OLD-FASHIONED CHEESY SCALLOPED POTATO & HAMBURGER CASSEROLE ~ THE SECRET RECIPE CLUB
Steps:
- Preheat oven to 350º F. *If using a 9 x 13 baking dish, grease with butter or cooking spray.
- Heat the 2 Tbl. butter in cast iron skillet. Add onions and cook for 1 to 2 minutes. Add beef and cook until no longer pink. Move skillet from heat, and with a slotted spoon remove beef and onions from skillet and place into a medium sized bowl. Pour out grease from skillet. Wipe out skillet with paper towel and butter insides and bottom if using to bake in.
- In large bowl, whisk flour, salt, garlic powder and black pepper with milk and cream until completely combined.
- Using a mandoline (or kitchen knife), slice potatoes into 1/8-inch slices. Layer 1/3 of the potato slices into the cast iron skillet (or baking dish). Sprinkle on 1/3 of the beef mixture, then 1/3 of the cheeses, then pour on 1/3 of the cream and milk mixture.
- Repeat this twice more, ending with a sprinkling of cheese and a pouring on of the rest of the cream mixture. Cover skillet (or baking dish) with lid or foil and bake for 1 hour. Remove lid or foil, and bake for an additional 35 - 45 minutes or until potatoes are tender. (*Test with a knife. If a knife inserted near center goes through like butter with no resistance, potatoes are tender.) *I added an additional 1/2 cup cheese on top during last 15 minutes.)
- Let rest for at least 15 minutes before serving.
- *Garnish with a little snipped green onion or chopped parsley if you'd like.

NANA'S HAMBURGER POTATO HOT DISH
One dish meal that is really good. I made this for a meal while visiting my daughter & her family in Germany. Everyone loved it, even my 2 & 4 year old Granddaughters!

Steps:
- Brown hamburger, chopped onion and pepper together in a skillet.
- Wash and slice the potatoes with the skins left on.
- Stir together all the soups & corn in a large casserole pan.
- Add browned hamburger and potatoes to the soup mixture and stir well.
- Bake at 375 degree oven for approximately 2 to 2 1/2 hours.
- Stir a couple times during baking.
- I usually have it covered the 1st hour, then leave it uncovered the remaining time.
- This is one of those recipes that I never had a recipe to follow, I just knew the ingredients from my mom making it when I was a child. The hamburger amount could vary from 1 to 2 lbs & the potatoes could be anywhere from 4-8 depending how much you want to make. Also could add an extra can of cream corn if making a larger amount of hamburger & potatoes.
- I have also made it in my crock pot; starting out the 1st hour in the oven, then finishing it off in the crockpot on low for 3-4 hours because I brought it to work for a potluck.

KITTENCAL'S SCALLOPED POTATO AND GROUND BEEF CASSEROLE
Sliced potatoes in a delicious creamy sauce on the bottom then topped with a ground beef mixture --- instead of layering the potatoes you can just mix them with the sauce in a large bowl transfer to the baking dish then top with the ground beef mixture either way is fine but the potatoes will cook a little faster if mixed with the sauce --- feel free to throw in some cooked chopped green beans, mushrooms, corn niblets to the ground beef mixture or whatever you wish, I also like sprinkle some grated cheddar cheese over the potato mixture before topping with the ground beef and then again after the casserole has been cooked, this casserole is very versatile and you don't have to worry about the exact amounts --- to save time you may cook the ground beef mixture a day ahead and refrigerate, all ingredients may be reduced to half if desired to yield 4-6 and baked in a smaller baking dish--- NOTE some of the reviewers are stating that the potatoes are taking a long time to cook so you may want to pop them in the microwave first just to soften slightly,

Steps:
- In a skillet cook the ground beef with onion, bell pepper and chili flakes (if using) until no longer pink; drain fat over a colander.
- Return to pan and add in garlic, season salt and black pepper; cook stirring with a wooden spoon until the meat is lightly browned (I usually add in about 1-2 tablespoons bacon fat that I keep frozen in my freezer to the meat while browning for added flavor and it also helps to brown the meat) set aside.
- For the sauce; in a medium bowl mix together the undiluted soup with onion, milk, sour cream, Parmesan cheese, garlic powder, seasoned salt and black pepper to taste; mix well to combine.
- In a greased 13 x 9-inch baking dish or a large oval casserole dish, alternately layer the sliced potatoes on bottom of the baking dish, then soup mixture (I like to sprinkle grated cheddar cheese on top of the soup mixture) then the ground beef mixture on top.
- Since this is a large casserole I strongly suggest to place the baking dish on a jelly-roll sheet in case of any spills.
- Bake covered with foil for about 1 hour at 350 degrees F.
- Uncover and continue baking for another 20-30 minutes or until the potatoes are tender (baking time will vary depending on the thickness of your sliced potatoes).
- Remove from oven then sprinkle with grated cheddar cheese; return to oven for 4-5 minutes or until the cheese has melted.
