1 cooking apple (such as Jonathan or Granny Smith), cored and finely chopped (about 3/4 cup)
1 teaspoon lemon juice
3/4 cup Gold Medal™ whole wheat flour
1 tablespoon sugar
1 teaspoon baking powder
1/4 teaspoon apple pie spice or ground cinnamon
1/8 teaspoon salt
3/4 cup fat-free milk
1 egg white
2 tablespoons canola oil
Nonstick cooking spray
1 cup unsweetened applesauce
1/8 teaspoon apple pie spice or ground cinnamon
Apple pie spice or ground cinnamon (optional)
Fresh fruit (optional)

Steps:

  • In a small bowl combine apple and lemon juice; set aside. In a medium bowl combine whole wheat flour, sugar, baking powder, the 1/4 teaspoon apple pie spice, and salt. In another small bowl combine milk, egg white, and oil; beat with a rotary beater or wire whisk.
  • Add milk mixture all at once to flour mixture; stir just until moistened (the batter should be lumpy). Gently fold in apple mixture.
  • Coat an unheated griddle or heavy nonstick skillet with nonstick cooking spray. Preheat over medium heat until a few drops of water dance across the surface. For each pancake, pour a scant 1/4 cup of batter onto the hot griddle; spread batter into 3- to 4-inch circles.
  • Cook for 1 to 2 minutes on each side or until pancakes are golden brown, turning when pancake surfaces are bubbly and edges are slightly dry. In a small bowl stir together applesauce and the 1/8 teaspoon apple pie spice; serve with pancakes.
  • If desired, sprinkle with additional apple pie spice and serve with fresh fruit.

1/2 cup all-purpose flour
1/2 cup quick-cooking oats
2 teaspoons sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup well-shaken buttermilk
1 large egg, lightly beaten
5 tablespoons unsalted butter, melted and cooled slightly
Accompaniments: marmalade or jam; clotted cream or crème fraîche

Steps:

  • Put oven rack in middle position and preheat oven to 200°F. Warm 4 plates in oven.
  • Heat a well-seasoned griddle or heavy skillet (preferably cast-iron) over moderately low heat until hot.
  • While griddle heats, whisk together flour, oats, sugar, baking powder, baking soda, and salt, then whisk in buttermilk, egg, and 3 tablespoons butter until combined.
  • Brush hot griddle with some of remaining butter, then spoon 3 tablespoons batter per oatcake onto hot griddle and cook until bubbles appear on surface, edges are set, and undersides are golden, 1 to 2 minutes. Flip cakes with a large spatula and cook until tops spring back when pressed gently, 1 to 2 minutes more. Transfer as cooked to plates in oven and loosely cover with foil. Brush griddle with butter between batches if necessary.
  • Brush griddle cakes with any remaining butter and serve immediately.

3 cups finely chopped unpeeled apples (3 medium)
1 cup chopped walnuts

Steps:

  • Heat oven to 350°F. Spray bottom only of 13x9-inch pan with cooking spray.
  • In large bowl, beat sugars, buttermilk, oil, vanilla and eggs with electric mixer on low speed 20 to 30 seconds or until blended. Add all remaining ingredients except apples and walnuts; beat on low speed about 1 minute or until blended. Stir in apples and walnuts. Spread batter in pan.
  • Bake 40 to 45 minutes or until toothpick inserted in center comes out clean. Cool in pan on cooling rack 1 hour.

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C). Grease a 9x13 inch pan.
