Skinny Jalapeño Poppers image

The classic Jalapeno Popper gets a lower-fat makeover with lightened up filling and is baked instead of fried!

8-10 jalapeño peppers, sliced lengthwise and seeds removed*
3 slices bacon, cooked and crumbled (optional)
8 ounces Neufchâtel cheese, softened (or low-fat cream cheese)
1/2 cup shredded cheddar cheese
1/2 teaspoon garlic powder
1/2 teaspoon worchestershire sauce
dash salt and pepper
1/2 cup panko breadcrumbs
cooking spray

Steps:

  • Preheat oven to 350 degrees F. Line a baking sheet with parchment paper. Arrange the peppers on the baking sheet.
  • In a mixing bowl, stir together the Neufchâtel cheese, cheddar cheese, garlic powder, worchestershire, and the salt and pepper until well-combined. Spoon about 1-2 tablespoons of the mixture into each pepper half. Sprinkle some of the panko on top of each pepper.
  • Spray the tops with cooking spray. Bake for 20 minutes. Switch the oven to broil and continue cooking for 3-5 minutes until the breadcrumbs are golden brown. Remove from the oven. Sprinkle some of the bacon on top of each popper. Serve warm.

This unusual twist on chile poppers, with herbed cheese and a dollop of sweet salsa, roll up fast with prepared crescent dough.

4 jalapeño chiles (about 3 inches long)
1/3 cup Boursin® cheese with garlic and herbs (from 5.2-oz container)
8 slices packaged precooked bacon (from 2.2-oz package), halved
1 can (8 oz) refrigerated Pillsbury™ Original Crescent Rolls (8 Count)
1/2 cup pineapple or fruit salsa, if desired

Steps:

  • Heat oven to 375°F. Carefully remove stems from chiles; cut each in half lengthwise and again horizontally to make 4 pieces. Remove and discard seeds. Spoon about 1 teaspoon cheese into each chile quarter. Wrap half slice of bacon around each.
  • On cutting board, unroll dough; separate dough into 8 triangles. From center of longest side to opposite point, cut each triangle in half, making 16 triangles. Place chile, cheese side down, on dough triangle. Fold 1 point of triangle over filling; fold 2 remaining points over first point. Place on ungreased cookie sheet.
  • Bake 12 to 15 minutes or until golden brown. Immediately remove from cookie sheet. Serve with salsa.

8 medium (about 3 inch) jalapeño chiles, halved lengthwise, seeded
1/2 cup fat-free cream cheese spread (from 8-oz container)
1/4 cup shredded pepper Jack cheese (1 oz)
2 medium green onions, finely chopped (2 tablespoons)
1 tablespoon cooked real bacon pieces or bits (from 3-oz jar)
1/2 teaspoon salt
1 tablespoon chopped fresh cilantro

Steps:

  • Heat oven to 350°F. Spray cookie sheet with cooking spray. Place chile halves, cut sides up, on cookie sheet.
  • In small bowl, mix cream cheese spread, pepper Jack cheese, onions, bacon and salt. Divide mixture evenly among chile halves, spreading filling out level with sides of chile.
  • Bake 30 minutes or until tops are light golden brown and chiles are tender. Sprinkle with cilantro. Serve warm.
