stir with a spatula, breaking apart the sausage until cooked, 5 to 7 minutes. Drain and let cool.
  • Combine regular and vegetable cream cheese, Cheddar cheese, bell pepper, green onion, and cooled, crumbled sausage in a bowl. Mix well and set aside.
  • Unroll 1 crescent dough sheet and press into a 9x12-inch rectangle. Cut 6 rows across and 4 rows vertically to yield 24 squares. Repeat with the second package of dough.
  • Place 1 square in each cup of two nonstick 24-cup mini muffin tins, pressing it into the bottom and up the sides.
  • Drop 1 heaping teaspoon of sausage filling into each cup. Filling should be up to the top of the cup, but you do not need to press it down.
  • Bake in the preheated oven until the dough is golden brown, 11 to 13 minutes.
  • Cool for 5 minutes in the tins before removing to a platter.

Nibble on these cheesy bites as a party appetizer or afternoon snack. Bake all 60 pieces because these savory morsels will disappear quickly.
Ingredients
Cooking Spray
10 ounces bulk Hot Italian Sausage
3 cups Self-Rising Flour
6 tablespoons Unsalted Butter
1 1/2 cups Buttermilk
1 tablespoon Tabasco Sauce
1 1/4 cups grated Sharp Cheddar Cheese

Steps:

  • Directions Preheat the oven to 400F and arrange the racks in the upper and lower third of the oven. Coat two baking sheets with the cooking spray. Cook the sausage in a medium skillet over medium high heat, breaking it up with a wooden spoon, until cooked through and no pink remains. Using a slotted spoon, transfer the sausage to a paper towel-lined plate and set aside. Combine the flour and butter in a food processor and pulse until the mixture resembles coarse meal with some larger chunks of butter remaining. Drizzle in the buttermilk and tabasco and pulse just until the dough comes together. Turn the dough out into a large bowl and fold in the sausage and cheese. Using two spoons, shape the dough into walnut-size balls and drop on to the baking sheets. Bake, switching and rotating the pans halfway through baking until golden and cooked through, about 15 minutes. Let cool on the baking sheets for 5 minutes, then use a spatula to remove and transfer to a platter. Bake the remaining sausage bites in the same manner. Mango & prawn skewers
Little caviar jackets
Sticky squash with sesame seeds
Chorizo & chilli mini pizzas
Goat's cheese on toast (all ingredients for recipes below)

Steps:

  • Mango & Prawn skewers 3 limes, 1 tbsp grated ginger, 1 crushed garlic clove, 1 chopped and deseeded red chilli and 1 tbsp chopped coriander. Cut a large mango into 20 chunks. Thread each onto a small skewer with a large cooked prawn (20 prawns will be about 250g/9oz). Marinate the skewers in the lime dressing for 1 hr (makes 20).
  • Little caviar jackets Put 20 small new potatoes on a baking tray. Drizzle with olive oil and season. Roast for 25 mins at 200C/180C fan/gas 6, then cool to room temp. Cut a small cross in the top of each one, push open a little and top with 1 tsp crème fraîche and some caviar (makes 20).
  • Sticky squash with sesame seeds Peel a large butternut squash. Cut into 20 x 3cm squares, then mix with 1 tbsp each of soy sauce, sesame oil and honey. Arrange the chunks on a large baking tray lined with baking parchment. Sprinkle with 2 tbsp sesame seeds, season and bake for 20-25 mins at 200C/180C fan/ gas 6 until crisp. Put a cocktail stick in each chunk to serve (makes 20).
  • Chorizo & chilli mini pizzas Use a pastry cutter to cut out 20 x 6cm circles from a pack of soft Middle Eastern flatbread or wraps. Grate 75g/2.5oz Manchego and chop 75g/2.5oz chorizo and ½ a red chilli. Scatter over the bread bases, then bake at 200C/180C fan/gas 6 for 10 mins (makes 20).
  • Goat's cheese on toast Roughly mash 250g/9oz goat's cheese with 2 finely chopped shallots. Toast 5-6 slices of sourdough and stamp out 20 small circles. Spread each circle with some cheese, top with a small blob of chilli jam (you'll need about 3 tbsp) and scatter with chives, snipped from a small packet (makes 20).

2 tablespoons sweet hot mustard
9 ounces fully cooked sausage links
4 teaspoons finely grated Parmesan cheese

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Spread each biscuit into a 2x4-inch oval using your hands. Brush hot mustard onto each biscuit. Place a sausage link across the short edge of each biscuit oval and roll up lengthwise. 8 thick sausages
1 tablespoon chopped fresh parsley
1 teaspoon dried herbs
1 tablespoon red pesto sauce
6 tablespoons tomato ketchup
1 tablespoon malt vinegar
2 tablespoons brown sugar
1 tablespoon red pesto sauce

Steps:

  • Cut the sausage down their length and remove the skins. Place the meat in a bowl. Mix with the parsley, dried herds and pesto.
  • Divide the mixture into 12 balls and then press into patties.
  • Cook the patties on a griddle for 15 minutes, turning once.
  • Meanwhile, place the dip ingredients into a saucepan and stir well. Bring to the boil and simmer for 5 minutes. Remove from the heat and spoon into a serving bowl.

1/2 pound smoked sausage, cut into 1/2-inch slices
1 can (20 ounces) pineapple chunks
4 teaspoons cornstarch
1/2 teaspoon salt
1/2 cup maple syrup
1/3 cup water
1/3 cup white vinegar
1 large green pepper, cut into 3/4-inch pieces
1/2 cup maraschino cherries

Steps:

  • In a large skillet, saute the sausage for 3-5 minutes or until lightly browned. Drain on paper towels; set aside. Drain pineapple, reserving juice; set the pineapple aside., In a large skillet, combine the cornstarch, salt and reserved pineapple juice until smooth. Stir in the syrup, water and vinegar. Bring to a boil; cook and stir for 2-3 minutes or until thickened. Add the sausage, green pepper, cherries and pineapple. Simmer, uncovered, for 5 minutes or until peppers are crisp-tender. Transfer to a shallow serving dish. Serve with toothpicks.

Quick to put together and always a crowd pleaser. Just finished in a crock pot if you want or even on the stove. They are sweet and savory and the apples and onion get soft and almost butter like and make a great topping for the toasted baguettes.

12 sausage links, cut in 3/4-inch rounds (24 oz, Aidelle Chicken and Apple sausage - 3 pkgs, you can also use a mild Italian or herb sausage)
1 baguette (cut in thin slices and toasted)
3 apples, peeled and diced (granny smith)
1 large onion, diced
1/3 cup apple cider (not juice)
1/3 cup beer (dark beer if you have it, you can also use white wine, chicken broth)
1 tablespoon brown sugar
1 tablespoon honey
2 springs fresh thyme (no need to chop, just the whole sprig)
1 bay leaf
3 tablespoons butter (2 tablespoons to saute, 1 to add to the sauce)
salt
pepper
1/2 cup Dijon mustard
1/2 cup honey
2 tablespoons flour
2 tablespoons butter
1 cup milk
1 cup gruyere or 1 cup swiss cheese

Steps:

  • Sausage -- In a medium saute pan, add the butter and bring to medium high heat. Add the sausage and cook 1-2 minutes. You want them a little brown but not too much. Then remove and transfer to the crock pot or a large pot on the stove.
  • NOTE: As I said, there are turkey, chicken, pork sausages out there with a variety of flavors. I try to stick with a herb chicken or turkey sausage if possible, but use what you can find. www.aidelle.com has so many great flavors, I just asked my store manager and they ordered it even though they didn't have it. So just check and ask. Many meat markets will carry many flavors as well. Aidelle's is usually just found by the hot dogs and the sausages in most major grocery stores.
  • Apple and Onions -- In the same pan to the sausage drippings, add the apples and onions and cook 3-4 minutes. Then transfer to the crock pot as well or a large pot on the stove.
  • Sauce -- Add the apple cider, beer (wine or broth if you don't want the beer; however the beer really adds tons of flavor), bay leaf, thyme, brown sugar, butter and honey. At this point, I just add a pinch of both salt and pepper. You can also add more after they are done cooking. Stove is approximately 1 hour on medium low. For the crock pot - low for about 3 hours. Three hours works for me, but just test yours after 2 hours to make sure the apples and onions are good and soft.
  • Baguettes -- As the sausage simmers, toast up your baguettes, I like to thin slice my baguette (or you can use your favorite bread) and toast in a 400 degree oven for 5 minutes until golden brown. Nothing more.
  • Dips -- Now my friend enjoys a honey mustard. Just mix dijon mustard and honey and set in a small bowl in the refrigerator. My favorite is my swiss cheese sauce. which takes just a minute to make.
  • A standard bechemel/cheese sauce. In a small sauce pan, melt the butter on med heat and then stir in the flour and mix for about 1 minute until well combined. Add in the milk and stir until thickened. Then add in the cheese and mix on medium low until creamy.
  • Serving -- Before serving, I check for seasoning - salt and pepper, add if needed. When ready to serve, you will have four bowls which I all put on one platter and then plate the baguettes all around the side. Transfer the apples and onions and juice to one bowl. I try to spoon most of the sausage into one bowl but don't worry if some of the onions and apples get mixed in, it is all part of the same dish (and don't forget to remove the bay leaf and stems from the thyme); and the two dips, the honey mustard and warm cheese dip in the other two bowls.
  • I like to take a few baguettes, top with the apple & onion mix, a couple of sausage bites and a spoon of the cheese and set to the side so people can see how they go together. I have found some like just the sausage, some like just the apples and onions on the bread and some all separate, but at least I showed how it goes together. It is just really a unique appetizer which can all be made ahead which is the best part.
