BEEF WITH SOY SAUCE AND GINGER



Beef with Soy Sauce and Ginger image

2 (8 ounce/ 225 gram) sirloin steaks
Sea salt and freshly ground black pepper
2 pak choy or bok choy (even spinach or any other greens will do)
8 tablespoons soy sauce
1 thumb-sized piece of ginger, peeled
1 chilli, deseeded and finely chopped
1/2 a garlic clove, finely grated
1 lime, juiced
Olive oil

Steps:

  • On a very hot griddle pan, cook your seasoned piece of sirloin steak until medium or to your liking. Place in a plate and allow to rest for 2 minutes.
  • Now cook your greens in salted boiling water until tender.
  • While hot, douse with a good couple of tablespoons of soy sauce, and sprinkle with the garlic, ginger, chilli, lime juice and olive oil.
  • When the greens are cooked, simply divide onto two plates, thinly slice up the sirloin steaks, place on top of the greens and drizzle with any of the infused sauce left on the resting plate.

Steps:

  • Put the tamarind into a bowl and pour boiling water over it. Set aside until it is cooled. Pour the contents of the bowl through a strainer into a bowl, pressing as much of the pulp through as possible. Set the liquid aside. Cut steak into 1 inch pieces. Mix brown sugar, molasses, and dark soy sauce and set aside. Heat the oil in a wok. When it is hot, add the onions and fry, stirring occasionally, until they are soft. Add the garlic, ginger, spices and pepper and fry for three minutes, stirring frequently. Add the meat and increase the heat to moderately high. Cook the meat, turning from time to time, until it is deeply and evenly browned. Stir in the remaining ingredients, including the reserved tamarind liquid, and bring to a boil. Reduce the heat to low, cover the pan and simmer for 2 to 2½ hours, or until the meat is cooked through and tender and the sauce is thick and rather rich in texture. Remove from heat, transfer the mixture to a large, warmed serving platter and serve at once.

This was given to me by our Australian exchange student whose family came from Jakarta. It is wonderful with plain rice, especially good with jasmine rice and great all on it's own!

1 lb flank steak, thinly sliced
1 tablespoon peanut oil
6 candle nuts or 6 cashew nuts, slightly crushed
3 spring onions, sliced
2 pieces fresh ginger, minced (1/4 inch thick)
3 cloves garlic, sliced thinly
1 (8 ounce) can water chestnuts, drained
1/2 cup soy sauce
1/4 teaspoon sesame seed oil
2 cups water
salt
pepper

Steps:

  • Slice steak thinly and set aside.
  • Brown the onions, garlic,ginger and candle nuts in the peanut oil.
  • Add the meat slices and water chestnuts, cook for 5 minutes.
  • Add the soy sauce and water and cook for at least 35 minutes.
  • Salt and pepper may be added to taste.
  • Serve over jasmine rice or plain rice.

I have been making jangjorim for many years but recently decided to make it into a recipe to pass it on to my daughter. I have had my young Korean friends try it, and they told me that it tasted just like how their mothers made it! It is a Korean side dish, banchan, but it's so good you can just eat this and rice for a quick yummy meal anytime. jangjorim can be served cold right from the fridge, at room temperature, or can be heated up in the microwave. Add fresh ginger, if you like ginger.

½ pound beef brisket, cut into 2-inch pieces
½ cup soy sauce
¼ cup white sugar
5 cloves garlic
ground black pepper to taste
3 shishito peppers, or more to taste
3 hard boiled eggs, sliced, or more to taste

Steps:

  • Fill a large pot with water and add beef; bring to a boil. Reduce heat and simmer until meat can be punctured with a fork, about 30 minutes. Stir in soy sauce, white sugar, garlic, and ground black pepper; cook and stir until flavors combine, about 15 minutes.
  • Stir shishito peppers and eggs into the beef mixture. Cook and stir until meat can easily be pulled apart with a fork and liquids have been reduced to a third of the original amount, about 15 minutes.
