SHRIMP CREOLE (SLOW COOKER)
You'll need a 6 quart slow cooker for this one. The sauce needs to cook down and cooking a small volume of food in a larger cooker puts a greater percentage of the food in direct contact with the heated surface, resulting in the browning that creates such great depth of flavor. Steps:
- Melt the butter in a heavy bottomed pan over medium heat. Add the flour and cook, stirring often, until you have a medium brown roux. .
- Add the onion, celery, bell pepper and garlic; cook, stirring occasionally for about 6-8 minutes.
- Add the black, white and cayenne peppers, bay leaves, thyme, basil, salt and tomato sauce. Stir to mix and cook for one minute. With a spatula, scrape the contents of the pan into the crock along with the diced tomatoes; stir. Cook LOW for 4 hours.
- Remove the lid and stir well. Some of the sauce will be stuck to the sides of the crock and look almost as if it were burned. This is the carmelization process. Scrape all the sides and stir it back into the sauce. Add the shrimp and parsley; continue cooking on LOW for 1 hour; stirring once during the cooking process. Serve over steamed rice garnishing with sliced green onions.

EASY CROCK-POT SHRIMP CREOLE
This is a Paula Deen recipe and it is, of course, amazing! I was surprised how easy it was! She served it over rice on her show so I did the same. I just used Minute white rice. The prep time will really depend on if your shrimp is already peeled and deveined. It really doesnt' take that long to do it yourself and the shrimp is usually cheaper that way. This truly was simple and delicios! Hope you enjoy it!

Steps:
- Preheat crock pot on high.
- In fry pan, heat olive oil.
- Add peppers, onions and celery. Cook until softened.
- Add chili powder and saute until caramelized.
- Remove from heat and pour into crock pot.
- Add tomatoes, tomato sauce, hot sauce, Worcestershire, white sugar, salt and pepper.
- Cook for 3 hours.
- Add shrimp and cook for about 3 minutes.
- Serve over rice. Top with chopped green onions.

Steps:
- Combine all ingredients except shrimp.
- Cook 3 to 4 hours on high or 6 to 8 hours on low.
- Add shrimp during last 30 minutes of cooking.
- Serve over hot cooked rice.
- Chicken, rabbit, or crawfish may be substituted for shrimp.
- Sauté celery, onion, and bell peppers in oil or butter until tender.
- Add remaining ingredients, except shrimp.
- Simmer for at least 30 minutes to an hour.
- Add shrimp (or cubed cooked chicken or other seafood) and simmer for 15 to 20 minutes more.

SPICY SHRIMP CREOLE
Steps:
- Heat oil in a Dutch oven on medium heat. Saute celery, onions, and garlic in the Dutch oven until the onions are pearly white and the celery has begun to soften.
- Mix sugar, flour, salt, pepper and cayenne pepper into the Dutch oven. Add crushed tomatoes and tomato sauce, both pieces of bay leaf, and hot sauce. Bring the mixture to a boil, then turn the heat to low.
- Let the mixture simmer for 30 minutes, stirring occasionally.
- Approximately 15 minutes before serving, add shrimp to the pot and stir well. If necessary, raise the temperature to medium-low to ensure the Creole is bubbling but not burning. Scoop out the bay leaf halves before serving. Serve when the shrimp is pink and thoroughly cooked.

Steps:
- In a saucepan, bring water to a boil. Add rice and stir. Reduce heat, cover, and simmer for 20 minutes; set aside. Meanwhile, preheat oven to 300 degrees F (150 degrees C).
- In a large saucepan or pot, melt butter over medium heat, and saute carrots, onions, bell pepper, celery, mushrooms, and zucchini, until just tender. Stir in tomatoes and tomato sauce. Let cook, stirring constantly, for 5 minutes.
- Mix shrimp, pimientos, and chili powder into the pot. Stir in cooked rice and simmer on low heat for 10 minutes.
- Pour mixture into a 9x13 inch dish. Bake in preheated oven until the rice mixture thickens, about 40 minutes.
