1-1/2 pounds red potatoes (about 5 medium), halved and cut into 1/4-inch slices
1/3 cup water
1/2 teaspoon salt
1 pound beef top sirloin steak, cut into thin strips
1/2 cup chopped onion
3 tablespoons olive oil, divided
2 teaspoons garlic pepper blend
1-1/2 teaspoons minced fresh rosemary

Steps:

  • Place potatoes, water and salt in a microwave-safe dish; microwave, covered, on high until potatoes are tender, 7-9 minutes. Drain. , Meanwhile, toss beef with onion, 2 tablespoons oil and pepper blend. Place a large skillet over medium-high heat. Add half of the beef mixture; cook and stir until beef is browned, 1-2 minutes. Remove from pan; repeat with remaining beef mixture., In a clean skillet, heat remaining oil over medium-high heat. Add potatoes; cook potatoes until lightly browned, 4-5 minutes, turning occasionally. Stir in beef mixture; heat through. Sprinkle with rosemary.

30g lard or butter
1 onion , finely chopped
½ swede , peeled and cut into 2cm cubes (400g prepped weight)
2 large carrots , peeled and cut into 2cm cubes
1 celery stick, finely chopped
500g leftover roast meat (lamb or beef), or corned beef, cubed
700g potatoes , peeled and cut in to 3cm cubes
500ml beef or lamb stock
oatcakes or crusty bread, to serve

Steps:

  • Heat the lard or butter in a medium sized saucepan. Add the onion and fry for 10 mins over a low-medium heat until softened. Add the swede, carrot and celery and fry for 5 mins.
  • Stir in the meat, if using leftover roast lamb or beef, then the potatoes. Pour over the stock and season generously, bring to the boil, then turn the heat down to a simmer. Cook covered for 1 hr 30 mins or until the vegetables have softened and the potatoes have broken down completely. If you're using corned beef, add this to the pan 20 mins before the end of cooking. Serve with oatcakes, or crusty bread

1 pound potatoes, peeled and cut into chunks
2 cups shredded cabbage
1 carrot, grated
1 onion, minced
1 teaspoon prepared yellow mustard
½ cup shredded sharp Cheddar cheese
salt and pepper to taste

Steps:

  • Place the potatoes into a saucepan and fill with enough water to cover. Bring to a boil, then simmer over medium heat until tender enough to pierce with a fork, about 10 minutes. Drain and mash potatoes, then set aside.
  • Meanwhile, combine cabbage and carrot in another saucepan and add just enough water to barely cover the bottom of the pan. Cook over medium heat until tender, about 5 minutes. Drain off liquid and stir into the mashed potatoes along with the onion, mustard and Cheddar cheese. Season with salt and pepper.
  • Shape the mixture into 4 patties. Heat a greased grill pan over medium-high heat. Place the patties on the pan and grill until heated through and golden brown, about 5 minutes on each side. Serve right away.

2 tablespoons vegetable oil
1 medium onion chopped

1 cup beef broth
2 teaspoons worcestershire sauce
1 tablespoon tomato ketchup
1/4 teaspoon freshly ground black pepper
2 tablespoons unsalted butter softened
2 tablespoons all-purpose flour
1 cup milk
1 cup grated sharp white cheddar cheese ( about 4 ounces)
1 large egg yolk
1/4 teaspoon kosher salt
Pinch nutmeg grated

Steps:

  • TO MAKE THE BEEF AND POTATOES: Peel and slice the potatoes into a 3/8-inch-thick pieces. Put the slices into a pan with cold water to cover, add 1/2 teaspoon of the salt, bring the water to a boil, and simmer for 2 to 3 minutes or until the potatoes are tender. Drain and set the potatoes aside. Preheat the oven to 375 degrees F. In a skillet over medium-high heat, heat the oil and saut? the onion until lightly golden brown, about 10 to 12 minutes. Stir in the flour with a wooden spoon and cook for 1 minute. Add the ground beef and break it up with the spoon. 2 lbs aberdeen angus boneless sirloin steaks
1 large yellow onion, sliced
1/2 cup beef broth or 1/2 cup beef stock
2 teaspoons olive oil
1 teaspoon Worcestershire sauce
3 cloves garlic, crushed
1/4 cup blue cheese
1 teaspoon green peppercorn
1/4 cup flour
6 medium new potatoes
1/2 cup scottish ale (NOT BEER!)
parsley (to garnish)

Steps:

  • Boil potatoes until tender (keep skins on), and then drain.
  • Mash potatoes with blue cheese and set aside and keep warm.
  • Cut sirloin steak into four equal parts and then dust with flour.
  • Heat oil in a skillet and then add steak, onions and garlic.
  • Cook approximately two minutes per side.
  • Remove steak and add peppercorns, Worcestershire sauce, beef broth and ale.
  • Stir together, bring to a slow boil, and reduce liquid to two-thirds of the original amount.
  • Serve steak over potatoes and spoon the brown sauce to cover completely.
  • Garnish with parsley.

4 medium white potatoes or 4 large white potatoes, sliced
1 medium onion, sliced
1/2 teaspoon salt

1/8 teaspoon cayenne pepper
1 tablespoon dried parsley flakes
1 (14 ounce) can chicken broth or 1 (14 ounce) can beef broth
1/2 cup water

Steps:

  • Melt butter/margarine in a 12-inch cast-iron skillet on medium-high heat.
