12 ounces boneless skinless chicken thighs, trimmed and cut into 24 pieces
1 onion, chopped
3 garlic cloves, minced
1 jalapeno pepper, seeded and chopped
1 carrot, thickly sliced
1 sweet potato, peeled and cubed
1 (14 1/2 ounce) can reduced-sodium chicken broth
1/2 cup natural-style chunky peanut butter
2 tablespoons tomato paste
1/4 teaspoon salt
1/4 teaspoon fresh ground black pepper

Steps:

  • 1. Heat the oil in a large nonstick skillet over medium-high heat. Add the chicken and cook, stirring occasionally, for 3 to 4 minutes or until lightly browned. Transfer to a 4-quart slow cooker. Return the skillet to the heat and add the onion, garlic, chile pepper, and carrot. Cook for 1 minute, then transfer to the slow cooker. Stir in the sweet potato, broth, peanut butter, and tomato paste.
  • 2. Cook on high for 3 to 4 hours or low for 5 to 6 hours or until the chicken and vegetables are very tender. Season with salt and black pepper.

1 pound boneless skinless chicken thighs
1 pound boneless skinless chicken breasts
1 1/2 teaspoons coarse salt, divided, plus more to taste
1/2 teaspoon freshly ground black pepper
1 1/2 teaspoons ground coriander, divided
1/2 teaspoon ground cinnamon, divided
3 tablespoons vegetable oil, divided
1 small yellow onion, roughly chopped (about 1 cup)
3 medium cloves garlic, minced
1 tablespoon minced fresh ginger
2 small thinly sliced Scotch bonnet chilies or habaneros, plus more for garnish
2 tablespoons tomato paste
2 medium-size sweet potatoes, peeled and chopped (about 2 cups)
2 cups low-sodium chicken stock, divided
1 14-ounce can diced tomatoes
1 cup natural unsweetened creamy peanut butter, stirred
2 tablespoons chopped green onions, for garnish
2 tablespoons roasted unsalted chopped peanuts, for garnish

Steps:

  • In a small bowl, combine the pepper, 1 teaspoon salt, 1 teaspoon coriander, and 1/4 teaspoon cinnamon. Season the chicken pieces all over with the spice mix, gently pressing to make sure it adheres.
  • Add 2 tablespoons of oil to the insert of your slow cooker and set the saute setting to high/more (or heat the oil in a large pan over medium-high heat on the stove).
  • Once the oil begins to shimmer, add the chicken in batches, and sear on all sides until golden brown, about 1-2 minutes per side. Transfer the chicken to a plate.
  • Lower the saute setting to medium/normal, or if you're cooking on the stove, reduce the heat to medium. Add the remaining oil and saute the onion until very fragrant, about 3 minutes. Add the garlic, ginger, chilies, and the remaining coriander, cinnamon, and salt. Cook for 30 seconds, then stir in the tomato paste.
  • Cook, stirring often, for about 1 minute and then deglaze the pan with the stock and tomatoes, scraping up any brown bits from the bottom. If you're working on the stove, transfer everything to your slow cooker insert.
  • Stir in the peanut butter. Add the chicken and the sweet potatoes to the insert, and gently stir so everything is evenly distributed.
  • Cover and cook on low for 6-8 hours, or high for 3-4 hours. The chicken and sweet potatoes will be extremely tender when they're done.
  • Just before serving, season to taste with additional salt if necessary.
  • Serve the stew over white or brown rice and garnish with green onions, peanuts, and chilies (for those who like it extra spicy).

I came across an African sweet potato stew recipe a few years ago, and adapted it to suit our taste. It is very flavorful and just a bit spicy - just right for cold days! This recipe makes a lot of stew, so it may be halved for a smaller portion, but also freezes very well.

1 onion, chopped
2 small jalapeno peppers, seeded and chopped
3 cloves garlic, minced
2 teaspoons minced fresh ginger
2 teaspoons ground cumin
½ teaspoon salt
¼ teaspoon ground coriander
¼ teaspoon ground cinnamon
⅛ teaspoon red pepper flakes
4 cups water
2 ½ pounds sweet potatoes, peeled and chopped into 2-inch pieces
2 (15 ounce) cans diced tomatoes, drained
2 (15 ounce) cans chickpeas, drained and rinsed
¼ cup peanut butter
1 (15 ounce) can sliced green beans, drained

Steps:

  • Place onion, jalapeno peppers, garlic, ginger, cumin, salt, coriander, cinnamon, and red pepper flakes in a large slow cooker. Pour in water and stir to combine. Mix in sweet potatoes, tomatoes, chickpeas, and peanut butter.
  • Set cooker to Medium-High, cover, and cook until sweet potatoes are tender and stew has thickened, about 6 hours. Stir in green beans, cover, and continue cooking until beans are heated through, 15 to 20 minutes.

4 tablespoons cornstarch, divided
¼ teaspoon garlic powder
¼ teaspoon ground ginger
1 ½ pounds skinless, boneless chicken thighs, cubed
1 tablespoon vegetable oil
1 (20 ounce) can pineapple chunks in juice
½ cup chicken stock
¼ cup rice vinegar
¼ cup brown sugar
2 tablespoons ketchup
2 tablespoons soy sauce
1 medium red bell pepper, seeded and chopped
1 green onion, chopped

Steps:

  • Mix 2 tablespoons cornstarch, garlic powder, and ground ginger together in a small bowl. Toss chicken thighs in cornstarch mixture until they are evenly coated.
  • Heat oil in a skillet over medium-high heat. Cook chicken in the skillet until browned on all sides, 3 minutes per side. Transfer to a plate and set aside.
  • Drain juice from the can of pineapple chunks into a measuring cup. You should have approximately 3/4 cup to 1 cup of juice.
  • Mix 1/2 cup pineapple juice, chicken stock, rice vinegar, brown sugar, ketchup, and soy sauce together in a slow cooker. Add browned chicken pieces and stir to coat chicken with the sauce. Cook on Low for 3 1/2 hours.
  • Whisk remaining 2 tablespoons cornstarch with remaining 1/4 cup pineapple juice. Stir cornstarch mixture into the slow cooker. Increase the slow cooker heat to High and add pineapple chunks and chopped red bell pepper.
  • Cook on High until the sauce is bubbly and thickened and bell pepper is crisp-tender, about 30 minutes. Garnish with chopped green onion.
