Steps:

  • Roll out individual crescent rolls and cut them in half. Using rolling pin, roll them flat. Using a pizza cutter, slice flattened crescents into thin strips, but keep them together so that the flat strips are still touching. Lay hot dog on roll at 45 degrees and roll up the crescent around the hot dog with the strips at an angle. Place 2 raisins on top to make the eyes. Preheat oven to 375°F. Bake for about 20 minutes or until golden brown. Serve immediately, hot dog will be fully cooked.

1/4 cup finely chopped fresh basil leaves
Salt and pepper

Steps:

  • Combine beans, yogurt, Italian seasoning, and garlic in a blender and puree until smooth.
  • Add remaining ingredients and pulse until combined. Adjust seasoning with salt and pepper. Refrigerate 1 to 2 hours to allow flavors to meld.
  • Remove from refrigerator 30 minutes before serving. Serve at room temperature with toasted baguette or water crackers.

2 tablespoons olive oil, plus more for drizzling
4 ounces pancetta, diced
3 sprigs fresh rosemary, leaves removed
2 cloves garlic, peeled and thickly sliced
Two 15-ounce cans cannellini beans, drained and rinsed
Squeeze of lemon juice
Kosher salt and freshly ground black pepper
Baguette, sliced

Steps:

  • Heat a fireplace to medium heat. Adjust the grill racks over the flame and heat a heavy Dutch oven over the rack. Alternatively, heat a medium saucepan over medium heat.
  • Once hot, add the oil to the saucepan. Add the pancetta and render some of its fat. Add the rosemary and garlic, and saute until fragrant. Stir in the beans, lemon juice and some salt and pepper. Mash the beans with the back of a wooden spoon. Don't mash them all smooth, you want some texture.
  • Toast the baguette slices. Serve the beans on top of the toasted baguette. Drizzle with olive oil if desired.

This spread or dip is a bit different than others I've tried. The flavor reminds me of herbed olive oil that you dip bread into. Fresh herbs are a must, but any white bean can be used in place of the cannellini beans. I used purple basil, which gave the spread a nice color. It is good any way you'd normally use hummus or most any dip, but I think it is especially good on crostini or crackers, or as a sandwich spread. This is adapted from a recipe from Kraft.

1 (15 ounce) can white kidney beans, rinsed and drained (cannellini)
3 cloves garlic
1 1/2 tablespoons lime juice
1 tablespoon olive oil
1 tablespoon basil, fresh,snipped into medium size pieces
1 tablespoon thyme, fresh
1/4 teaspoon salt, to taste
1/4 teaspoon fresh ground black pepper, to taste

Steps:

  • Place beans, garlic, lime juice, and olive oil in food processor or mini-chopper; process until smooth.
  • Add the rest of the ingredients and pulse until well mixed and the herbs are chopped as coarsely or finely as you like (I like them almost liquified).
  • Refrigerate for at least a few hours so the flavors blend (overnight is even better).

Steps:

  • Place olive oil, garlic and rosemary in a 10-inch skillet. Heat pan until ingredients start to sizzle. Add beans and their liquid to the pan. As beans cook, mash them with a wooden spoon or potato masher. Cook until mixture is a loose spread consistency (it will thicken as it cools). Transfer to a serving bowl or storage container.

2 cups great northern soaked overnight in 6 c. of water to cover and 1 tsp. baking soda or 2 cups cannellini beans, soaked overnight in 6 c. of water to cover and 1 tsp. baking soda
1 bay leaf
1 teaspoon pesto sauce
2 teaspoons frehly squeezed lemon juice
1 garlic clove, coarsely chopped
1 teaspoon ground cumin
1 teaspoon salt
2 tablespoons freshly grated parmesan cheese
3 tablespoons olive oil, divided
1 whole grain baguette

Steps:

  • Do not drain the soaking water from the beans. Bring the beans to a boil and cook for 45 minutes, or until they are easily pierced with a fork.
  • Preheat the broiler.
  • Drain the cooked beans and place in the work bowl of a food processor or in a blender. Add the pesto through the Parmesan, plus 1 tbsp,. of the oil and process or blend until smooth and put into a serving bowl.
  • To serve, cut the baguette into 1-inch slices and brush the remaining 2 tablespoons oil over them, then broil on the lower rack until lightly browned. Place the bowl of bean spread in the center of a platter and put the toasts around it.

1 (14 ounce) can fire-roasted diced tomatoes
1 medium onion, chopped
1 tablespoon minced garlic
1 bunch Swiss chard including stems, roughly chopped
½ cup chicken broth
1 (15.5 ounce) can great northern beans, rinsed and drained
1 (15.5 ounce) can cannellini beans, rinsed and drained
2 tablespoons grated Parmesan cheese, or to taste
salt and ground black pepper to taste

Steps:

  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels and chop when cool enough to handle.
  • Add tomatoes, onion, and garlic to the bacon fat. Cook over medium-high until the onion has softened and turned translucent, about 5 minutes.
  • Add Swiss chard and chicken stock, cover, and steam until chard is tender, about 10 minutes.
  • Add beans and chopped bacon. Cook until liquid has evaporated, about 3 minutes. Sprinkle with Parmesan and season with salt and pepper.

4 to 6 garlic cloves
1/4 cup extra-virgin olive oil
1 teaspoon ground cumin
1/2 teaspoon ground coriander seeds
1/4 teaspoon salt, or to taste
a pinch cayenne
Garnish: minced fresh parsley leaves and/or paprika
Accompaniment: crackers or thin slices of baguette

Steps:

  • Rinse and drain beans. To a food processor with motor running add desired amount of garlic and blend until minced. Add beans and remaining ingredients and blend until smooth. Transfer spread to a serving bowl. Spread may be made 1 day ahead and chilled, covered. Bring spread to room temperature before serving.
  • Just before serving, garnish spread with parsley and/or paprika. Serve spread with crackers or baguette slices.
