SLOW-COOKER GERMAN BRATWURST
I created this Old World favorite from a dish I had during my travels. The flavorful entree is perfect for weeknights or special occasions. I like to serve this slow-cooker bratwurst with pasta. —Gerald Hetrick, Erie, Pennsylvania

- In batches, in a large nonstick skillet, brown bratwursts over medium-high heat. Transfer to a 7-qt. slow cooker. Add remaining ingredients., Cook, covered, on low 6-8 hours or until a thermometer inserted in sausage reads at least 160°.

CROCK POT BRATS AND CABBAGE
This is a recipe that my MIL made and it is so simple and tasty. I originally made this in the oven, but found that it is easier in the crock pot.

Steps:
- Dissolve beef bullion in the hot water.
- Add the vinegar, brown sugar, salt and pepper. Mix until well dissolved.
- Quarter cabbage and remove core.
- Place cabbage wedges on the bottom of the crock pot.
- Place frozen brats on top of cabbage.
- Pour mixture on top of brats.
- Cook on low for 8 hours.

EASY SLOW COOKER CABBAGE & BRATS

- In a large skillet, brown oxtails in oil over medium heat. Remove from pan; place in a 5-qt. slow cooker. , Add carrots and onion to dripping, cook and stir until just softened, 3-5 minutes. Add garlic, cook 1 minute longer. Transfer vegetable mixture to slow cooker. Add tomatoes, broth, bay leaves, salt, oregano, thyme and pepper; stir to combine. , Cook, covered, on low 8 hours. Add cabbage, cook until cabbage is tender and meat pulls away easily from bones, about 2 hours longer. Remove oxtails; set aside until cool enough to handle. Remove meat from bones; discard bones and shred meat. Return meat to soup. Discard bay leaves., Freeze option: Freeze cooled stew in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally; add broth if necessary.

- Cut cabbage in half through the core. Remove core and cut cabbage into 1/4-in. slices; set aside. Cut onion in half and cut into 1/4-in. slices; set aside. In a large nonstick skillet coated with cooking spray, cook and stir bratwurst over medium-high heat for 8 minutes or until browned on all sides. Drain and remove bratwurst; set aside and keep warm., Add cabbage and onion to the same skillet; cook and stir for 6 minutes. Sprinkle with soy sauce, garlic powder and pepper. Cook and stir for 4 minutes longer. Return bratwurst to skillet. Cook for 2 minutes. Cover; reduce heat and simmer for 5 minutes or until vegetables are tender and bratwurst is cooked through. - Prick bratwurst in several places with a knife and place in a large skillet. Add oil and half of beer, then add water until liquid comes a little over halfway up sides of sausages. Bring to a simmer over medium heat. Cook, turning once, until just barely cooked through, 12-15 minutes.
- Increase heat to medium-high; cook until liquid is evaporated, 5-10 minutes. Roll sausages to edge of skillet and add onion to center. Cook, turning sausages often and stirring onion occasionally, until sausages are browned and onion is soft, 5-8 minutes. Transfer sausages to a plate.
- Add cabbage and beet to skillet; season with salt and pepper. Cook, stirring often, until cabbage is wilted, about 5 minutes. Add vinegar, brown sugar, allspice, and remaining beer. Cover; cook until tender, 20-25 minutes. Serve sausages with cabbage mixture, topped with horseradish.

- Heat 1 tablespoon vegetable oil in a large dutch oven or stock pot on medium heat. Brown the brats on each side for 3 minutes. Set aside and add diced onions to sweat for 3 minutes. Stir in the red potatoes, salt, pepper, and 1/2 cup of water. Cover and simmer on medium-low for 7 minutes.
- Gently stir the potatoes and onions then add the cabbage, brats, and any juices released by the brats on top. Cover and cook for 20 minutes. After 20 minutes, gently stir the entire stew with a long wooden spoon or tongs to prevent any sticking on the bottom. Cover and allow to cook for another 10 - 15 minutes.
- Check on the brats and cut in to serving size portions. Allow the stew to continue to cook uncovered with the brats submerged until cooked through.
