3 cups yellow tomatoes
1/4 cup lemon juice
4 1/2 cups sugar
1 package Sure-Jell fruit pectin
1 1/2 teaspoon grated lemon rind
1/2 teaspoon cinnamon
1/2 teaspoon ginger

Steps:

  • Scald, peel and chop tomatoes. Cover and simmer 10 minutes, stirring occasionally. Measure 3 cups into a 6 or 8 quart saucepot. Add lemon juice, grated lemon rind, cinnamon and ginger to tomatoes. Measure sugar and set aside. Stir fruit pectin into prepared tomatoes. (Saucepot must be no more than 1/3 full to allow for a full rolling boil.) Bring to a full boil over high heat, stirring constantly. At once stir in sugar. Stir and bring to a full rolling boil (a boil that cannot be stirred down). Then boil hard 1 minute, stirring constantly. Remove from heat. Skim off foam. Immediately ladle into hot sterilized jars, leaving 1/4 inch space at top. With a damp cloth, wipe jar rims and threads clean. Immediately cover jars with hot lids. Screw bands on firmly. Let stand to cool. Check seals. Store jam in a cool dry place.

8 cups yellow pear tomatoes
1 lemon
3 cups sugar
1 teaspoon salt
4 tablespoons gingerroot or 4 tablespoons thinly sliced candied ginger

Steps:

  • Wash& dry tomatoes.
  • Cut a thin slice from blossom end and press out seeds and discard.
  • Combine tomatoes, sugar& salt, simmer until sugar is dissolved.
  • Boil for about 40 minutes.
  • Add thinly sliced lemon and minced or sliced ginger.
  • Boil about 10 minutes longer.
  • Pour into hot jars and seal at once.

5 yellow beefsteak tomatoes, washed, core removed, a small "x" cut on the bottom of each
3/4 cup extra-virgin olive oil
10 cloves garlic, peeled and sliced thin
3 large shallots, peeled and sliced
1/4 teaspoon red pepper flakes
Kosher salt
Freshly ground white pepper
1 tablespoon dried oregano
1 teaspoon granulated sugar
1 pound dry pasta, such as penne or cavatappi
1/3 cup rice wine vinegar
1/2 cup water
25 to 30 basil leaves, washed and dried
Grated Parmesan, to taste

Steps:

  • Bring a medium pot of water to a boil and salt the water generously. Prepare an ice bath for the tomatoes by filling a medium bowl with cold water and some ice cubes. Use a slotted spoon to plunge the tomatoes into the boiling water for about 1 to 2 minutes. The skin should show evidence of peeling away from the flesh of the tomatoes. Remove them from the water and plunge them into the ice bath. Allow the tomatoes to sit in the cool water so they stop cooking.
  • In a medium skillet, heat a tablespoon of the olive oil and add the garlic, shallots, and red pepper flakes. Season with salt and pepper. Add the oregano and sugar. Stir to blend. Allow to cook, over low heat, until the shallots and garlic become tender and translucent.
  • Meanwhile, remove the tomatoes from the ice bath, peel off and discard the skin from each. Place them on a flat surface, quarter them and scoop out the seeds and "jelly" from each piece. Gather all the seeds in a strainer and push through the liquid that naturally surrounds the seeds. Discard the seeds. Reserve the liquid and tomato flesh.
  • Add the tomato and liquid to the shallot mixture and stir in about 1 tablespoon of salt and 1 teaspoon ground pepper. Turn the heat down to medium and cook until the tomato flesh starts to lose shape, 8 to 10 minutes. Add the water and simmer for 15 to 20 minutes. If there are still some hard pieces, add a little more water and cook for a few more minutes. Taste for seasoning.
  • In a large pot, bring 6 quarts of water to a rolling boil. Add a generous amount of salt. The pasta water should taste like sea water. Add the pasta to the pot and stir so none of the pieces stick to the bottom as they cook. Cook the pasta until "al dente", chewy but not hard or raw tasting, 8 to 10 minutes, and drain the pasta in a colander until the sauce is finished. Reserve a little of the pasta cooking liquid in case you need it later.
  • Put the tomato sauce in the blender and puree until smooth. Slowly add the vinegar through the top of the blender as the sauce is blending. Next, pour the remaining olive oil through the top in a slow, steady stream. Blend in another cup of water then remove the sauce from the blender and taste for seasoning.
  • Pour most of the sauce into a large skillet and add the pasta. Toss to blend with a wooden spoon. If the sauce is too thick, add some of the pasta liquid to thin it out. Taste for seasoning. Add the basil leaves and sprinkle with cheese, if desired.

2 1/2 pounds yellow tomatoes
8 ounces sugar
6 ounces honey
2 medium lemons
2 ounces fresh ginger

Steps:

  • Gather the ingredients.
  • Bring a pot of water to a boil. Cut off the stem ends of the tomatoes and place them in a heatproof pot or bowl. Pour the boiling water over the tomatoes.
  • When cool enough to handle, drain, and slip the skins off the tomatoes. Squish out most of the seedy gel. Discard skins and seeds.
  • Coarsely chop the skinned, seeded tomatoes. Stir together with the sugar and honey. Let sit in the refrigerator for at least two hours or overnight.
  • Sterilize 3 half-pint jars by boiling them in water for 15 minutes. Turn off the heat and leave the jars in the hot water until you are ready to fill them.
  • While the jars are sterilizing, seed and very finely chop the lemons, discarding the seeds but keeping the peels along with the pulp. The citrus peels provide the pectin in this recipe that gives the preserves a nice gel.
  • Peel and finely chop or grate the ginger. Add the ginger and lemons to the other ingredients in a large pot.
  • Bring to a boil, stirring, until the setting point is reached.
  • Ladle into sterilized half-pint jars leaving 1/2-inch headspace. Process in boiling water bath for 5 minutes.

  • Score an X in the bottom of 3 pounds of tomatoes and cook in boiling water for about 30 seconds. Drain, transfer to a bowl of ice water, then peel and dice. Combine the tomatoes with 1 cup granulated sugar, 1/2 cup light brown sugar and 2 tablespoons cider vinegar in a large pot over medium heat. Add 1/2 teaspoon kosher salt, 1/4 teaspoon each ground coriander and cumin and the juice of 1 lemon. Cook, stirring, until thick, about 1 hour; let cool. Serve with cheese and crackers.

1 tablespoon ground cinnamon
2 teaspoons ground cloves
1 teaspoon ground ginger
2 medium lemons, chopped
1 cup water
2 pounds yellow pear tomatoes, chopped

Steps:

  • In a Dutch oven, combine sugar, cinnamon, cloves, ginger, lemons and water. Cook over medium heat for 15 minutes, stirring occasionally. Add the tomatoes. Reduce heat to low; continue cooking for 45-60 minutes or until tomatoes become transparent, stirring frequently., Ladle hot mixture into five hot half-pint jars, leaving 1/4-in. headspace. Remove air bubbles and adjust headspace, if necessary, by adding hot mixture. Wipe rims. Center lids on jars; screw on bands until fingertip tight., Place the jars into canner with simmering water, ensuring that they are completely covered with water. Bring to a boil; process 20 minutes. Remove jars and cool.

1 1/2 quarts green tomatoes or 1 1/2 quarts tomatoes (about 2 pounds)
1 tablespoon mixed pickling spices
1/2 inch gingerroot
4 cups sugar
1 cup thinly sliced lemon (about 2 medium)
3/4 cup water

Steps:

  • Wash and drain tomatoes.
  • Do not core tomatoes.
  • Tie spices and gingerroot in a spice bag.
  • Combine spice bag, sugar, lemon and water in a large saucepot.
  • Simmer 15 minutes.
  • Add tomatoes; cook gently until tomatoes become transparent, stirring frequently to prevent sticking.
  • Remove from heat.
  • Cover and let stand 12 to 18 hours in a cool place.
  • Remove spice bag.
  • Remove tomatoes and lemon from syrup.
  • Boil syrup 2 to 3 minutes or longer to thicken.
  • Return tomatoes and lemon to syrup; boil 1 minute.
  • Remove from heat.
  • Skim foam if necessary.
  • Ladle hot preserves into hot jars, leaving 1/4 inch headspace.
  • Adjust two-piece caps.
  • Process 20 minutes in a boiling-water canner.
  • Yield: about 6 half-pints.
