SLOW-BAKED SALMON WITH LEMON AND THYME

- Preheat oven to 275°F. Line a rimmed baking sheet with aluminum foil. Brush with 1/2 tablespoon oil. Place salmon fillets, skin side down, on prepared baking sheet. Mix remaining oil, thyme, and lemon zest in a small bowl. Spread thyme mixture over salmon fillets, dividing equally. Season with salt and pepper. Let stand 10 minutes to allow flavors to meld.
- Bake salmon until just opaque in center, 15-18 minutes. Serve with lemon wedges.
SLOW COOKED KING SALMON WITH MEYER LEMON RELISH
I found this recipe simply by chance while browsing the web. This salmon melts in your mouth. Slow cooking anything makes the dish more juicy and tender. Add a pan of water to your oven, and you create a humid environment that will keep the fish very moist.

Steps:
- Preheat your oven to 200 degrees.
- Place a baking pan with a few cups of water on the bottom rack of the oven.
- Lightly brush the bottom of a baking pan with the olive oil.
- Brush olive oil on the salmon (all sides.)
- Season generously with gray salt, half cracked pepper and ground pepper.
- Place salmon in oiled baking dish and bake in oven for approximately an hour.
- When juices begin to form on top and the salmon is a little firm - it is done.
- Serve with freshly made Meyer Lemon Relish (recipe follows).
- Meyer Lemon Relish:.
- Place diced shallot in a bowl and add the vinegar and a pinch of salt. Let it sit for 10-15 minutes.
- Cut the lemon into 8 wedges. Remove the seeds and core gently and cut each wedge in half (lengthwise)
- Slice the wedges crosswise into thin slivers. This will make about a 1/2 cup.
- Combine the lemon slivers, shallot and another pinch of salt.
- Stir in the olive oil, parsley, chives and some fresh ground pepper.
- Taste and season.

ROASTED SALMON WITH LEMON RELISH

- Spread pine nuts on a cookie sheet. Toast in preheated 450°F oven for 5-7 minutes until golden. Watch carefully to prevent burning. Set aside.
- Place raisins in a small bowl. Peel lemon with a vegetable peeler, then slice into fine julienne. Add julienned lemon zest to bowl and cover with boiling water.
- Place salmon on a cookie sheet. Sprinkle with salt and pepper. Roast in same 450°F oven 8-10 minutes until just firm to the touch.
- Strain water off relish ingredients. Add pine nuts to raisins and zest. Add parsley, lemon juice, olive oil, salt and pepper. Stir well.
- Divide spinach amongst 4 plates. Add 1 piece of salmon to each, and top salmon with relish.
MEYER LEMON CREAM SAUCE FOR SALMON
The salmon can be cooked any way you prefer, because the star of this recipe is the lemon cream sauce made with Meyer lemon.

- Season salmon fillets with salt and pepper. Melt 1 tablespoon butter in a skillet over medium-high heat and cook salmon, skin side-up, until golden brown, 5 to 7 minutes. Turn salmon and continue cooking until skin side is slightly browned and fish flakes easily with a fork, about 5 minutes more.
- Meanwhile, melt remaining 1 tablespoon butter in a saucepan. Press garlic into the butter using a garlic press and cook for 1 minute. Pour in cream and stir constantly for 2 minutes. Add lemon juice and dill. Be careful that the sauce doesn't break.
- Serve sauce over salmon.

- Preheat oven to 450 degrees. Spread pine nuts on a rimmed baking sheet; toast in oven, tossing occasionally, until lightly golden, 5 to 7 minutes. Remove from sheet, and reserve.
- Meanwhile, place raisins and lemon zest in a small bowl; cover with boiling water. Set aside.
- Place salmon fillets on the baking sheet used in step 1; season with salt and pepper. Roast until salmon is opaque throughout, 8 to 10 minutes.
- Meanwhile, drain and discard liquid from raisins and lemon zest. Return raisins and zest to bowl; add lemon juice, pine nuts, parsley, and oil. Season with salt and pepper; stir to combine.
