2 cups self-rising flour
1 cup white sugar
1 teaspoon salt
¼ cup shortening
½ cup evaporated milk
½ cup orange juice
1 egg
¼ cup brown sugar, or more to taste
½ stick butter, cut into small cubes
½ cup pecan pieces

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 12-inch skillet.
  • Mix flour, white sugar, and salt together in a bowl. Mix in shortening. Add evaporated milk, orange juice, and egg. Fold gently.
  • Pour batter into the skillet. Sprinkle brown sugar on top. Dot with butter. Cover with pecan pieces.
  • Bake in the preheated oven until coffeecake springs back when touched in the center, about 30 minutes.

1 cup butter, softened
2-3/4 cups sugar, divided
4 large eggs, room temperature
2 teaspoons vanilla extract
3 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
2 cups sour cream
2 tablespoons ground cinnamon
1/2 cup chopped walnuts

Steps:

  • In a large bowl, cream butter and 2 cups sugar until light fluffy. Add 1 egg at a time, beating well after each addition. Beat in vanilla. Combine flour, baking soda and salt; add alternately with sour cream, beating just enough after each addition to keep batter smooth. , Spoon a third of batter into a greased 10-in. tube pan. Combine cinnamon, nuts and remaining sugar; sprinkle a third over batter in pan. Repeat layers 2 more times. Bake at 350° for 60-65 minutes or until a toothpick inserted in the center comes out clean. Cool for 15 minutes before removing from pan to a wire rack to cool completely.

3 sticks salted butter
3 cups sugar
4 eggs
3 cup flour
2 tsp. almond flavoring
slivered almonds
Sugar for sprinkling

Steps:

  • Melt butter - add to sugar in mixing bowl. Beat in eggs. Add flour, salt and flavoring. Mix well. Pour batter into large iron skillet which has been lined with foil. (Or pour into buttered skillet.) Cover top with slivered almonds and sprinkle with sugar. Bake 35 - 45 minutes in a 350 degree oven. Cut into small pieces and serve. This is a very rich cake.

1/4 cup biscuit mix
1/4 cup shredded coconut
3 tablespoons sugar
3 tablespoons grated lemon zest
1/2 teaspoon nutmeg
1 1/2 cups biscuit mix
1/3 cup sugar
1 egg, beaten well
1/4 cup milk

Steps:

  • Heat grill.
  • Thoroughly grease the bottom of a Dutch oven, or a heavy 10" skillet with a lid.
  • Line with several layers of waxed paper or parchment. Grease again.
  • Set cover of the pan at the edge of the grill to heat.
  • Combine topping mix ingredients and set aside.
  • Stir biscuit mix and sugar together.
  • Add egg and milk.
  • Beat until smooth.
  • Place in skillet.
  • Sprinkle topping over batter.
  • Cover and cook over LOW heat at edge of grill, 15-20 minutes, or until tester comes out clean.
