SHRIMP, RATATOUILLE AND BOURSIN GRITS



Shrimp, Ratatouille and Boursin Grits image

Using local or wild shrimp makes for a better end product. Chef Tim Thomas of Georgia won first place in the 2007 Great American Seafood Cook-Off.

Number Of Ingredients 25

35 large shrimp, peeled and deveined (16-20 count per pound)
1/4 cup olive oil
6 garlic cloves, minced
2 tablespoons chopped fresh basil
salt
pepper
4 cups milk
1 cup grits
2 tablespoons butter
4 ounces boursin cheese
salt
pepper
1 eggplant, peeled and large dice
1/4 cup olive oil
1 onion, diced
3 garlic cloves, minced
1 green pepper, diced
4 ounces beer
1 zucchini, diced
1 yellow squash, diced
2 tomatoes, diced
1 cup tomato juice
1/4 cup fresh basil, chopped
salt
pepper

Steps:

  • For the Shrimp: Combine all ingredients together in bowl and marinate 30 minutes.
  • Place shrimp in heated sauté pan; cook for about 30 seconds on each side.
  • For the Boursin Grits: Bring milk and butter to a boil and add grits. Cook over medium heat for 15-20 minutes, stirring often. Season with salt and pepper. Add cheese and cook for 2-3 minutes.
  • For the Ratatouille: Heat large skillet with oil. Add eggplant and cook 5-7 minutes until brown. Drain excess oil. Add onion, garlic, and bell pepper. Cook another minute. Add beer and cook for 3-4 minutes. Add zucchini and squash. Cook 2-3 minutes. Add tomatoes and tomato sauce, salt, pepper and basil. Simmer 10-15 minutes.
  • Place grits in individual bowls, top with ratatouille and then shrimp.

Shrimp:
35 shrimp
1/4 c. olive oil
6 clove garlic
2 tsp. chopped basil
salt and pepper
Boursin Cheese Grits:
4 c. milk
2 tbsp. butter
1 c. quick grits
salt and pepper
4 oz. Boursin cheese
Ratatouille:
1/4 c. olive oil
1 onion
3 clove garlic
1 green pepper
4 oz. Michelob Bavarian Wheat beer
1 zucchini
1 yellow squash
2 tomatoes
1 c. tomato juice
Basil, oregano, salt, pepper

Steps:

  • Marinate: Combine shrimp with 1/4 cup olive oil, 6 cloves diced garlic, 2 teaspoons chopped basil, and salt and pepper. Let marinate 30 minutes.
  • Make Grits: Bring milk and butter to a boil. Add grits. Cook over medium heat for 15 to 20 minutes, stirring often. Season with salt and pepper. Add Boursin and cook another 2 to 3 minutes. Adjust seasoning.
  • Ratatouille: Heat 1/4 cup oil in large skillet. Add eggplant and cook 5 to 7 minutes until brown. Drain excess oil. Add onion, garlic and peppers. Cook another minute. Add beer and cook for 3 to 4 minutes. Add zucchini and squash. Add tomato products, salt, pepper and herbs. Simmer for another 10 to 15 minutes.
  • When almost ready to serve, heat a sauté pan and place shrimp mixture in heated pan. Cook shrimp for 30 seconds on each side. Serve in individual ramekins with grits topped with ratatouille, then shrimp and more ratatouille; or on plates, as grits topped with ratatouille, then shrimp.

1 tablespoon olive oil
1 container (8 oz) refrigerated prechopped onion, celery and bell pepper mix
1 3/4 cups milk
1 cup Progresso™ chicken broth (from 32-oz carton)
1 cup uncooked quick-cooking grits
1/2 teaspoon salt
1/4 teaspoon freshly ground pepper
1 container (5.2 oz) Boursin® cheese with garlic and herbs
1 lb uncooked medium shrimp, peeled, deveined and coarsely chopped
2 eggs, slightly beaten
1 tablespoon chopped fresh Italian (flat-leaf) parsley
2 teaspoons chopped fresh thyme leaves

Steps:

  • Heat oven to 375°F. Spray 11x7-inch (2-quart) glass baking dish with cooking spray.
  • In 10-inch skillet, heat oil over medium-high heat. Cook vegetable mix in oil 5 minutes, stirring occasionally, until tender.
  • In 4-quart heavy saucepan, heat milk and broth to boiling. Gradually add grits and salt, stirring constantly with whisk. Cook 5 minutes, stirring constantly, until thickened. Remove from heat. Stir in pepper and cheese. Stir in vegetable mixture, shrimp, eggs, parsley and thyme. Spoon mixture into baking dish.
  • Bake uncovered 25 minutes or until set.

1 medium eggplant
1 tablespoon salt
1/4 cup olive oil
2 large onions
3 garlic cloves, crushed
1 medium red pepper
1 medium green pepper
4 medium zucchini
3 medium tomatoes
1/4 teaspoon thyme
1/4 teaspoon oregano
1 bay leaf
salt and pepper
1 lb raw peeled and deveined shrimp
2 tablespoons chopped parsley

Steps:

  • Cut eggplant into 1/2-inch thick slices, then into chunks. Sprinkle with 1 tablespoon salt and let stand 30 minutes. Dry thoroughly.
  • Peel and slice onions. Core both peppers and cut into 1/2-inch pieces. Peel the tomatoes and cut into coarse cubes.
  • Heat oil in a large frying pan and saute onions and garlic for 2 minutes.
  • Add peppers and cook for 2 minutes more.
  • Add eggplant and brown lightly on both sides, about 3 minutes.
  • Add zucchini, tomatoes, thyme, oregano, bay leaf, and salt and pepper to taste. Simmer gently, uncovered, for 40 minutes. Stir often to baste vegetables with liquid while cooking.
  • Add shrimp and bring to a boil. Cover and reduce heat, and simmer for 3 minutes.
  • Remove from heat and remove bay leaf. Serve over hot cooked rice.
