I picked up this recipe when I lived in Italy; everyone loves it. Thought it was time to share! The Merlot and chicken granules are very important ingredients that set this recipes aside from other sauces.

1 tablespoon olive oil
1 large onion, chopped
3 large cloves garlic, minced
2 (28 ounce) cans tomato sauce
1 (28 ounce) can diced tomatoes
¾ cup Merlot wine
1 (6 ounce) can tomato paste
3 tablespoons chicken bouillon granules
3 tablespoons dried basil leaves
3 tablespoons Italian seasoning
salt and ground black pepper to taste

Steps:

  • Heat olive oil in a large saucepan over medium heat. Cook and stir onion and garlic in hot oil until the onion is translucent, 5 to 7 minutes.
  • Sit tomato sauce, diced tomatoes, wine, tomato paste, chicken bouillon granules, basil, Italian seasoning, salt, and pepper with the onion mixture. Bring the mixture to a boil, reduce heat to low, and cook at a simmer, stirring frequently, for 1 hour.

This creamy Italian four-cheese pasta sauce is quick and easy to make. The sauce goes well with your choice of pasta.

1 (14-ounce) package pasta, your choice
1 cup whole milk
2 to 3 ounces Gorgonzola Dolce, or a mild blue cheese
2 to 3 ounces Fontina cheese
Pinch freshly ground nutmeg
Pinch white pepper
3/4 cup Parmigiano-Reggiano , freshly grated
1/2 cup Pecorino Romano cheese
Fine sea salt, to taste

Steps:

  • Gather the ingredients.
  • Bring a large pot of salted water to a boil. Add whichever type of pasta you choose.
  • Stir, bring back to a boil and start timing according to your desired degree of doneness and instructions on the package.
  • While the pasta is cooking, in a small, heavy-bottomed saucepan, heat the milk over medium-low heat.
  • Add the Gorgonzola and Fontina, stirring constantly with a wooden spoon until they are melted and the mixture is homogeneous.
  • Add the nutmeg and white pepper.
  • About 1 minute before the pasta is done, remove it from heat and drain it.
  • Transfer the drained pasta to a large skillet and stir in the milk-and-cheese mixture and the Parmigiano and Pecorino.
  • Cook, shaking the pan continuously and vigorously until the sauce has thickened and the pasta is perfectly al dente and coated in the cheese sauce. Season to taste with fine sea salt.
  • Serve hot, with additional grated cheese for topping, if desired, and a green salad or vegetables.

Easy 4-Ingredient Tomato Sauce for Pasta image

Number Of Ingredients 4

1 800-gram can of whole/crushed tomatoes
1 large yellow onion (peeled and halved)
2 cloves garlic (peeled and crushed)
70 grams unsalted butter

Steps:

  • Empty the can of tomatoes into a pot. Add in 3 tablespoonfuls of water into the can and swirl to get all the tomatoes and juices and empty the water into the pot. Add in onion, garlic and butter.
  • Cover the pot and place over high heat. When the sauce has come to a boil, turn the heat down to low and simmer for 45 minutes to 1 hour, until the onion is extremely soft, stirring occasionally.
  • Remove from heat, use an immersion blender and blend until the sauce is smooth or until no large chunks of onion and garlic remains. If you don't want to blend the sauce, simply use a slotted spoon to remove the onion and garlic and if you are using whole tomatoes, crush the tomatoes against the side of the pot.
  • Taste the sauce - it's highly likely that you will not need anymore salt as the canned tomatoes are usually salted, but do add some if you think it's too bland.
  • Cover the pot and prepare your pasta. Reheat the sauce on medium-low heat until simmering if necessary.

5 cloves garlic, peeled
3 tablespoons olive oil
1 white onion, chopped
1 pound mushrooms, sliced
1 (16 ounce) can crushed tomatoes
8 ounces tomato paste
1 green bell pepper, chopped
2 tablespoons dried oregano
1 tablespoon dried basil leaves

Steps:

  • In a blender chop the whole tomatoes with juice and garlic until chunky. In a medium size pot, heat oil on medium high heat. Put onion and mushroom in and saute for about 5 minutes.
  • Place in pot the blended tomatoes, crushed tomatoes, tomato paste, chopped green peppers, oregano and basil. Bring to boil, then lower to medium low, cover and stir periodically. Cook and reduce about 1 to 2 hours or to your liking.

1 (12 ounce) can tomato paste
1 (28 ounce) can stewed tomatoes
1 cup brown sugar
1/2 medium onion, diced
spices and herbs, to taste

Steps:

  • Saute the diced onion in a little bit of olive oil, butter, or cooking spray, in a medium saucepan over medium heat. (If you like garlic, you could add a few diced garlic cloves too).
  • Add the stewed tomatoes and the tomato paste. Stir to combine.
  • Add the brown sugar. Start with just 1/2 a cup. If you like it sweet, keep adding more. Here is when you can add salt, pepper, and any herbs like basil and oregano.
  • Turn the heat down to low and simmer for at least an hour. Stir every so often. The stewed tomatoes will keep breaking down the longer you cook it, so you can keep going for a less chunky sauce. The perfect sauce for any pasta that can also be used as a pizza sauce, or for meatballs, etc.

This is a recipe I thought of when I wanted pasta, but had no sauce on hand. I serve it with Spinach Fettucine pasta noodles. The sauce does not look like it will make lot, but trust me it is thick and rich and goes along way.

12 ounces sliced mushrooms
2 pints grape tomatoes
1/3 cup olive oil
6 ounces tomato paste
1 tablespoon Italian dressing, golden
1 tablespoon garlic
1 tablespoon onion powder
1 tablespoon italian seasoning
1 -2 tablespoon sugar, as needed

Steps:

  • Saute mushrooms with little bit of the olive oil and a teaspoon each of the dressing, onion, garlic, and italian seasoning.
  • Blend mushrooms as well as oil into almost purree. (Yes, I know it looks disgusting trust me).
  • Microwavable safe bowl place two pints of tomatoes plus the rest of the onion, garlic and italian dressing and seasoning. Cover with paper towl and microwave between 2-4 minutes until most of the tomatoes have popped. Stir once during time frame.
  • Add the microwave mixture to blender. Puree.
  • Add tomato paste and sugar if necessary.
  • Drizzle remaining olive oil in as needed to thin sauce.
