SENATOR RUSSELL'S SWEET POTATO CASSEROLE

Casserole:
1/2 cup white sugar
1 tsp vanilla
1/3 cup soft butter
3 cups boiled sweet potatoes, skin removed, sliced or chunks
Topping:
1 cup light brown sugar
1/3 cup flour
1 cup chopped pecans
1/3 cup melted butter

Steps:

  • Casserole: Mix the sugar, vanilla and butter and spread in the bottom of a casserole dish. Layer sweet potatoes on top.
  • Topping: Mix topping ingredients and sprinkle on top of potatoes.
  • Bake at 350 degrees F for 30 minutes.

31/2 cups sweet potatoes
1/2 cup sugar
2 eggs
1 teaspoon vanilla
1/2 cup milk
1/4 butter, softened
Topping:
1/2 cup brown sugar
1/3 cup flour
1/4 butter, melted
1 cup chopped pecans

Steps:

  • Bake potatoes at 450 degrees for one hour. Scoop potatoe from jacket. Combine potatoes, sugar, eggs, vanilla, milk and butter. Place in large casserole. For the topping: Combine brown sugar, flour, butter and pecans. Place on top of potatoes in casserole. Cover casserole. Can be prepared a day ahead to this point. Bake covered at 275 degrees for approximately 50 minutes. Uncover for last 10 minutes of cooking.

Thyme-Roasted Sweet Potatoes image

This slightly spicy, moist side dish is both deeply satisfying and nutritious. Sweet potatoes are rich in complex carbohydrates and fiber, giving them a low glycemic index (this means that they slow the body's absorption of sugar and help regulate blood-sugar levels). A bonus for weight watchers: All those complex carbs will make you feel fuller longer than white potatoes do.

4 medium sweet potatoes, peeled and cut into 1 1/2-inch-thick rounds
3 tablespoons olive oil
4 large garlic cloves, minced
1/3 cup fresh thyme leaves, plus 6 thyme sprigs for garnish
6 fresh thyme sprigs
1/2 teaspoon kosher salt
1/2 teaspoon red pepper flakes

Steps:

  • Preheat oven to 450°F. In large mixing bowl, combine all ingredients and toss. Arrange potato slices in single layer on heavyweight rimmed baking sheet or in 13x9-inch baking dish. Place on top rack of oven and roast until tender and slightly browned, about 40 minutes. Serve warm or at room temperature, garnished with thyme sprigs.
