- Fry potatoes in 3 T olive oil until browned and tender.
- Remove and keep warm.
- Add remaining oil to skillet, add shrimp.
- Cook for 2 minutes; add remaining ingredients and saute for 3 minutes.

Steps:
- Squeeze lemon over shrimp and set aside.
- Heat olive oil over medium heat. Add onion, celery, and garlic. Season with salt and pepper and cook until tender, about 5 minutes. Stir in rosemary, basil, oregano, coriander, and bay leaf. Add white wine and Worcestershire sauce; cook until sauce is slightly reduced and flavors come together, 8 to 10 minutes.
- Add shrimp to the sauce and cook until pink, 5 to 7 minutes more.

- In a large nonstick skillet, heat 2 tablespoons oil over medium-high. Add potatoes, and cook, stirring occasionally, until browned and crisp, 12 to 14 minutes. Add scallion whites, and cook 1 minute more. Transfer to a plate (reserve skillet).
- Add remaining teaspoon oil, shrimp, and curry powder to skillet; cook, stirring occasionally, until shrimp are cooked through, 2 to 3 minutes. Return potatoes and scallion whites to skillet, and toss with shrimp; season with salt and pepper. Serve topped with scallion greens.

Ready, Set, Cook! Special Edition Contest Entry -- A rustic and flavorful dish which is a meal in itself. The texture and taste of the main ingredients (potatoes and shrimp) are present in every bite. The taste of each bite leaves you craving for another. This recipe was inspired by my Greek heritage and the time I spent living in South America. Note: In place of using the juice from a lemon, the lemon could be sliced and spread on top of the potatoes in the first layer. If using the slices, you may want to peel the lemon first so that the peel does not create a bitter taste.

- Divide the bag of hashbrowns in half (10oz ea). Following the Easy Cooking Directions on the back of the bag, use the vegetable oil as directed to cook each half bag of hashbrowns.
- After cooking, place hashbrowns on a plate lined with paper towel, and set aside.
- Preheat the oven to 350 degrees.
- In a large skillet, heat the olive oil over medium high heat. Add the onions, leek, and garlic and saute till translucent, about 5 minutes.
- Add the tomatoes, tomato paste, wine, cumin, oregano, rosemary, lemon juice and capers.
- Season with the salt and pepper.
- Cook for 10 minutes, stirring occasionally.
- Reduce the heat to medium, add the shrimp and cook for an additional 5 minutes, stirring once or twice.
- In a 11 3/4 x 71/2 x 13/4 Pyrex baking dish, or the equivalent, ladle 1/3 of the tomato and shrimp sauce.
- Spread 1/2 of the potatoes over the sauce.
- Ladle another 1/3 of the sauce over the potatoes.
- Spread the remaining potatoes over the sauce. Pour the remaining sauce over the potatoes.
- Sprinkle the feta cheese over the sauce.
- Spread the egg slices and olives on top of the cheese.
- Spread the cilantro over the top.
- Bake, uncovered, for 30 minutes or until bubbly.

- The first step to making this delicious stew is to chop the carrots into bite-sized pieces. The next step is browning the bit-sized cubed beef until cooked all the way through in a skillet on medium heat; don't drain any of the grease, you will use this to brown the Simply Potatoes. After the meat is brown, you will then place it in a container to the side, then put the Simply Potatoes Diced with onions in the skillet and cook until brown, on medium heat. Then you will put the Potatoes into another container to the side (or if you read ahead and got a big enough container, they can both go in).
- The next step is place your soup pot on the stove and turn the heat on high and add the beef broth and tomato paste to your pot (you can add more tomato paste if you like your base to be thicker), and heat until boiling. Once your mixture is boiling, turn down to simmer and add the carrots, beef, and potatoes and onions. The final step is to heat on simmer until carrots are cooked all the way through (approximately four hours), or for quicker meals, heat on medium (approximately one hour).

- Preheat oven to 350° degrees. While you're waiting for your oven to heat up, get a large skillet over medium heat and add 2Tbsp of olive oil.
- Once your oil is hot, add potatoes and saute for 10 minutes Remove potatoes from skillet and set to the side. In the same skillet, add the remaining oil. Add shrimp and fresh lemon juice and saute for 6-8 mins until pink and set to the side. In the same skillet add chicken broth for 2 mins just to warm.
- Get a large baking dish, add shrimp and potatoes. Pour broth over it and gently stir. Put it in oven uncovered for 20 minutes.

THAI SHRIMP & POTATOES
Thai Shrimp & Potatoes Shrimp and Grits was the inspriation for this dish. I wanted to create a unique dish with the Simply Potatoes Traditional Mashed Potatoes, along with a shrimp. My family LOVES mashed potatoes as well as shrimp, so I thought I'd try to come up with an entree that included both of our favorites! I invited a group of friends over to do the "taste testing" and this recipe won everybody over! One tip: don't throw out the bacon fat! Reserve your bacon fat and use it when cooking. It's not like we are adding tons of fat to the recipe here, just enough to help bring out the flavor. You can use any dry white wine, but I perfer to use a Sauvignon Blanc in this recipe because of the citrus level. Also, I love the brand "Taste of Asia" Sweet Chili Sauce, but feel free to choose the brand you love. I hope you enjoy making this recipe for your friends and family!

- In a large sauté pan, sauté bacon until cooked; be careful not to "crisp" the bacon. Set aside and reserve bacon fat for later use. Leave 2 tablespoons of bacon fat in sauté pan for spinach.
- Add spinach to sauté pan and quickly sauté over med. high heat until wilted. Remove spinach and set aside.
- In large saucepan, add mashed potatoes, cream, goat cheese, and cooked bacon (reserve 4 tablespoons of cooked bacon for later use). Cook over medium-low heat until potatoes are hot and cheese has melted completely. Stir in sautéed spinach and season with salt and pepper. Remove from heat and keep warm until ready to serve.
- Meanwhile, in sauté pan, heat 2 tablespoons of reserved bacon fat and olive oil. Add shrimp and sauté over med. high heat for approximately 2 - 4 minutes or until shrimp start to turn pink. Remove from pan and set aside.
- Add wine and sweet chili sauce to sauté pan and bring to a simmer over medium heat. Place shrimp and any juice from bowl in the sauce mixture. Continue cooking over medium heat until shrimp are completely cooked; approximately another 2 -3 minutes. Stir in reserved 4 tablespoons of cooked bacon. Remove from heat.
- To plate; place one large spoonful of mashed potatoes in center of plate and spoon on shrimp and sauce over potatoes.

- 2. Step 2: Melt butter in frying pan.
