CREAM OF CHICKEN SOUP

1/2 cup unsalted butter
1 medium Spanish onion, chopped
2 stalks celery (with leaves), chopped
3 medium carrots, chopped
1/2 cup plus 1 tablespoon flour
7 cups chicken broth, homemade or low-sodium canned
3 sprigs parsley
3 sprigs fresh thyme
1 bay leaf
2 3/4 cups cooked, diced chicken
1/2 cup heavy cream
2 1/2 teaspoons dry sherry
1 tablespoon kosher salt
Freshly ground black pepper to taste
2 tablespoons chopped flat-leaf parsley

Steps:

  • Melt the butter in a large soup pot over medium heat. Add the onion, celery, and carrots and cook, covered, stirring occasionally, until soft, about 12 minutes. Add the flour and cook, stirring with a wooden spoon, for 2 minutes more.
  • Pour in the broth and bring to a boil while whisking constantly. Tie the parsley sprigs, thyme, and bay leaf together with a piece of kitchen twine and add to the soup. Lower the heat and simmer for 15 minutes.
  • Stir in the chicken and bring to a boil. Remove from the heat.
  • Whisk the heavy cream, sherry, and salt into the soup and season with pepper to taste. Remove and discard the herb bundle. Divide among soup bowls, sprinkle the top of each soup with the chopped parsley and serve immediately.

  • In a large skillet, brown chicken in oil. Pour excess oil off.
  • Stir in undiluted soup, sherry, and whole onions. Cover. Simmer for 45 minutes, or until done. Stir occasionally.

1/4 cup sliced green onion
3 tablespoons butter
1/4 cup all-purpose flour
1 teaspoon ground mustard
1 pinch cayenne pepper
2 cups half-and-half cream
1 cup chicken broth
2 tablespoons minced fresh parsley
1/8 teaspoon dried thyme
1/8 teaspoon hot pepper sauce
1/8 teaspoon Worcestershire sauce
1-1/4 cups cooked small shrimp, peeled and deveined
1/4 cup dry sherry or additional chicken broth
Salt and pepper to taste

Steps:

  • In a large saucepan, saute onions in butter until tender. Stir in the flour, mustard and cayenne until blended; gradually add cream and broth. Bring to a boil; cook and stir for 2 minutes or until thickened., Stir in the parsley, thyme, hot pepper sauce and Worcestershire sauce. Cover and cook over low heat for 10 minutes, stirring occasionally. Add shrimp and sherry or additional broth; heat through. Season with salt and pepper.

6 skinless, boneless chicken breasts
salt and pepper to taste
6 slices Swiss cheese
1 (10.75 ounce) can condensed cream of mushroom soup
½ cup sherry
¼ cup sour cream
1 cup croutons
½ cup butter, melted
⅛ teaspoon dried dill weed

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Place chicken in a 9x13 inch baking dish and season with salt and pepper to taste. Cover each chicken breast with a slice of cheese.
  • In a medium bowl mix together the soup, sherry and sour cream, and pour mixture over chicken. Soften dill in melted butter; toss croutons in butter, and sprinkle them on top of chicken.
  • Bake in the preheated oven for 45 minutes, or until chicken is cooked through.

3 pounds split chicken breast (see note
2 1/2 cups sherry, divided
2 cups wild rice mix (see note)
1 (10.5-ounce) can cream of chicken soup
1 (13-ounce) can artichoke hearts, drained and diced
1/2 cup shredded Parmesan cheese
16 ounces sour cream
2 cups mayonnaise
1/2 cup Italian bread crumbs
1 sprig rosemary

Steps:

  • PLACE the chicken in a pot just large enough to hold it and cover with 2 cups sherry. Cover and bring to a boil, then reduce heat to low and cook the chicken about 40 minutes, until it reaches 160 degrees. Remove it from the pot and place on a cutting board to cool. COOK the wild rice mix according to package instructions. (Two cups uncooked rice mixture should yield about 6 cups cooked rice.) Set aside. COMBINE cream of chicken soup, artichoke hearts, shredded Parmesan, sour cream, mayonnaise and remaining sherry. REMOVE the chicken from the bone, discarding the skin and cartilage. Dice the chicken into bite-size pieces. PLACE the cooked rice in the bottom of a 13-by-9-inch baking dish. Add the diced chicken and the artichoke mixture. Sprinkle with bread crumbs and insert the sprig of rosemary. Place on a foil-lined sheet pan and place in the oven. BAKE at 350 degrees for 40 to 45 minutes, or until the casserole is brown and bubbly. NOTE: You'll need 2 pounds of cooked chicken, but start with about 3 pounds of raw chicken. After the skin, cartilage and bones are discarded, you should end up with the right amount. For the wild rice mix, Marcus suggests a mix that includes basmati rice. Yield: 8 to 10 servings Note: This recipe can be easily halved. I used boneless chicken breasts and also, sautéed fresh mushrooms in a little butter and added to the rice mixture.

6 cups fat-free chicken broth
1 lb boneless skinless chicken thighs
1 cup chopped celery
1 cup chopped onion
8 oz (1/2 of 16 oz. bag) frozen carrot coins
8 oz (1/2 of 16 oz. bag) frozen mixed veggies, (peas, carrots, corn, green beans)
1 large parsnip, peeled and chopped
1 cup frozen peas
1 tsp minced garlic, or more to taste
1 bay leaf
1/4 tsp pepper
2 cups uncooked no yolk egg noodles
1/4 cup snipped fresh dill

Steps:

  • Put broth, chicken, celery, onion, carrots, mixed veggies, parsnip, peas, garlic, bay leaf and pepper in large pot. Cover, bring to a boil. Reduce heat, simmer for 25 min, or until chicken is cooked and veggies are tender.
  • Discard bay leaf. Remove chicken to platter to cool. Add noodles to soup, Cover, simmer 10 min or until noodles are tender.
  • Shred chicken with two forks, add to soup along with dill.

This family favourite comes from my friend Sherry. Easy to make, rarely any leftovers, and if there are, it microwaves well the next day.

6 boneless chicken breasts
1 1/2 cups shredded swiss cheese
1 (10 ounce) can cream of chicken and broccoli soup
1/3 cup sherry wine (i usually will substitute 1/3 cup apple juice for the sherry)
3 cups herb stuffing mix

Steps:

  • Place chicken in pan.
  • Sprinkle cheese on top of chicken.
  • Combine soup and sherry, and pour on top of cheese.
  • Sprinkle stuffing mix over top.
  • Cover with tinfoil.
  • Bake 350 degrees for 1 hour, till chicken is tender.
  • Remove tinfoil during the last 15 minutes of baking.

9 cubes chicken bouillon
1/2 teaspoon dried marjoram
1/2 teaspoon ground black pepper
1 bay leaf
1 tablespoon dried parsley

Steps:

  • In a large stock pot, saute celery and onion in butter or margarine.
  • Add chicken, carrots, water, bouillon cubes, marjoram, black pepper, bay leaf, and parsley. Simmer for 30 minutes.
  • Add noodles, and simmer for 10 more minutes.

6 -8 large chicken breasts (whole boned and skinned)
4 cups sour cream (real sour cream)
1/2 cup drinking sherry wine or 1/2 cup cream sherry
1/2 teaspoon salt
1/2 teaspoon ground black pepper
4 (10 1/2 ounce) cans cream of mushroom soup
1/2 teaspoon dried tarragon
1/2 teaspoon granulated garlic powder
1/2 teaspoon dried thyme
1 teaspoon curry powder
1/4 cup butter
paprika

Steps:

  • Preheat oven to 375 degrees F.
  • In a deep baking dish, place 4 cans cream of mushroom soup, 4 cups sour cream, 1/2 cup drinking or cream sherry, 1/2 teaspoon salt, 1/2 teaspoon pepper, 1/2 teaspoon tarragon, 1/2 teaspoon granulated garlic powder, 1/2 teaspoon thyme, 1 teaspoon curry powder, 1/2 stick of melted butter, and mix well.
  • Bury the chicken breasts in the mix and then sprinkle with paprika. Bake in preheated oven, uncovered, at 375 degrees F. for 60 minutes.
  • (Use the sauce over the chicken breasts, and as a gravy over stuffing and/or mashed potatoes) (The left over gravy can also be frozen and used in the future as a gravy over any mashed potatoes, biscuits, toast, poultry or fish.).

1 medium onion, chopped
1 Tbsp olive/canola oil mix
2 cans (14 oz. each) fat-free chicken broth
1-1/2 cups water
1 can (15 oz.) cannellini beans, rinsed & drained
1 medium zucchini, coarsely chopped
1 cup carrots, sliced
3 cloves minced garlic
3/4 cup multigrain elbow macaroni
1 tsp dried oregano
6 cups coarsely torn, trimmed Swiss chard or 8 cups packaged fresh baby spinach leaves
1 can (14-1/2 oz.) diced tomatoes with spices

Steps:

  • In 5-6 quart Dutch oven, cook onion in hot oil over medium heat until tender.
  • Add broth, water, beans, zucchini, carrots and garlic. Bring to boil. Add pasta and dried oregano. Return to boil, reduce heat. Simmer, covered for 5 min. Stir in Swiss chard, or stir in spinach at last minute with tomatoes. Simmer, uncovered for 5-7 min or until pasta is tender, stir occasionally.
  • Stir in tomatoes and more oregano, remove from heat. Season with salt and black pepper.
