SEARED SCALLOPS WITH TRUFFLED POTATO CELERY ROOT PUREE
Steps:
- Melt the unsalted butter in a medium (10-inch) saute pan or Dutch oven over medium-low heat. Add the leeks and saute for 8 to 10 minutes, stirring occasionally, until tender but not browned. Add the potatoes, celery root, heavy cream, 2 teaspoons salt, and 1 teaspoon pepper and bring to a boil. Lower the heat to very low, cover the pan, and simmer gently for 25 to 30 minutes, stirring occasionally, until the vegetables are tender. Be careful?don't let the vegetables scorch on the bottom of the pan!
- In two batches, pour the leek and potato mixture into the bowl of a food processor fitted with the steel blade and pulse until coarsely pureed. Return the puree to the saute pan, stir in the truffle butter, taste for seasonings, and keep warm over very low heat. If the puree gets too thick, add a little more heavy cream.
- If it hasn't already been removed, peel off the tough strip of muscle on the side of each scallop. Pat the scallops dry with paper towels and season them generously on both sides with salt and pepper. Heat a large (12-inch) saute pan over medium-high heat. Add the grapeseed oil and, when the oil is almost smoking hot, add the scallops in a single layer. Cook undisturbed for about 3 minutes, until golden brown on the bottoms. Don't crowd the scallops or they'll steam rather than sear. Using a small metal spatula, turn the scallops and cook for 2 to 3 minutes more, until just cooked through.
- Spoon the warm puree onto 3 dinner plates. Place the scallops on the puree, drizzle with the basil oil, and sprinkle with the chives. Serve warm.

- Using a vegetable peeler or metal cheese slicer, cut potatoes into very thin slices. Place in a large bowl; add ice water and salt. - Place oil in a deep stainless steel pot and heat to 350 degrees F. Place chips in the hot oil and fry until crisp, about 3 minutes. Remove and place on paper towels to absorb excess oil. Sprinkle with salt while still warm.
- In a stainless steel bowl mix all ingredients together until well incorporated and season with salt and pepper. Cover and place in refrigerator for 2 hours to marinate.
- To serve, lay plantain chips individually on a platter and top with 1 scallop. Garnish each 1 with a cilantro leaf.

- Melt butter over medium heat and sauté; the shallots, garlic and pancetta until soft, about 3 minutes. Add the peas and stock and boil till liquid has evaporated. Purée in a food processor and season with salt and pepper.
- Peel potatoes and place in a bowl of water. In a deep, heavy kettle, heat 1 inch of oil until very hot. Wipe potatoes dry and slice 1/8-inch thick. (Do this at the last minute so the slices don't discolor.) Working in small batches, dry the slices thoroughly and fry until each is very crisp and golden brown. Drain and sprinkle with salt.
- Season the scallops with salt and pepper and toss in olive oil. Place a ridged grill pan over high heat and let it get extremely hot. A few at a time, sear the scallops for 5 to 10 seconds per side.
- Place a dollop of warm pea purée on each of 48 of your nicest, crispest chips. Put a scallop on top. Sprinkle each with pepper and mint and serve immediately.

CHEESY POTATO SCALLOP
Potato scallop is my favourite comfort food, and my boyfriends, too, and we had been wanting to try and make a homemade one for a long time, and I came across this on the Kraft.ca website (http://www.kraftcanada.com/en/Recipes/RecipeTemplate?recipe_id=84716), and it turned out fantastic! It's become a common dish in our home. We skip on the onions because my boyfriend doesn't like them and I've made this with cheddar cheese, and also with mozzarella cheese, and both turn out fabulously! Enjoy :)

- Preheat oven to 375°F
- Place veg in large saucepan and add just enough water to cover. (Like just a skim) Bring to a boil on med-high heat, and cook for about 8-10 minutes.
- Melt butter in saucepan on med heat. Stir in flour, salt, black pepper and cayenne pepper. Cook and stir for about one minute. Add milk and blend well. Bring to a boil on med heat and cook until thick - stir constantly. Add cheese and reduce to low heat, cook until cheese is melted - stir constantly.
- Place half of the veg mix in greased casserole dish. Cover with half of the cheese sauce - repeat. Cover.
- Bake for 30 minutes covered, then for an additional 15-30minutes.

- Preheat the oven to 375°. Line a large heavy baking sheet with parchment paper and lightly brush the parchment with some of the butter. Using a mandoline, cut the potato crosswise into paper-thin slices. Spread about 24 of the slices (to get 18 perfect chips for assembling the towers) in a single layer on the parchment. Brush the potatoes with the remaining butter and season with salt and pepper.
- Cover the potatoes with another piece of parchment and top with a second baking sheet. Bake for 25 to 30 minutes, or until evenly golden; rotate the baking sheet once during baking so the potatoes brown evenly. Transfer the chips to a tray lined with paper towels. Reduce the oven temperature 300°.
- In a small bowl, stir the chives into the créme fraîche and set aside. Spread the scallop slices on a baking sheet and bake for 1 to 2 minutes, or just until they lose their transparency; they should still be rare.
- To assemble the towers, place a potato chip in the center of each plate and top with 3/4 teaspoon of caviar, 1 scallop slice and a dab of the chive créme fraîche. repeat the layering once and top with a potato chip. Garnish with a large pinch of frisèe and serve at once.
