Quick, inexpensive one dish meal. Note: Leftover roast beef may be substituted for the ground beef.

Steps:
- Brown beef and onion in a large saucepan until meat is no longer pink. Add potatoes, bouillon and water to cover.
- Cover saucepan, lower heat and let simmer for 30 minutes, or until potatoes are tender and water has been absorbed.

HAMBURGER HASH
Hamburger Hash, with it one skillet prep, combines seasoned potatoes, veggies, & hamburger topped with cheese for a simple toss together, yet filling meal!

Steps:
- Preheat broiler to high.
- Peel the potatoes and cut them into small cubes. Place cubed potatoes in a bowl of cold water, swishing them around to remove starch. Drain in a colander and rinse. Spread potatoes out paper towels and pat dry.
- Add oil to a cast iron skillet and heat over medium-high heat. Add the potatoes and cook, stirring as needed, until the potatoes are fork tender and browned on most sides.
- Sprinkle potatoes with 1/2 teaspoon salt and 1/4 teaspoon black pepper. Transfer to a plate and set aside.
- Stir in the onions, red bell pepper and garlic to the skillet. Cook over medium heat, stirring until golden brown.
- Stir in the beef, chili powder, and 1/2 teaspoon salt, 1/4 teaspoon black pepper and cook, breaking up any clump, until brown, about 5 minutes. Drain any excess fat.
- Add the potatoes back to the skillet and mix in. Sprinkle cheese evenly over the top of the skillet.
- Place skillet under preheated broiler until cheese is melted, about 1 minute. Garnish with fresh parsley and serve.

BEEF AND POTATO HASH

- Melt the butter in a large nonstick skillet over medium-high heat. Add the scallions, potatoes, 1/2 teaspoon salt, and pepper to taste. Cook, stirring occasionally, until the potatoes are golden brown and just tender, about 10 minutes; reduce the heat slightly if necessary to prevent the potatoes from burning. Add the beef and cook, stirring, until hot, about 5 minutes. Season with salt and pepper, and stir in the parsley.
- Combine the chuck, bell peppers, onions, garlic, tomatoes, Italian seasoning, fennel seeds, 2 1/2 teaspoons salt, and some pepper in a slow cooker. Cook on the low setting for 8 hours. Use a ladle to remove some of the excess fat from the surface, then coarsely shred the beef with two forks. Season with salt and pepper.
CHEESY BEEF AND POTATO HASH
Steps:
- Peel the potatoes and cut into small cubes (a little less than 1/2 inch). Put in a bowl and cover with cold water, mixing to rinse off the starch. Drain and rinse in a colander, then transfer to paper towels and pat dry.
- Heat the oil in a 10-inch cast-iron skillet over medium-high heat. Add the potatoes and cook, stirring occasionally, until tender and golden brown on most sides, about 15 minutes. Season with 1/4 teaspoon salt and pepper to taste, then transfer to a plate with a slotted spoon.
- Preheat the broiler on high.
- Add the onion, bell pepper and garlic to the skillet and cook, stirring occasionally, until golden brown, about 7 minutes. Add the beef, chili powder and 1/2 teaspoon salt and cook, breaking up any clumps with a wooden spoon, until brown, about 5 minutes. Return the potatoes to the skillet and mix to combine. Sprinkle the cheese over the hash.
- Broil until melted and bubbling, about 1 minute.
HAMBURGER HASH

SHEONA'S EASY HAMBURGER POTATO HASH
This is something I threw together one day when there was very little in my fridge and I wasn't up to a trip to the store. I made twice as much as what I am using for this recipe, and the Kids ate every bit, my husband and I didn't get any. It has become a favorite for the kids and something easy after a long day. Very low budget.

- In large lidded frying pan heat oil, add potatoes and cover stirring occasionally until the potatoes are done.
- Meanwhile in a medium size pot, cook your hamburger, onion, and garlic, until hamburger is no longer pink, breaking up large chunks.
- Drain meat if necessary and return to pot.
- Sprinkle gravy mix into the meat and onions stir well to coat meat.
- Add water and stir.
- Add potatoes to the pot and stir well.

- Dice the sweet potato
- Heat the olive oil in a large skillet over medium-high heat. Add the diced sweet potato, cover, and cook, stirring occasionally, for about 10 minutes, or until it begins to soften.
- While the sweet potato cooks, dice the red onion and mince the garlic. Add to the skillet.
- Dice and seed the bell peppers and add to the skillet.
- Dice the jalapeño, if using, and add.
- Chop the green onion and rosemary, if using fresh, and add to skillet. Cover and cook for about 5 minutes, or until the sweet potato is tender.
- Create 4 wells in the vegetable mixture, not too close to the edges of the skillet, but far enough apart that they aren't touching. Crack 1 egg into each well. Cover and cook for 3-5 minutes more, or the eggs are cooked to your liking.
