Sausage with Apple Sauerkraut image

1 medium sweet onion, sliced
3 tablespoons butter
2 medium apples, peeled and shredded
1 tablespoon lemon juice
1 can (8 ounces) sauerkraut, rinsed and well drained
1/2 cup unsweetened apple juice
1 teaspoon caraway seeds
1/2 teaspoon fennel seed, crushed
1 package (16 ounces) smoked Polish sausage

Steps:

  • In a large skillet, saute onion in butter for 15 minutes or until lightly browned. , In a large bowl, toss apples with lemon juice. Add the apples, sauerkraut, apple juice, caraway and fennel to the onion. Bring to a boil. Reduce heat; cover and simmer for 15 minutes. Meanwhile, heat sausage according to package directions; cut into slices. Serve with sauerkraut.

1 (1 lb) package Polish sausage or 1 (1 lb) package kielbasa, chopped into 1 inch pieces
1 teaspoon caraway seed
1 knorr beef bouillon cube
1/2 cup chablis
1 crisp green apple, cored and chopped
1/2 onion, chopped
2 cups water

Steps:

  • Drain sauerkraut REALLY well and put in a large saucepan.
  • Add 2 cups of water, bullion cube, caraway seeds, Chablis, apple, onion and sausage; bring to a boil.
  • Turn down the heat and allow to simmer, covered for at least 30 minutes stirring occasionally.

2 tablespoons vegetable oil
1 large onion, quartered and sliced
2 pounds smoked sausage , such as andouille, kielbasa, knackwurst, or chicken apple sausage, sliced
2 large apples, peeled, cored, and diced
2 cups apple juice
1 tablespoon vinegar
1/4 cup light brown sugar
2 pounds cold-pack sauerkraut, rinsed and well-drained
1/4 teaspoon ground black pepper
Optional: 1 teaspoon caraway seeds, or to taste

Steps:

  • Gather the ingredients. Heat the oven to 425 F.
  • In a large ovenproof saute pan or Dutch oven over medium heat, heat the vegetable oil. Add the onion and sliced sausages and saute until the onion is golden and the sausage is lightly browned, 5 to 7 minutes.
  • Add the apples and saute for 1 minute longer.
  • Add the apple juice, vinegar, brown sugar, sauerkraut, and pepper.
  • Add the caraway seeds, if using.
  • Cover and bake for 1 hour.

1 ring kielbasa, about 2 pounds
1 medium onions, chopped
1 tart green apple, cored, pealed and chopped into cubes
1 package sauerkraut
1 tablespoon caraway seeds
1 cup chicken stock

Steps:

  • Preheat oven to 425 degrees. In a large oven-proof skillet over medium heat, saute kielbasa until browned, about 4 minutes on each side. Remove kielbasa to a plate and keep warm. In the same pan, saute the onion and the apple for 1 minute. Drain and rinse the sauerkraut and add it to the apples and onion in the skillet. Add the chicken stock and caraway seeds to the pan and stir. Return the kielbasa to the skillet and cover. Put covered skillet in hot oven and cook for 15 to 20 minutes.

1 lb fresh sauerkraut or 1 lb canned sauerkraut
1 lb smoked sausage (for a low-fat version) or 1 lb smoked turkey sausage (for a low-fat version)
3 tart cooking apples, thinly sliced
1/2 cup packed brown sugar
3/4 teaspoon salt
1/8 teaspoon pepper
3/4 cup apple juice or 3/4 cup cider

Steps:

  • Rinse sauerkraut and squeeze dry.
  • Cut sausage into 2-inch pieces.
  • Put 1/2 the sauerkraut in the slow cooker.
  • Add the sausage pieces on top.
  • Continue to layer remaining ingredients in slow cooker in the order listed.
  • Top with remaining sauerkraut.
  • Do not stir the layers.
  • Cover.
  • Cook on high 4 hours, or low 6-7 hours.
  • Stir before serving.

1 tablespoon caraway seeds, crushed
2 tablespoons vegetable oil

1/2 cup white wine
8 small pitas
Dijon mustard

Steps:

  • Saute sauerkraut, apple and caraway in hot oil in large pot over low heat for a couple of minutes. Cover and continue cooking over low heat about 20 minutes.
  • Heat butter in saute pan; cook bratwurst in butter until it browns on both sides. Pour off excess fat and add wine. Cook quickly until wine evaporates.

1 tablespoon caraway seeds
¼ cup brown sugar
1 apple, diced
½ pound bacon, cut into 1-inch pieces

But in Baltimore, which has a strong eastern European and German immigrant history, the holiday table demands something else. "The absence of sauerkraut when turkey is present, Thanksgiving included, is unthinkable, comparable to potatoes without gravy or crisp French fries without ketchup," wrote John Shields, the chef and owner of Gertrude's restaurant in Baltimore, in his cookbook "Chesapeake Bay Cooking." (Sauerkraut is a mainstay well beyond Thanksgiving; Gertrude's hosts an annual Krautfest in January.) Traditionally, homemakers fermented the cabbage in earthenware crocks in their cellars, but these days the fresh stuff is available to buy. On Thanksgiving, it's often simply served as a side, or incorporated into dishes like this, in which the sauerkraut is braised in beer with bacon and apples.
