Shrimp Summer Rolls with Nuoc Cham image

Traditional nuoc cham, a Vietnamese dipping sauce, is much sweeter than the version here, which amps up the lime juice for a tangy twist. If you prefer a sweeter sauce, add an extra tablespoon of sugar.

Number Of Ingredients 15

One 8.8-ounce package rice vermicelli (see Cook's Note)
12 large peeled and deveined shrimp (about 8 ounces)
1/3 cup freshly squeezed lime juice
3 tablespoons sugar
3 tablespoons fish sauce (see Cook's Note)
1 large clove garlic, finely grated
1 red Thai bird chile or 1/4 red jalapeno, finely chopped
Eight 8 1/2-inch round rice paper wrappers
2 scallions, cut into 1 1/2-inch matchsticks
1 medium carrot, cut into 1 1/2-inch matchsticks
1/3 English cucumber, cut into 1 1/2-inch matchsticks
1/2 cup mint leaves
1/2 cup cilantro leaves
1/2 cup Thai basil leaves or sweet basil leaves
1/4 cup roasted salted peanuts, chopped

Steps:

  • Prepare the rice vermicelli according to the package directions. Drain well and set aside.
  • Meanwhile, bring a large pot of water to a boil and prepare an ice bath by filling a large bowl with ice and cold water. Boil the shrimp until bright pink, opaque and just cooked, about 1 1/2 minutes. Drain and transfer to the ice bath. Once cool, slice each shrimp in half lengthwise, pat dry and refrigerate until ready to use.
  • Make the nuoc cham by whisking together the lime juice, 1/4 cup water, sugar, fish sauce, garlic and chile in a medium bowl. Set aside.
  • To assemble the summer rolls, line a baking sheet with parchment paper. Fill a large skillet with cold water.
  • Working one a time, soak a rice paper wrapper in the skillet until just pliable, 5 to 7 seconds. Transfer the wrapper to a clean cutting board. Line up 3 shrimp halves, pink-side down, in the bottom third of the wrapper. Layer with some scallions, carrots, cucumbers, mint, cilantro and basil. Top with a scant 1/4 cup vermicelli and sprinkle with about 1 teaspoon of the peanuts. Fold in the sides of the wrapper, then roll it up like a burrito. Place it on the prepared baking sheet seam-side down. Repeat with the remaining wrappers and filling ingredients, making sure the rolls are not touching on the baking sheet.
  • Cover the finished summer rolls with plastic wrap and refrigerate until ready to serve. Store any remaining vermicelli in an airtight container in the refrigerator.
  • Serve the summer rolls with the nuoc cham on the side for dipping.

1/4 cup rice wine vinegar
2 tablespoons peeled, finely minced fresh ginger root (about 1-ounce, a 1 to 1 1/2-inch piece)
1 clove garlic, gently crushed with the blade of a knife and quartered
1 tablespoon chopped fresh flat-leaf parsley
1/2 cup mayonnaise
1/2 cup olive oil
Kosher salt and freshly ground black pepper
3 Granny Smith apples, peeled, cored, cut julienne and tossed with lemon juice to prevent discoloring
1 head cabbage, core removed and sliced chiffonnade or shredded
1 medium red onion, finely sliced
2 ripe tomatoes, cut into wedges, or 1 pint grape tomatoes, halved

Steps:

  • Turn on the blender and while it's running, add one at a time through the feed tube, the vinegar, fresh ginger, garlic, parsley and mayonnaise, and blend together until a smooth paste has formed. With the power still on, pour the olive oil in a thin stream through the blender feed opening. Adjust the seasoning with salt and pepper,
  • Toss together apples, cabbage and onion, and stir in enough of the dressing to coat. Gently fold in most of tomato wedges, reserving some for garnish. Taste and adjust seasoning (salt and pepper) if necessary. Serve chilled, garnished with reserved tomato wedges, and with the remaining dressing on the side.

1/3 pound pork shoulder, untrimmed, cut into 2 pieces
12 medium raw shrimp, unpeeled
4 ounces bun (rice vermicelli or rice sticks), boiled for 5 minutes, rinsed and drained, see Cook?s Note
1 cup bean sprouts
1/2 cup mint leaves
1 small head red-leaf lettuce, leaves separated and washed
8 (12-inch) dried rice papers, round, plus extras
1/2 cup Vietnamese Bean Dipping Sauce, for serving, recipe follows
1/4 cup fermented whole soybeans
1/2 cup water
1/3 cup unsweetened coconut milk
2 tablespoons rice vinegar
3 tablespoons chopped yellow onion
2 tablespoons sugar
1 tablespoon ground chile paste, or to taste, as an accompaniment
1 tablespoon chopped roasted peanuts, for garnish, recipe follows
1 cup raw, shelled peanuts, skin removed

Steps:

  • Cook the pork in boiling salted water until it?s done but still firm enough for slicing, about 30 minutes.
  • While the pork is cooking, bring another small pot of water to a boil. Add the shrimp and cook until they turn pink, about 3 minutes. Rinse under running water and set aside to drain. When cool enough to handle, peel, de-vein, and cut in half lengthwise. Refresh in cold water and set aside.
  • Remove pork from the heat and drain. When it is cool enough to handle, slice into thin slices, about 1 by 2 1/2 inches. Place on a small plate and set aside.
  • Set up a salad roll "station." Line a cutting board with a damp kitchen towel. Fill a large bowl with hot water and place it nearby. (Keep some boiling water handy to add to the bowl.) Arrange the ingredients in the order they will be used: the shrimp, pork, rice vermicelli, bean sprouts, mint and lettuce.
  • Working with 2 rice paper rounds at a time, dip 1, edge first into the hot water and turn it to wet completely, about 10 seconds. Lay the round down on the towel. Repeat with the second rice paper and place it alongside the first. This allows you to work with 1 while the second is being set.
  • Line the bottom third of the rice paper round with 3 shrimp halves, cut side up, and top with 2 slices of pork. Add 1 tablespoon rice vermicelli, 1 tablespoon bean sprouts, and 4 to 5 mint leaves. (Arrange the ingredients so the rolls will end up being about 5 inches long and 1-inch wide.) Halve a lettuce leaf lengthwise along the center rib. Roll up in 1 piece and place on the filling. (Trim if it?s too long.) While pressing down on the ingredients, lift the bottom edge over the filling, then fold in 2 sides. Roll into a cylinder about 1 1/2 inches wide and 4 to 5 inches long. If the paper feels thick, stop three-quarters of the way and trim the end piece. (Too much rice paper can make the rolls chewy.) Repeat with the remaining rice papers and filling.
  • To serve, cut rolls into 2 or 4 pieces and place them upright on a plate. Serve with the sauce on the side.
  • Place the soybeans, water, coconut milk, vinegar, onion and sugar in a blender or food processor and process just until smooth. Transfer the mixture to a saucepan and bring to a boil over moderate heat. (If you don?t have a food processor, cook the soybean mixture first, then beat with a whisk.) Reduce the heat and simmer until the sauce thickens enough to coat a spoon, about 5 minutes. Add a little water if it?s too thick. Set aside to cool.
  • To serve, transfer to individual sauce bowls and garnish each with chile paste and chopped peanuts. This sauce will keep up to 2 weeks if refrigerated in a tight-lidded jar.
  • Cook?s Note: To cook bun, boil until the noodles are white and softened but still resilient, about 4 to 5 minutes, drain, rinse immediately in cold water and drain completely before serving.
  • Place the peanuts on a cookie tray and bake in a preheated 325 degree F oven until golden, about 20 minutes. Halfway into the baking, gently shake the tray so the peanuts roast evenly. (You can also roast the peanuts in a dry pan over low heat). Remove and set aside. Use the peanuts whole or coarsely chop them with a mortar and pestle, a food processor or a knife.
  • Yield: 1 cup

CRUNCHY SHRIMP ROLL WITH GINGER SAUCE

2 cups Japanese rice
Sushi vinegar
8 large shrimps, peeled, cleaned, tail-on and pressed by hand to make them straight.
Salt
Flour
2 eggs, beaten
Panko (Japanese bread crumbs)
4 large sheets of nori cut 2/3 size
Black sesame seeds
1 avocado, cut in 8 strips
1/2 hot house cucumber, peeled, seeded and cut into 4 long strips (the length of nori)
1/2 hot house cucumber, peeled, seeded and cut into 4 long strips (the length of nori)
Wasabi paste
Ginger Sauce, recipe follows
Red pepper flakes, for garnish
2 golf ball-size ginger pieces, peeled and sliced
4 tablespoon roasted sesame seeds
1 tablespoon soy sauce
4 tablespoons mayonnaise
4 tablespoons sushi vinegar
2 to 4 tablespoons water
1/2 lemon, juiced

Steps:

  • Cook the rice ¿ 1 part rice to 2 parts water. This can be done in a rice cooker, steamer, or pot according to package directions. When rice is cooked, spread the rice on a large baking sheet and sprinkle with sushi vinegar. Mix well, but do not break the rice grains. Chill the rice to room temperature.
  • Heat a deep fryer or a large pot halfway filled with oil to 360 degrees F.
  • Season the shrimps with salt, dust them with flour, and roll them in eggs then in panko. Fry the breaded shrimps to golden brown. Remove to a paper towel lined plate.
  • Place the nori on a cutting board, spread sushi rice on the back side (non glossy side), sprinkle black sesame seeds over rice. Place the rice side down on a bamboo mat that has been covered with plastic wrap. Place 2 shrimps, 2 strips of avocado, strip of cucumber and some wasabi on the center. Roll. (good luck!) Cut the roll in to 8 pieces (this you need better than just good luck!).
  • Pour Sesame Ginger sauce on serving plate, then place sushi over the sauce. Sprinkle the sauce with some crushed red pepper flakes.
  • Add all the ingredients in a blender. Blend on high until all solids turn liquid.

SHRIMP ON WONTON CRACKERS WITH SLAW

Although typically used to make bite-size dumplings for wonton soup, paper-thin wonton skins can be fried into a crispy snack or baked into crackers as they are here. Topped with a citrus and ginger slaw and tender shrimp, they make an easy yet impressive party snack.

3 (16-ounce) packages wonton skins, thawed
2 tablespoons sesame oil
Salt
1/2 pound snow peas
1/2 pound radishes
1/2 pound carrots
3 tablespoons black sesame seeds
1/4 cup mint leaves
3 tablespoons grated fresh ginger
1/2 cup orange juice
1/2 cup rice vinegar
2 teaspoons grated fresh ginger
2 teaspoons black sesame seeds
1 tablespoon mint leaves
1/4 cup peanut oil
2 tablespoons sesame oil
60 large shrimp, peeled, deveined, and cooked (about 3 pounds)

Steps:

  • Preheat oven to 350 degrees F.
  • Arrange wonton skins in single layer on a flat surface. Cut out circles using a 2-inch cookie cutter. Lightly coat baking sheets with sesame oil, transfer rounds to pan. Drizzle wontons with a little sesame oil, season, to taste, with salt. Bake until lightly browned, about 5 minutes. Let cool completely. The wonton crackers may be made several days ahead and stored at room temperature in an airtight container.
  • Blanch the snow peas in a large pot of rapidly boiling water for 1 minute. Drain well then rinse in cold water to stop the cooking process. Julienne the snow peas, radishes, and carrots, place them in a large bowl. Add sesame seeds, mint, and ginger. Whisk together the marinade ingredients in a separate mixing bowl, pour 1/2 the marinade over the slaw, toss to coat.
  • Remove the shrimp tails and discard. Split the shrimp in half lengthwise and place in a large bowl. Pour the remaining marinade over the shrimp.
  • To assemble: place a small amount of snow pea slaw on wonton cracker. Top with 2 shrimp halves, cut side down. Garnish with black sesame seeds and mint before serving.

1 pound medium shrimp (about 30), in shells
8 ounces rice vermicelli (rice-stick noodles)
1 small head Napa cabbage, halved, cored, and thinly sliced 5 medium carrots, cut into 1/8-inch-thick, 3-inch-long matchsticks
1 English cucumber or 4 Persian cucumbers, cut into 1/2-inch-thick, 5-inch-long wedges
6 scallions, dark-green tops only (reserve white and pale-green parts for Mango Salad)
1 bunch Thai or Italian basil
1 package spring-roll skins (banh trang)
Peanut Dipping Sauce for Shrimp Summer Rolls, for serving
Sambal oelek (Indonesian chili paste) or spicy chili sauce, for serving

Steps:

  • Bring 1 inch water to a boil in a large, deep straight-sided skillet. Submerge shrimp; immediately remove from heat and cover. Let stand 3 minutes; drain. Let cool and peel. Cut in half lengthwise and devein. Shrimp can be stored in refrigerator up to 1 day.
  • Place vermicelli in a baking dish and cover with 1 inch hot tap water. Let stand until water is tepid, about 30 minutes; drain. Vermicelli can be stored in refrigerator up to 1 day.
  • Submerge cabbage and carrots in 2 separate bowls of ice water 30 minutes; drain. Place alongside cucumber, scallions, basil, shrimp, and noodles on a platter.
  • Pour at least 1 inch warm water into a bowl slightly larger than spring-roll skins. Submerge 1 skin in warm water until pliable but still firm, about 10 seconds. (Replace warm water as necessary.) Transfer to a plate. Serve with dipping sauce and sambal oelek.
