Seashell Salad image

Presented in a sand pail, this festive salad features a zesty dressing that's simple to stir together. An assortment of pasta shapes resembles seashells while red and yellow peppers add color and crunch. For an extra-special touch, you could cut the peppers with a small star-shaped cookie cutter.

3 cups uncooked medium shell, spiral and/or wagon wheel pasta
1/3 cup vinegar
1/4 cup olive oil
1 teaspoon garlic salt
1 teaspoon sugar
1 teaspoon Italian seasoning
1/4 teaspoon pepper
1 medium sweet red pepper
1 medium sweet yellow pepper
2 tablespoons chopped green onions

Steps:

  • Cook the pasta according to package directions until tender; drain and rinse in cold water. Place in a large bowl; set aside. In a jar with tight-fitting lid, combine vinegar, oil and seasonings; shake well. Add peppers, onions and dressing to pasta; toss to coat. Cover and refrigerate until serving.

This is the perfect picnic dish - no mayo!! Very easy to prepare and a nice change from the usual covered dish take along. I've been making this for 20 years (and I'm still young)!

1 (1 lb) box of medium sea shell macaroni or 1 (1 lb) box large sea shell macaroni
1 can tomato soup
1 medium chopped green bell pepper
1 medium chopped onion
1 (4 ounce) jar pimientos
3/4 cup sugar
3/4 cup cooking oil
3/4 cup cider vinegar
salt and pepper

Steps:

  • Mix all ingredients EXCEPT macaroni in a 3 quart glass covered dish.
  • Chill in refrigerator overnight to blend flavors.
  • Cook macaroni according to package directions and drain.
  • Add to liquid mixture stirring well and refrigerate at least 2-3 hours before serving.

1/2 pound medium-size shell shape pasta, cooked to al dente, cold shocked, well drained
2 scallions, chopped, both whites and greens
1/2 small red bell pepper, seeded and chopped into fine dice
1/3 cup tiny frozen green peas, a generous handful
1/4 to 1/3 cup mayonnaise
3 or 4 sprigs fresh tarragon, chopped to about 2 tablespoons
Coarse salt and pepper
Chopped fresh parsley, for garnish
Romaine or leaf lettuce, for lining plate under salad

Steps:

  • Pile salad ingredients in a mixing bowl as you prepare them. Combine salad ingredients, taste, and adjust seasonings. Serve salad on bed of lettuce leaves.

¼ cup cashews
3 boneless, chicken breast halves - cooked, skinned
3 ounces pineapple tidbits, juice reserved
2 small Gravenstein apples, peeled, cored and diced
¾ cup chopped celery
1 (3 ounce) can mandarin oranges, drained
1 cup mayonnaise
½ teaspoon almond extract

Steps:

  • Cook macaroni in a large pan of boiling water until al dente. Drain, and rinse. Set aside.
  • Place nuts in a dry skillet. Toast over medium heat, turning frequently, until nuts are fragrant and lightly browned.
  • In a large bowl, combine pasta, chicken, pineapple, apples, celery, mandarin oranges, and toasted nuts.
  • In a small bowl, mix together mayonnaise, reserved pineapple juice, and almond flavoring. Stir into pasta mixture, and mix well. Chill.

1 large bell pepper
2 stalk s celery
1 large tomato
12 oz Oscar Mayer cooked ham
3 Tbsp Kraft Real Mayonnaise
Salt & pepper

Steps:

  • Cook pasta according to directions on package.
  • While the pasta is cooking, chop onion, bell pepper, celery, tomato and ham.
  • When pasta is done, drain well in colander and rinse with cold water to cool. When pasta is cool, add veggies, ham and stir in mayonnaise. Salt and pepper to taste.

2 medium tomatoes, seeded and chopped
1/2 medium green pepper, diced
1/4 cup chopped cucumber
1 green onion, sliced
1/4 cup sugar
1/4 cup vegetable oil
2 tablespoons plus 1-1/2 teaspoons ketchup
2 tablespoons cider vinegar
1/4 teaspoon salt
1/4 teaspoon paprika
1/8 teaspoon pepper

Steps:

  • Cook pasta according to package directions; drain and rinse in cold water. In a large serving bowl, combine the pasta, tomatoes, green pepper, cucumber and onion. , In a small bowl, whisk the sugar, oil, ketchup, vinegar, salt, paprika and pepper until smooth. This pasta salad is so easy to make. Very little chopping, if you use prepackaged shredded cabbage coleslaw mix. Inexpensive, too! If you don't like curry powder, use paprika in place of it. :)

2 cups medium pasta shells, uncooked
12 ounces imitation crabmeat, broken up
1/2 cup chopped purple onion
2 cups bagged preshredded coleslaw mix, finely shredded green cabbage mix
1/2-2/3 cup mayonnaise
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon garlic powder
1/4 teaspoon curry powder, can paprika instead

Steps:

  • Cook shell macaroni according to package; drain. Rinse with cold water and drain again.
  • Place cooled, drained pasta in a large bowl.
  • To bowl, add the onions, shredded cabbage and toss together.
  • Add mayonnaise (start with the lower amount), salt, pepper, garlic powder, curry powder and/or paprika.
  • Gently mix everything together.
  • Chill until ready to serve.
