WEEKNIGHT BOLOGNESE
Steps:
- Heat 2 tablespoons of olive oil in a large (12-inch) skillet over medium-high heat. Add the ground sirloin and cook, crumbling the meat with a wooden spoon, for 5 to 7 minutes, until the meat has lost its pink color and has started to brown. Stir in the garlic, oregano, and red pepper flakes and cook for 1 more minute. Pour 1 cup of the wine into the skillet and stir to scrape up any browned bits. Add the tomatoes, tomato paste, 1 tablespoon salt, and 1 1/2 teaspoons pepper, stirring until combined. Bring to a boil, lower the heat, and simmer for 10 minutes.
- Meanwhile, bring a large pot of water to a boil, add a tablespoon of salt, a splash of oil, and the pasta, and cook according to the directions on the box.
- While the pasta cooks, finish the sauce. Add the nutmeg, basil, cream, and the remaining 1/4 cup wine to the sauce and simmer for 8 to 10 minutes, stirring occasionally until thickened. When the pasta is cooked, drain and pour into a large serving bowl. Add the sauce and 1/2 cup Parmesan and toss well. Serve hot with Parmesan on the side.

- Noodles (Pot Method): Bring 4 - 6 quarts of water to a boil. Add the noodles and return to a boil. Boil for 9 minutes. Drain off hot water and rinse with cold water for 10 seconds and drain again before serving. You can leave a little water with the noodles and stir occasionally to prevent noodles from sticking.
- Noodles (Fasta Pasta Bowl): Use lid to measure out 4 servings of dry noodles. Break noodles in half and place into Fasta Pasta bowl. Add cold water to the #4 line. Microwave with the lid off for 14 minutes. After it's done cooking, place lid onto to the bowl and drain off the pasta water. Rinse with cold water for 10 seconds and drain again prior to serving. You can leave a little water with the noodles and stir occasionally to prevent noodles from sticking.
- Meat Sauce (while noodles are cooking): In a medium saucepan brown the ground beef and drain off the grease.
- Add the spaghetti sauce to the beef and stir in the sugar.
- Cook on medium heat until thoroughly heated through. Serve hot on top of cooked noodles.
- Sprinkle with Parmesan cheese.

Steps:
- Boil water, then add to pot with heat set to high. Add spaghetti. Add chopped tomato, mushrooms and seasonings to tomato sauce and heat on low in separate pot, covered with a lid. Once water comes to a boil in the pot, cook spaghetti for at least 10 minutes. Occasionally stir sauce. Drain pasta, add sauce, then capers. Add cheese if you want. Enjoy!

- Make the herb oil: Combine the oil, garlic, thyme, rosemary, basil, and pepper flakes in a narrow saucepan over medium heat. As the heat builds, there will be considerable bubbling as the water cooks out of the garlic and herbs. When this dies down and the basil and garlic turn brown, kill the heat and steep until cool. Strain the oil into a jar and toss the solids. Use immediately or cover tightly and freeze for later use.
- Make the sauce: Heat 3 tablespoons of the herb oil in a wide saute pan over medium heat. Add the tomatoes and 1 teaspoon of the salt to the pan, and cook for 5 to 7 minutes, breaking up the tomatoes as they soften with a wooden spatula or an old-school potato masher.
- Reduce the heat, stir in the anchovies, and cook until the anchovies completely vanish from view, about 5 minutes more.
- Meanwhile, place the spaghetti in a pan wide enough that the noodles can be submerged by just a couple inches of cold water seasoned with the remaining tablespoon of salt. Place over high heat and when the boil is reached, reduce heat to maintain a simmer and cook, stirring often, until al dente, 5 to 7 minutes.
