Seared Salmon and Greens image

Nutritious salmon, whole grains, and a side of greens will fill you up with the good stuff.

1 cup brown rice
1/4 cup soy sauce
3 tablespoons fresh lime juice
1 teaspoon finely grated peeled fresh ginger
1/2 teaspoon agave nectar (optional)
4 teaspoons canola or peanut oil
4 salmon fillets (4 to 5 ounces each)
Coarse salt and ground pepper
2 garlic cloves, thinly sliced
1 head bok choy (1 1/2 pounds), cored and chopped

Steps:

  • Cook rice according to package instructions. Meanwhile, in a small bowl, combine soy sauce, lime juice, ginger, and agave, if using. In a large nonstick skillet, heat 2 teaspoons oil over medium-high. Season salmon with salt and pepper and cook until opaque throughout, 1 to 3 minutes per side; transfer to a plate. Wipe skillet clean with a paper towel.
  • In same skillet, heat 2 teaspoons oil over medium. Add garlic and bok choy; season with salt and pepper. Cook, tossing, until bok choy is bright green, about 3 minutes. Serve salmon and bok choy with rice and soy-lime sauce.

¼ cup bacon drippings
4 bunches collard greens, tough stems removed
salt to taste
3 cups water

Steps:

  • Heat bacon drippings in a cast-iron skillet over medium heat. Add the greens. Stir-fry, I suppose, since you are stirring and frying, for 1 to 4 minutes (depends on how tough the greens are) or until greens are limp, tender, and have greatly reduced in size. Pork fat is good because it helps cover the bitterness of greens while bringing out their great flavor.
  • At this point, you have a choice. Either serve them straight from the pan with a sprinkling of salt, or add 3 to 4 cups of water and salt to taste, and boil the greens 1 hour for extra tender, probably-won't-even-have-to-chew greens. If you don't have teeth, clearly you see which way to go here.

1/2 red onion, sliced
1 teaspoon mustard seeds
1 1/2 to 2 pounds red or yellow Swiss chard, stems removed and tops coarsely chopped
1/4 cup red wine vinegar
Salt and pepper

Steps:

  • Heat a large skillet over high heat. Add extra-virgin olive oil and onion. Sear onion and mustard seeds, 2 minutes. Add greens and toss with tongs in oil. Sear greens 2 to 3 minutes. Add vinegar to the pan. Remove pan from heat and season greens with salt and pepper.

Coarse salt
1 pound cheese ravioli
3 tablespoons extra-virgin olive oil (EVOO) (3 times around the pan)
3 garlic cloves, chopped
2 shallots, thinly sliced
2 heads of Belgian endive, halved, trimmed, and sliced lengthwise
2 heads of radicchio, quartered, cored, and shredded
1 large bunch of arugula, trimmed and coarsely chopped
4 tablespoons finely chopped fresh sage leaves (from several sprigs)
3 tablespoons unsalted butter
Coarse black pepper

Steps:

  • Bring a large pot of water to a boil. Salt it and add the ravioli; cook according to the package directions.
  • Heat a large nonstick skillet over medium-high heat. Add the EVOO, garlic, shallots, and greens and cook, stirring frequently, for 2 to 3 minutes. Transfer to a platter, return the pan to the stove, and reduce the heat to medium low. Add the sage and the butter and cook until the butter begins to brown. Drain the ravioli and toss in the sage butter to coat. Season with salt and pepper, scatter the pasta over the greens, and serve.

1 lb green beans, trimmed
2 large garlic cloves, minced
red pepper flakes

Steps:

  • Heat wok or deep skillet. When hot, add oil and swirl to coat the pan.
  • Raise heat to high and wait about 30 seconds. Add the green beans and season with salt to taste. Cook 3 minutes, using tongs or shake to turn and move beans to cook them quickly and evenly. Continue to cook till desired doneness.
  • Season with garlic and red pepper flakes to taste and continue to cook for another minute.
  • Serve hot, warm or at room temperature.

2 tbsp rapeseed oil
3 shallots , diced
2 garlic cloves , crushed
zest and juice 2 lemons
300g dark greens , such as cavalo nero or kale, stalks removed then shredded
50g anchovies , chopped
9 large scallops , roe removed and halved horizontally
knob of butter

Steps:

  • Heat half the oil in a frying pan. Add the shallots, garlic and lemon zest, and fry gently until soft. Add the greens the anchovies, and cook for 5 mins until the leaves are wilted.
  • Meanwhile, heat the remaining oil in a non-stick pan, then add the scallops and fry for 1-2 mins on each side. Add the butter and lemon juice to the pan and swirl until the butter melts and you have a glossy sauce. Divide the cabbage and scallops between 6 plates and serve with the pan juices spooned over.

Steps:

  • Wash and chop ends off of green beans, boil for a good 30 minutes to make them tender.
  • Lightly cover a medium pan with olive oil.
  • When oil is ready, put beans in and sear them while putting the garlic salt and ground pepper on top.
  • Sear until desired taste and texture. (about 5 minutes).
