BAKED FISH STICKS RECIPE
These crispy baked fish sticks (or fish fingers as they're also known) are so easy and so much healthier than boxed frozen fish sticks. They're ready in just 30 minutes! Serve them with this light tartar sauce made with Greek yogurt for a kid friendly dinner.

- Preheat oven to 400 degrees F. Coat a large baking sheet with cooking spray or brush lightly with oil.
- Cut fish into "sticks" about three inches long by 1/3-inch wide. Sprinkle all over with 1/2 teaspoon kosher salt and set aside.
- Place flour in a shallow dish. Beat eggs in another shallow dish. Mix breadcrumbs, paprika and garlic powder in a third shallow dish. Drizzle oil over the breadcrumb mixture and mash with a fork, continually until the breadcrumbs are evenly moistened.
- Use one hand for dry ingredients and one for wet ingredients while dredging the fish. Dip a strip of fish in the flour mixture, turning to coat completely. Dip into the eggs, coating completely. Press into the breadcrumb mixture, turning to coat completely. Set on the prepared baking sheet. Continue with the remaining tenders one at a time. Discard any left-over dredging mixtures.
- Transfer the baking sheet of breaded fish into the oven and bake until the fish is cooked through, about 15 minutes.
- Whisk yogurt and mayonnaise in a medium bowl. Stir in relish, mustard, 1/4 teaspoon salt and pepper. Serve with the fish sticks.

- Position rack in top third of oven and preheat to 500°F. Spray small baking sheet with nonstick vegetable oil spray. Whisk all purpose flour, yellow cornmeal and chili powder in shallow dish to blend. Stir mayonnaise and fresh lemon juice in another shallow dish to blend. Sprinkle fish fillets on all sides with salt and pepper. Dip fish fillets into mayonnaise mixture, then into flour mixture to coat completely. Arrange fish on prepared sheet. FISH STICKS WITH MARINARA SAUCE

- Put an oven rack in the center of the oven. Preheat the oven to 500 degrees F. Spray a heavy baking sheet liberally with vegetable oil cooking spray. Set aside.
- Put the buttermilk into a large bowl. Add the fish strips, stir to coat, and let stand for 15 minutes.
- In a medium bowl, stir together the Parmesan, bread crumbs and salt. Remove the fish from the buttermilk, allowing the excess to drip back into the bowl, and dredge in the bread crumb mixture to coat completely, pressing to adhere. Arrange the coated fish in a single layer on the prepared baking sheet. Lightly drizzle with olive oil and bake until golden and crispy, about 14 minutes. Cool slightly and arrange on a serving platter.
- In a small saucepan, heat the marinara sauce over medium-heat until warm. Transfer to a small serving bowl. Serve the marinara alongside the fish sticks as a dipping sauce.
PARMESAN FISH STICKS

- Preheat the oven to 450 degrees F. Grease a sheet pan with the olive oil.
- Cut the fish fillets into 2 1/2-inch-long and 1-inch-wide strips.
- Combine the flour, salt, and pepper in a shallow bowl. Set aside.
- Combine the breadcrumbs, parsley and butter with a fork in a separate shallow bowl. Add the Parmesan and stir to combine.
- Beat the eggs in a third bowl.
- Bread the fish by giving the strips a good coating of the seasoned flour. Tap off any excess. Dip in the beaten eggs until coated. Roll the egg-coated fish in the crumb mixture. If need be, press the breadcrumbs into the fish. Place on the oiled sheet pan.
- Bake for 10 minutes, then flip the fish sticks and continue cooking until the breading is deep golden and the fish is cooked through, about another 8 minutes.
- Serve with ketchup.

- PREP: Cut fillets into 1/2-inch strips and season with salt, pepper and cayenne. Set aside. Place flour in shallow pan, set aside. Place eggwash into another shallow pan and set that aside. Mix breadcrumbs (or panko) and optional almonds and place into yet another shallow pan.
- Dredge strips of cod in flour shaking off excess. Dip next in eggwash and then in the bread crumb mixture, pressing down lightly into breading to coat. Set coated fish on waxed paper-lined sheet pan.
- In a large skillet heat butter and oil over moderate heat. Carefully add the coated fish strips and cook about 2-4 minutes per side, until golden brown. Do in batches if necessary. Transfer fish strips to paper towels to drain.
PARMESAN FISH STICKS
Even kids who are not big fish-eaters tend to like salmon-and they'll like it even better when it's baked in a cheesy crumb coating. Let them do the dipping and crumb coating to speed the work along. The fish sticks can also be dipped in ketchup, marinara sauce, pesto, ranch dressing, or vinaigrette if you prefer.

- Preheat the oven to 450°F.
- Rinse the salmon fillet and pat dry with paper towels. Cut the fish in half to make 2 fillets, each about 4 by 4 1/2 inches. Starting on the longer edge, slice each piece into 1/2-inch strips. Cut any very tall strips in half horizontally so all the pieces are about 1/2 by 1/2 by 4 1/2 inches.
- Place the flour in a medium bowl and season with the salt and pepper. Place the egg whites in another bowl and beat until frothy, about 30 seconds. Combine the Parmesan and bread crumbs in a third bowl.
- Coat the salmon pieces in the seasoned flour and pat to remove any excess. Dip the floured salmon in the egg whites and then into the bread-crumb mixture, gently pressing the mixture into the fish. Place the breaded salmon on a liberally oiled baking sheet and drizzle lightly with a bit more olive oil. Bake for 15 to 20 minutes, or until golden brown.
- Mix the mayonnaise, yogurt, Dijon mustard, and parsley (or chives, if using) in a small bowl.
- Arrange the fish sticks on a serving platter and serve with the dipping sauce.
