1 tablespoon sesame seeds
2/3 cup uncooked orzo pasta
1 teaspoon reduced-calorie margarine
1 1/2 cups fresh spinach, washed and coarsely chopped
1 garlic clove, minced
3 tablespoons milk
2 tablespoons of grated parmesan cheese
1 1/2 teaspoons fresh oregano or 1/2 teaspoon dry oregano
1/2 teaspoon paprika
1/2 teaspoon ground black pepper

Steps:

  • Place sesame seeds in a small skillet. Cooke over medium heat until golden brown, stirring constantly. Set aside.
  • Cook pasta according to directions, omitting salt. Drain and set aside.
  • Melt margarine in medium skillet. Add spinach and garlic; cook over medium heat until spinach is wilted. Stir in milk, cheese, oregano, paprika, pepper and seeds; serve immediately.

1 tablespoon sesame seeds
3/4 cup orzo
2 teaspoons Asian sesame oil
1 bunch scallions (about 6), cut on diagonal into 1-inch pieces

Steps:

  • In a dry small heavy skillet cook sesame seeds over moderate heat, stirring, until golden brown, about 4 minutes, and transfer to a bowl.
  • In a 3-quart saucepan bring 2 quarts salted water to a boil. Add orzo and cook, stirring occasionally, until al dente. Drain orzo in a colander and rinse under cold water. Drain orzo well and add sesame seeds.
  • In an 8-inch non-stick skillet heat oil over high heat until hot but not smoking and sauté scallions, stirring occasionally, until lightly charred and tender, about 3 to 4 minutes. Stir scallion mixture into orzo and season with salt and pepper.

Steps:

  • In a dry skillet toast sesame seeds until golden brown, about 4 minutes. Transfer to bowl.
  • Boil orzo in boiling, salted water until al dente. Drain and rinse with cold water. Add to sesame seeds.
  • Slice scallions on diagonal into 1 inch pieces.
  • Heat oil in non-stick skillet over high heat until hot but not smoking and saute scallions, stirring occasionally, until lightly charred and tender, about 3 to 4 minutes.
  • Stir scallion mixture into orzo and season to taste with salt and pepper.
