Game Hens with Brussels Sprouts and Chestnuts image

Provided by Food Network

Categories     main-dish

Time 1h20m

Yield 8 servings

Number Of Ingredients 10

1 tablespoon chopped fresh thyme
2 teaspoons salt
1 teaspoon freshly ground pepper
4 Cornish game hens, 1-1 1/2 pounds each
2 teaspoons butter
2 teaspoons extra-virgin olive oil
1 large red onion, peeled and cut through the root end into 8 wedges
2 pounds Brussels sprouts, trimmed and cut in half if large (about 6 cups)
16 ounces jarred roasted chestnuts (2 1/2 cups; see Shopping Tip)
2 tablespoons white-wine vinegar

Steps:

  • Game hens are even easier to prepare than chicken and help make your celebration more festive. Their buttery flavor complements roasted Brussels sprouts and chestnuts.;
  • 1. Preheat oven to 375degreesF. Combine thyme, salt and pepper in a small bowl. 2. Remove giblets (if included) from game hens and trim any excess skin. Loosen the skin over the breast and thigh meat and rub half the thyme mixture under the skin. Tie legs together with kitchen string. 3. Heat butter and oil in a large roasting pan set over 2 burners on medium heat. Add the game hens and brown on all sides, turning occasionally, 10 to 12 minutes. 4. Add onion to the pan, transfer to the oven and roast for 10 minutes. Add Brussels sprouts and roast for 20 minutes. Stir chestnuts and the remaining thyme mixture into the pan. Continue roasting until an instant-read thermometer inserted into a thigh registers 165degreesF, 10 to 15 minutes more. 5. Transfer the game hens to a large cutting board and let rest for 10 minutes. Place the roasting pan over 2 burners on medium heat. Toss the vegetables with vinegar and bring to a simmer, gently stirring and scraping up any browned bits. Remove the string from the game hens, turn breast-side down and slice in half lengthwise using a large heavy knife, cutting straight through to the breast side. Serve the game hens with the vegetables.

ROASTED GAME HEN WITH ROOT VEGETABLES

Roasted Game Hen with Root Vegetables image

Instead of the usual roast chicken, why not give game hen the oven treatment? It cooks way faster, and the pan juices make a delicious sauce when combined with Dijon, lemon juice, capers, and fresh tarragon.

Provided by Martha Stewart

Categories     Food & Cooking     Healthy Recipes     Gluten-Free Recipes

Time 45m

Number Of Ingredients 9

1 Cornish game hen (1 3/4 pounds), trimmed of excess fat
Kosher salt and freshly ground pepper
3 medium carrots, peeled and quartered lengthwise
1/2 small celery root, peeled and cut into 1/2-inch matchsticks
2 tablespoons extra-virgin olive oil
1 teaspoon Dijon mustard, plus more for serving
2 tablespoons fresh lemon juice
2 teaspoons capers in brine, drained and coarsely chopped
2 tablespoons chopped fresh tarragon leaves

Steps:

  • Preheat oven to 425 degrees with racks in top and bottom. Place hen, breast-side down, on a work surface. Using kitchen shears, cut along both sides of backbone to remove. Flip over; split lengthwise with a heavy knife. Pat dry; season with salt and pepper. On a rimmed baking sheet, toss vegetables with 1 tablespoon oil; season with salt and pepper. Transfer sheet to bottom rack of oven.
  • In an ovenproof skillet, heat remaining oil over medium-high. Add hen, skin-side down; cook until browned, about 3 minutes. Flip; transfer skillet to top rack of oven. Roast, stirring vegetables once, until golden, and a thermometer inserted into thickest part of hen thigh reads 165 degrees, 18 to 20 minutes for hen, and 25 to 28 minutes for vegetables. Transfer hen and vegetables to a platter. Return skillet to medium heat; whisk in mustard, lemon juice, 1 tablespoon water, and capers. Cook until reduced slightly, about 1 minute. Stir in tarragon; spoon over vegetables. Serve, with more mustard.

POTATO HASH

Potato Hash image

A quick and delicious potato dish. Great for a weeknight meal. This dish goes very well with the Succulent Roasted Game Hens in a Jiffy recipe. Note to World Tour participants - this dish, the ingredients, and the cooking method, are typical for the Southwest U.S. region. If you add some hot peppers, it will also be typical for U.S./Mexico border cooking.

SKILLET ROASTED GAME HENS W/FINGERLINGS AND SPROUTS

Skillet Roasted Game Hens W/Fingerlings and Sprouts image

I took inspiration from "My Man's Belly" blog and fine-tuned her recipe to my liking. No less than a 12" cast iron skillet is required (14" is even better). You can take this into any direction you desire by the type of seasoning blend (with salt included) you use. Alternately, you can use fresh herbs finishing off with salt and pepper. Lastly, the sprouts are a wonderful addition, but for those that can't stand them, though I have not tested it, I would imagine using all fingerlings would be fine.

Provided by gailanng

Categories     One Dish Meal

Time 20m

Yield 2 serving(s)

Number Of Ingredients 7

2 (1 1/2 lb) Cornish hens, thawed, rinsed and patted dry inside and out
1/2 lb fingerling potatoes or 1/2 lb assorted fingerling potato
3/4 lb Brussels sprout, thick ends trimmed, loose outer leaves removed and cut in half
3 slices thick cut bacon, chopped (or cut with kitchen shears)
2 garlic cloves, sliced thin
2 tablespoons seasoning, blend (Creole, Mediterranean, Herbs de Provence, Lemon Pepper etc. amt. to taste)
1 tablespoon olive oil

Steps:

  • Pre-heat oven to 400 degrees with cast iron skillet in the oven while it's pre-heating.
  • To prepare the hens, gently pull the legs out and away from the body so that they become dis-jointed and lie flat on either side of the body.
  • Rub 1/2 tablespoon olive oil all over each hen. Sprinke each with seasoning blend to taste outside and inside the cavity; set aside.
  • Wash the potatoes and toss them into a bowl with about 1/2″ of water. Cover and cook for 2 minutes on high in the microwave. Discard water and set aside.
  • Remove the pan from the hot oven and drop bacon pieces onto one half of the pan.
  • Place the chickens into the other half of the pan, breast up. Make sure to place the legs and thighs flat against the bottom of the pan. Put the skillet back into the oven and cook for 15 minutes.
  • Remove the pan from the oven, brush breasts with a few dabs of the bacon drippings. To the pan add the potatoes and garlic slices over 1/2 of the bacon pieces and the brussels sprouts over the other half of the bacon pieces. Toss the potatoes and brussel sprouts with the bacon pieces to coat them in some of the fat.
  • Put the pan back into the oven and lower the heat to 350 degrees. Continue to cook for 45-50 minutes longer or until the juices from the legs and thighs run clear when pierced.
  • Serve with pan juices.

1/2 cup white wine
1 1/2 lemons, cut into 6 quarters
6 Cornish game hens
Salt and pepper
1 1/2 lemons, cut into 6 quarters
1 1/2 small onions, cut into 6 quarters
6 tablespoons butter, softened
One 2-inch knob fresh ginger, minced
1/4 cup Asian five-spice powder
1/2 cup white wine
12 ounces ricotta
1/3 cup freshly grated Parmesan cheese
1 egg yolk, lightly beaten
1/4 cup finely chopped fresh basil
3 tablespoons finely chopped fresh parsley
1 1/2 tablespoons grated lemon zest
2 small cloves garlic
6 Cornish game hens
Salt and pepper
1 1/2 lemons, cut into 6 quarters
1 1/2 small onions, cut into 6 quarters
1/2 cup white wine

Steps:

  • Preheat oven to 350 degrees. Rinse the game hens and pat them dry. Season the cavities with salt and pepper and place a quarter lemon and a quarter onion in each cavity. Place the birds, breast side up, in a shallow roasting pan. Dot with butter and sprinkle with salt and pepper. Pour the white wine into the pan. Bake for 45 minutes to 1 hour, until the juices run clear when the hen is pierced in the thickest part of the thigh. Remove from the oven and serve with the pan juices spooned over the hens.
  • ROASTED GAME HENS WITH ASIAN SPICE RUB: Preheat oven to 350 degrees. Rinse the game hens and pat them dry. Season the cavities with salt and pepper and place a quarter lemon and a quarter onion in each cavity. In a small bowl, combine the butter, ginger and five-spice powder. Rub the five-spice mixture onto the hens. Place the birds, breast side up, in a shallow roasting pan. Pour the white wine into the pan. Bake for 45 minutes to 1 hour, until the juices run clear when the hen is pierced in the thickest part of the thigh. Remove from the oven and serve with the pan juices spooned over the hens. Yield: 6 servings
  • ROASTED GAME HENS STUFFED UNDER THE SKIN WITH HERBED RICOTTA: Preheat oven to 350 degrees. Place the ricotta in a fine sieve and drain for 30 minutes. In a medium bowl, combine the drained ricotta, Parmesan, egg yolk, herbs and lemon zest. Put the garlic clove through a garlic press and into the ricotta. Mix well, adding salt and pepper to taste. Rinse the game hens and pat them dry. Season the cavities with salt and pepper and place a quarter lemon and a quarter onion in each cavity. Loosen the skin on the breasts by sliding your fingers under the skin, being careful not to pierce it. Spoon the ricotta mixture under the skin (about 4 tablespoons of stuffing per bird.) Truss the birds. Place the birds, breast side up, in a shallow roasting pan. Pour the white wine into the pan. Bake for 1 hour, or until the juices run clear when the hen is pierced in the thickest part of the thigh. Remove from the oven and serve with the pan juices spooned over the hens. Yield: 6 servings

Time 1h20m

Salt
3 tablespoons olive oil
2 game hens, about 1 and 1/2 pounds each, split in half

1/4 cup red wine vinegar
1/4 cup chicken broth
