- In a small saucepan, melt butter. Stir in the flour, salt, pepper and Cajun seasoning until smooth. Gradually add milk, sherry and Worcestershire sauce. Bring to a boil; cook and stir for 1 minute or until thickened. Reduce heat; stir in 1/4 cup cheese. Remove from the heat; set aside., Place half of the potato slices in a 1-qt. baking dish coated with cooking spray. Layer with the ham, onion and half of the white sauce. Repeat layers. , Cover and bake at 350° for 50-60 minutes or until potatoes are tender. Uncover; sprinkle with remaining cheese. Bake 5-10 minutes longer or until cheese is melted.

FREEZER MEAL RECIPES: HAM AND SCALLOPED POTATOES
Steps:
- Place 2 cups broccoli in gallon sized bag
- Add soup and 1-1/4 lbs cubed ham to each bag (see note)
- Add 1 1/3 cups water.
- Lastly, immediately after slicing, place potatoes on top
- Seal bag, lay flat, and place in freezer immediately
- Defrost just enough to get out of freezer bag and place entire contents in slow cooker and cook on low for 6-8 hours (depending on how tender you prefer your potatoes).

- Preheat the oven to 375 degrees F.
- Add the butter and onions to a large skillet over medium heat and saute until starting to soften, 3 to 4 minutes. Sprinkle the flour over the onions and whisk them together. Continue cooking the onion/flour mixture until golden brown, about 2 minutes. Stir in the half-and-half and milk and whisk around, allowing the mixture to thicken; this will take 3 to 4 minutes. Add some pepper, stir the sauce, reduce the heat and keep warm.
- Slice the potatoes really thin using a mandolin or a really sharp knife, the thinner the better. Generously butter a 2-quart baking dish, then add half the sliced potatoes and half the diced ham. Sprinkle on half the cheese then pour on half the sauce from the skillet. Repeat with the rest of the ingredients, ending with a layer of cheese and sauce. Sprinkle extra pepper on top.
- Cover the dish with foil and bake it for 40 minutes, then remove the foil and bake until the cheese is golden brown and the sauce is bubbling, an additional 20 to 30 minutes. Sprinkle with chopped parsley if desired and serve it up.

- Preheat oven to 350 degrees. Butter a baking dish.
- In a saucepan, melt 2 tablespoons butter over medium high heat. Stir in flour and cook for 1 minute. Remove saucepan from heat and whisk in milk. Return pan to heat and bring to a simmer while stirring. When sauce has thickened remove from heat, season with salt and pepper and set aside.
- In a skillet, cook onions in melted butter until golden brown. Season with salt and pepper.
- Spread 1/3 of the white sauce in bottom of baking dish and top with half of the potatoes. Spread out half of the onions, ham, cheese and another third of the sauce. Season with salt and pepper. Continue layering ingredients, ending with the remaining cheese on top. Bake for 45 minutes or until golden and bubbly.
KATHY'S SCALLOPED POTATOES WITH HAM
Here is another use for leftover ham and the other ingredients I always have on hand. I like this recipe because it has a hint of thyme in it. There are also directions here in the description if you wish to freeze it. If you want to bake it at 325 degrees instead of at 375 degrees notice my directions (you know how sometimes you want a certain oven temperature to orchestrate your menu-lol). If you want to freeze this start the recipe differently by cutting the potatoes in half and then parboiling them for 10 minutes. Drain, cover with cold water and allow potatoes to cool. Slice potatoes and assemble recipe as directed. Don't bake yet if freezing. Cover well with plastic wrap and foil. Label and freeze. - Gradually add all of the milk (3C+2T); bring to a boil.
- Cook and stir for 2 minutes; set pan aside.
- Combine in a large bowl the potatoes, ham, and onion; place half in a greased 2 1/2 quart baking dish.
