¼ cup shredded Colby-Monterey Jack cheese
1 (16 ounce) package tortilla chips, or as needed

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 4-cup casserole dish.
  • Mix refried beans, chicken, onion, and 1/2 cup Colby-Monterey Jack cheese together in a large bowl. Stir until chicken is broken up and ingredients are well combined. Mix in chili powder, cumin, and seasoned salt and spoon mixture into the prepared casserole dish. Top with 1/4 cup Colby-Monterey Jack cheese.
  • Bake in the preheated oven until hot and bubbly, about 25 minutes.

I got this recipe out of an obscure magazine about 10 years ago, it was their featured "microwave" recipe. I became addicted to the darned stuff. Similar to refried bean dip recipes, but using canned whole beans instead- very hearty, I would feed this to a bunch of men watching some ridiculous sporting event, for instance :) I've been known to eat this for supper!

2 (14 ounce) cans kidney beans, drained
1 tablespoon vegetable oil
1 onion, chopped
1 garlic clove, minced
2 tomatoes, chopped
1 -2 tablespoon chopped pickled jalapeno pepper
2 cups shredded cheddar cheese or 2 cups monterey jack cheese

Steps:

  • In a 2 litre casserole dish, combine oil, garlic and onion, microwave 2 minutes or till onions are soft.
  • Stir in beans, tomatoes and jalapenos, microwave about 3-4 minutes.
  • Mash up the mixture with a potato masher, leaving some coarse pieces. Season with salt and pepper to taste if you wish.

1 (15 ounce) can refried beans (spicy if you like heat)
1 (12 ounce) package prepared Spanish rice
1 (12 ounce) package Velveeta cheese, cubed
1 small onion, diced
2 teaspoons chili powder
1 tablespoon olive oil

Steps:

  • In a large skillet, combine the oil, beef, and diced onion until the onion is translucent and the beef is crumbled and browned.
  • Drain the meat and prepare the rice according to the package.
  • Combine the meat and onions with the cubed cheese, refried beans, and prepared rice.
  • Add seasoning to taste, I like it spicy so I will either use spicy refried beans or add chili powder.
