Chocolate Crinkle Cookies image

This is a yummy chocolate cookie that's crunchy on the outside but soft and chewy on the inside! I bake it for my campers every year and they love it! The amount of sugar may be reduced so it's not too sweet.

1 cup all-purpose flour
1 teaspoon baking powder
½ cup butter, melted
2 (1 ounce) squares semisweet chocolate, chopped
1 cup white sugar
2 eggs
1 teaspoon vanilla extract
1 cup semisweet chocolate chips
¼ cup confectioners' sugar for rolling

Steps:

  • Sift together the flour and baking powder; set aside. In a medium bowl, stir chocolate into melted butter until melted and smooth. Mix in the sugar, eggs and vanilla. Gradually blend in the sifted ingredients. Stir in the chocolate chips. Cover dough and chill for at least 2 hours or overnight.
  • Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets or line them with parchment paper. Roll the chilled dough into 1 inch balls and roll each ball in confectioners' sugar. Place cookies 2 inches apart onto the prepared cookie sheets.
  • Bake for 9 to 12 minutes in the preheated oven, until the tops are cracked. Remove from cookie sheets to cool on wire racks.

This is a lighter version of cookies similar to "Quake Cookies". Chocolaty and delicious and the top of the cookie sort-of 'erupts' as it cooks, hence the name.

1 1/2 cups semi-sweet chocolate chips, divided
1 1/2 cups flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup Splenda granular, sugar substitute
2 tablespoons margarine, softened
1 1/2 teaspoons vanilla
2 egg whites
1/4 cup water
1/2 cup powdered sugar

Steps:

  • Melt 1 cup chips over low heat (when they start to melt, remove from heat and stir and return a few times until smooth).
  • Combine flour, powder, and small. Beat together sugar, margarine and vanilla in a separate bowl.
  • Beat in melted chocolate, then beat in egg whites.
  • Gradually beat in flour mix with water and finally stir in remaining chocolate chips. Cover; chill until firm.
  • Shape into 1-inch balls and roll in powdered sugar to coat. Place on greased baking sheets.
  • Bake at 350°F for 10-15 minutes.

Here's what you need: eggs, tea glass granualted sugar, tea glass vegetable oil, cocoa powder, flour, vanilla, baking powder, powdered sugar

Number Of Ingredients 8

2 eggs
1 tea glass granualted sugar
1 tea glass vegetable oil
4 tablespoons cocoa powder
2 cups flour
1 package vanilla
1 package baking powder
1 cup powdered sugar, (to cover the cookies)

Steps:

  • In a bowl, mix the eggs and sugar. When the sugars melt and the color of the mixture turns off-white, add oil and mix it a little more.
  • Sift cocoa, vanilla, baking powder and flour and add to the mixture. Mix with a spatula until the ingredients are combined. The consistency of the dough will be runny compared to cookie dough and will look more like brownie dough.
  • Let the dough rest in the refrigerator for at least 2 hours.
  • Take out the rested cookie dough. Break off walnut-sized balls from the dough and shape them into tiny balls.
  • Cover your cookies with powdered sugar. Place the cracked cookies covered with powdered sugar in the tray on which you laid greaseproof paper.
  • Bake in a preheated 350°F degree oven for about 10 minutes.
  • Serve warm.
