Almond milk is a delicious and healthier alternative to soy and cow milk. It's easy to make and very delicious. The longer you soak the almonds, the creamier the milk turns out.

Steps:
- Place almonds in a bowl and pour in enough water to cover; soak at least 12 hours. Drain water.
- Blend almonds and 3 cups water in a blender on low speed for 10 seconds. Turn blender off for 5 seconds. Blend almonds and water on high speed for 60 seconds. Pour mixture through cheesecloth or a nut bag into a bowl. Discard the pulp or save for another use.
- Clean the blender and return milk to blender; add agave nectar and salt. Blend milk until smooth.

- Soak almonds in a bowl or cup overnight (makes about 1 cup soaked almonds).
- Pour out soaking water and place almonds, half of pure water, and dates (or honey) in Blender. Blend on high for 30 seconds.
- Add remaining 8 oz of pure water and blend for another 30 seconds.
- Over a large bowl, pour contents of blender into nut milk bag and milk/massage material so that the bowl fills up with your freshly made and strained almond milk.
- Notes: Blending first with only half the water is a great way to ensure your almonds are well blended.
- TIP: Spread almond meal onto sheet on dehydrator tray to dry, grind in coffee grinder, and use as almond meal.
- Makes 18 ounces of raw, sprouted almond milk and 1.15 ounces almond flour.

- Combine all of the soaking ingredients in a medium glass mixing bowl. Cover with a clean dish towel and refrigerate for 8-12 hours. I find it easiest to refrigerate overnight for morning use, or first thing in the morning to use at dinner time.
- Drain and rinse the soaked almonds well in your colander. Add the almonds and water to your blender. Blend on high for 90 second up to 4 minutes. If you have a high-power blender 90 seconds should be plenty. A standard blender will take longer.
- If you prefer your milk slightly sweet add up to a tablespoon of maple syrup during the blending.
