SHERRY'S PERFECT SOUS VIDE EGGS



Sherry's Perfect Sous Vide Eggs image

Sous vide eggs with a just-solidified yolk and those elusive solid whites. Eggs are an excellent candidate for sous vide because you can get consistencies of yolk that are not possible otherwise. However, no matter what the pretty pictures in sous vide recipes show you, egg whites are a problem. They just don't get firmed up properly. This fixes that. The last time I fixed them for my girlfriend, she stopped me mid-sentence to say, 'These eggs are perfect!'

Steps:

  • Prepare a heat-proof container of water with a sous vide cooker. Set temperature to 150 degrees F (66 degrees C).
  • Fill a bowl with enough ice water to cover eggs.
  • Fill a saucepan with water and bring to a boil. Add eggs to the boiling water and cook until whites are set, exactly 5 minutes. Move the eggs to the ice bath for at least 1 minute to stop the cooking.
  • Place eggs into the sous vide water bath; set timer for 40 minutes. Serve immediately or refrigerate and reheat for a few minutes in the sous vide or a bowl of hot water.

1 large egg yolk
1 tablespoon plus 1 teaspoon sherry vinegar
1 teaspoon kosher salt
2 teaspoons Worcestershire sauce, preferably Lea and Perrins
1/8 teaspoon freshly ground black pepper
1 cup canola oil
1/4 cup extra-virgin olive oil

Steps:

  • In a blender, combine the egg yolk, vinegar, salt, Worcestershire sauce, and pepper on a low speed. Turn the blender to medium speed and pour the canola oil, olive oil, and 1 tablespoon water through the top in a steady stream. Taste for seasoning. This dressing can be stored in a covered container in the refrigerator for several weeks.

3/4 cup dry sherry
3/4 cup vegetable oil
1 (5 1/8 ounce) package instant vanilla pudding
1/2 teaspoon nutmeg
powdered sugar

Steps:

  • Preheat oven to 350 degrees.
  • Grease 10" Bundt pan.
  • Combine cake mix, eggs, sherry, oil, pudding and nutmeg.
  • Beat with low speed mixer for 1 minute.
  • Scrap bowl and mix high speed 3 minutes.
  • Scrap bowl and pour into Bundt pan.
  • Bake 45-50 minutes.
  • Cool and turn out.
  • Glaze with powdered sugar mixed with sherry.

2 tablespoons vegetable oil
4 skinless, boneless chicken breast halves - cut into chunks
½ cup cornstarch
3 cloves garlic, crushed
1 large onion, cut into chunks
salt and pepper to taste
½ cup cooking sherry
2 cubes beef bouillon
½ cup creamy peanut butter
3 tablespoons curry powder
water to cover
½ teaspoon ground ginger
1 cup coconut milk

Steps:

  • Heat oil in a large skillet over medium high heat. Coat chicken with cornstarch and place in skillet with garlic, onion, salt and pepper. Add sherry and beef bouillon and let liquid reduce a little.
  • Stir in peanut butter and curry powder and add water to cover; add ginger, reduce heat to low and simmer for 30 minutes, then lastly stir in coconut milk and serve hot.

Truly easy and honestly loved by every member of my family...In fact my 19 year old daughter, Jamie, asks for it specifically every time she visits, and I even won over the in-laws with this one! Simply amazing flavor, I promise! Jamie can be trusted -- she's a picky eater and she loves this!!! :)

2 lbs stew meat
2 (10 1/2 ounce) cans condensed golden mushroom soup
2 tablespoons Lipton Onion Soup Mix
3/4 cup red wine (or Sherry)
1 tablespoon margarine
1/4-1/2 cup canned beef broth (depending on if you choose to use the wine or not)
1/4 teaspoon basil
1/4 teaspoon thyme
1/2-1 lb sliced fresh mushrooms (put in last hour of cooking)
1 lb kluski noodles, cooked, drained and buttered (or Reame's frozen noodles)

Steps:

  • Mix all ingrendients together in a covered casserole dish (except for the mushrooms that you will need to add the last hour of cooking).
  • Bake in a preheated 325 degree oven for 3 hours.
  • Add sliced, fresh mushrooms during last hour of cooking.
  • Serve over prepared Kluski or Reame's noodles.
  • 2ND OPTION: Instead of baking in an oven, you can also prepare this in a Crock Pot and cook on LOW for 8 hours (adding the mushrooms during the last hour.) Serve over prepared noodles, as per recipe, when done.
  • NOTE: To make the gravy a bit thicker, take 1 tablespoons flour and mix with 1 tablespoons water, then add in when you add the mushrooms and be sure to stir well.
  • YUM! :).
