SIMPLE ROASTED RADISHES
These simple roasted radishes make a fantastic healthy low-carb side dish. If you're looking for something a little different, give these a try!

Steps:
- Preheat oven to 400F. Move the rack to the middle position.
- Cut the radishes into equal-sized pieces. If they're particularly large radishes, cut them into quarters. Otherwise, cut them into halves.
- Add the radishes to a baking dish and toss them with the olive oil and salt & pepper. Roast them face down if you want them to brown nicely.
- If the radishes are small, roast them for 15 minutes and check to see if they're done to your liking. If they're larger, it may take up to 35-40 minutes to get them tender. Mine took about 30 minutes to get tender-crisp.
- Toss with freshly chopped parsley if desired.

ROASTED RADISH RECIPE
Steps:
- Gather your ingredients. Preheat the oven to 350 F. Gently wash the radishes under cold, running water. Dry carefully and thoroughly.
- Snip or cut off and green top leaving a tiny piece of stalk, you do not have to remove the root unless it is very long. If the radishes are large, cut them in two or even four; smaller radishes can be cooked whole.
- Place the radishes into a roasting tin ovenproof grill pan (using this pan can give the radish tiny marks which can be attractive). Drizzle over the olive oil, sprinkle with the salt are roll the radishes around to coat well. Finally, add the lemon wedges.
- Roast the radishes in the center of the preheated oven until soft, about 20 minutes.

ROASTED RADISHES
I saw a recipe for baked radishes in a magazine long, long ago and the thought so intrigued me I just had to give it a try. This is my personalized version of the original. I often switch out the thyme with either rosemary, basil, or crushed garlic, depending on my mood and what main dish these will be served with.

Steps:
- Preheat oven to 450 degrees F (230 degrees C). Line a baking sheet with aluminum foil.
- Cut radishes into halves; cut any large radishes into quarters. Stir olive oil and thyme together in a bowl and toss radishes in mixture to coat. Spread radishes onto prepared baking sheet; sprinkle with salt.
- Roast in the preheated oven until tender but firm in the centers, tossing every 5 minutes, 15 to 20 minutes. Drizzle with lemon juice.

- Preheat the oven to 400 degrees F. Line a baking sheet with aluminum foil.
- Halve the radishes lengthwise and place them in a bowl. Toss with the olive oil and season with salt and pepper.

- Heat oven to 180C/160C fan/gas 4. Remove the leaves from the radishes and if they are nice and fresh, set aside. Halve the radishes and tip into a roasting tin with the olive oil.
- Roast for 20 mins until shrivelled and softened, then remove from the oven. Season with salt, toss with some of the leaves to wilt and serve.

- Preheat oven to 400 degrees. Separate greens from radishes; wash both well. Slice radishes in half; toss with 1 tablespoon each oil and vinegar. Season with salt and pepper. Arrange in a single layer on a rimmed baking sheet, cut-side down. Roast until tender and golden, 25 to 30 minutes.
- Meanwhile, heat remaining oil and vinegar and the garlic in a medium skillet over mediumhigh heat. Cook radish greens, tossing, just until wilted, about 1 minute. Season with salt and pepper. Serve with radishes.

- Heat the oven to 200C/180C fan/ gas 6. Tip the radishes and bashed garlic cloves into a roasting tin, season well and drizzle with the oil. Toss to coat the radishes and garlic.
